Today I'm going to show you how to make a simple, delicious, affordable zucchini casserole with meatballs. This dish will please both old and young, because it turns out so tasty, tender and at the same time satisfying that it will feed the whole family.
Zucchini, rice and cheese casserole
This juicy and airy dish is easy to prepare in the oven. Spices and sauces will add piquancy to the zucchini and rice casserole.

Ingredients
- Rice 70 g
- Salt to taste
- Onion 1 piece
- Vegetable oil 1 teaspoon
- Zucchini 1 piece
- Cheese 50–70 g
- Eggs 3 pieces
- Ground black pepper to taste
Cooking method
- Boil the rice until tender in lightly salted water. Cool.
- Cut the onion into small pieces and throw into a frying pan with heated oil. Fry over medium heat for 3-5 minutes.
- Cut the zucchini into strips or small pieces. Grate the cheese on a coarse grater. Beat the eggs.
- Mix zucchini with rice, eggs, onion, salt and pepper. Add about 2/3 of the cheese.
- Place everything in a greased baking dish. Sprinkle the remaining cheese on top.
- Bake for approximately 30–35 minutes at 180°C.
Royal Zucchini Casserole
This is the version of the casserole that will look harmonious both on the holiday table and on a regular dinner table. Moreover, his main fans are men.
What do you need:
- a couple of large zucchini;
- 5 large tomatoes;
- round rice - half a glass;
- two large onions;
- 3 large eggs;
- boiled sausage - 300 g;
- hard cheese - 150 g;
- olive oil to grease the pan;
- salt and spices to taste;
- bunch of dill.
How to do:
- Rice needs to be boiled until fully cooked.
- Zucchini, tomatoes, onions, sausage - cut into rings.
- Separate the eggs into components.
- Beat the whites with salt into a strong foam.
- Mix the cooled rice with chopped herbs, yolks and spices.
- Prepare a mold with high sides and proceed to laying out the products in it.
- Layout:
- 1st layer - place half of the products cut into rings on the bottom so that they completely cover it. At the same time, observe the order.
- 2nd layer - half of the whites.
- 3rd layer - rice mixture;
- 4th layer - the second half of the products cut into rings.
- Layer 5 - remaining whites.
- 6th layer - grated cheese.
Cover the top of the casserole with foil and bake for 20 minutes in the oven, which is preheated to 200 degrees. Afterwards, remove the foil and bake for another 20 minutes, until the cheese is completely melted and browned.
Zucchini casserole with rice, minced meat and mushrooms

- 3 tomatoes

Boil the rice, mix it with minced meat, salt and pepper. Chop the mushrooms and onions and fry them in a frying pan. Peel the zucchini and cut them into thin slices lengthwise. Let's add a little salt. Let the zucchini sit for a while to soften.
Casserole with rice, zucchini, minced meat and cream
Delicious casserole, very juicy and easy to prepare.

- Zucchini - 1 piece
- Onion - 1 pc.

- Rice - 1 cup.
- Carrots - 2 pcs.
- Tomato – 2 pcs.
- Hard cheese – 150 g
- Cream (10-20%) – 50 g
- Spices (to taste)

Prepare the products: - cut the zucchini into quarters - cut the onion into half rings - cut the carrots into cubes - cut the tomatoes into slices - grate the cheese. Place a layer of zucchini in a casserole container, minced meat on it, onion, salt and spices on top.
Then scatter the rice evenly, place carrots on the rice, another layer of zucchini, and tomatoes on top. Pour in cream mixed half and half with water (fill 0.5 cups, no more is needed, because the vegetables will give juice). Cover with a lid and place in the oven for 1 hour, bake at 180-200°C. We use raw rice; there is no need to pre-cook it.
5 minutes before readiness, remove, sprinkle with grated cheese, and leave until melted and a cheese crust forms.
Casserole “False pineapple and fruit forest”
This is a sweet casserole that children love very much. Very useful and at the same time very unusual. An excellent solution for a noisy children's company.
What do you need:
- a couple of zucchini;
- sugar - 250 g;
- powdered sugar;
- spoon of lemon juice;
- water - 50 ml;
- egg whites - 5 pcs.;
- round rice - 250 g;
- one orange, apple and banana each;
- vanillin.
How to do:
- Let's start with a false pineapple. To do this, remove the skin from the zucchini, remove the core, and cut into large cubes. Cook syrup from sugar (150 g), water and lemon juice.
- A couple of minutes after the syrup boils, immerse the zucchini in it in parts, cook each portion for 5 minutes and remove with a small colander to a dish.
- Boil the rice until half cooked.
- Finely chop the orange, apple and banana.
- Beat the egg whites with a pinch of salt and vanilla.
- Add half of the prepared zucchini and chopped fruits, proteins, and the remaining sugar to the cooled rice.
- The silicone mold may not be greased, but this is not prohibited. Place rice and fruit in it. Layer the zucchini and remaining fruit on top.
- Cover with a layer of whipped egg whites.
- 5 minutes before the start of baking, you need to turn on the oven at 200 degrees. We cook our casserole in it for 30 minutes. The crust should become golden brown.
- Sprinkle with powdered sugar before serving. If desired, you can pour melted chocolate over it.
Casserole with rice and zucchini with streusel
Today I come to you with an easy-to-prepare recipe from an old notebook. Casserole with a juicy filling, covered with golden, crumbly cheese crumbles.

- Chicken fillet – 300 g
- Onion - 1 pc.
- Garlic - 2 teeth.
- Zucchini - 300 g
- Rice (boiled) - 3 tbsp. l.
- Greenery
- Olive oil - 1 tbsp. l.
Streusel
- Butter – 25 g
- Wheat flour / Flour – 25 g
- Hard cheese - 30 g
Cooking method
Usually a casserole without meat, but today a dish for meat eaters! Cut the chicken fillet into small cubes. Boil the rice until half cooked.
Peel the onion, garlic, cut into cubes. Fry until soft, add diced zucchini. Simmer over medium heat for 7 minutes.
Mix fillet pieces, rice, vegetable mixture. Add spices and salt to taste. Greens (I used cilantro). I used Mistral brand rice.
For the streusel: grate the cheese on a fine grater, add butter and flour cut into pieces (you can use corn flour, it turns out even tastier) Grind into crumbs.
Place the vegetables and meat in a mold, sprinkle streusel on top and place in a preheated oven. Bake at 180 degrees. until slightly golden.
Can be served both hot and cold. Enjoy your meal!

Step 2 Cut the tomatoes, zucchini and onions into rings of equal thickness. Cut the chicken into equal-sized medium-sized pieces. Sprinkle the prepared ingredients with oil, salt and pepper.
Rice and Zucchini Casserole with Meat Balls
- Zucchini 1 pc.
- Long grain rice 100 gr.
- Water 200 ml.
- Minced meat 250 gr.
- Onion 1 pc.
- Hard cheese 50-100 gr.
- Mozzarella cheese 50 gr.
- Chicken egg 2 pcs.
- Salt to taste
- Garlic 2 teeth.
- Black pepper to taste
- Italian herbs 0.5 tsp.
- Paprika to taste

Rinse 0.5 cups of rice and boil in 200 milliliters of salted water.

Grate the zucchini on a coarse grater, add a little salt and let it stand for 5 minutes. Then squeeze the juice out of it.
