Finely chop the onion and fry a little in vegetable oil.

In a deep bowl, thoroughly mix beaten chicken eggs, meat, fried onions, finely chopped garlic, salt and spices.

Form the resulting mixture into balls and roll them in breadcrumbs. Don't make them too big so they cook evenly. Fry the balls in a frying pan in vegetable oil until golden brown and transfer to another bowl.

Now you can start preparing the gravy. First, melt the butter in a frying pan, then pour in the sour cream and tomato paste, add flour and mix thoroughly until the lumps disappear. You can season the gravy with spices to your liking.

To make meatballs with rice more juicy, you need to bake them in the oven.

For cooking in the oven, it is better to add carrots for the sauce and rice (for the minced meat balls themselves) to the same ingredients.

This recipe for meatballs in the oven is somewhat more complicated than the previous one, since we will cook them with rice and the whole process will take more time.

First of all, boil the rice in salted water until half cooked. Drain the water and leave it to cool.

After this, you should work on the minced chicken balls. In a deep bowl, thoroughly mix the cooked rice, minced meat, garlic and salt, add spices to taste. Choose spices depending on the type of meat you are cooking with.

For chicken, for example, white pepper, curry, and turmeric are good. Form small balls of minced meat, roll them in flour or breadcrumbs and fry a little in a frying pan. The oven temperature should be 180° C.

  • 2-3 tbsp. l. rice;
  • 450 gr. minced meat;
  • 1 onion;
  • 1 medium carrot;
  • filtered water by eye;
  • sunflower oil to your taste;
  • table salt and ground black pepper by eye;
  • spices for meat as desired and to taste.

Preparation:

1. Let's start creating a meat delicacy by preparing the ingredients. Place them on the table so that they are immediately at your fingertips.

2. And the first to start the path to the meat delicacy is crumbly rice. The choice fell on a long-grain variety. It is more crumbly and goes well with our dish today.

Take a saucepan and pour all the grains into it. Fill the dishes with tap water. Rinse the rice until the water runs clear. This will remove the starch from the rice that makes it sticky.

Then fill the product with water 2 fingers higher from the level of the grains and place the saucepan on medium heat. Close the lid of the dish and cook the rice until half cooked.

3. While the rice is cooking, prepare the vegetables for the sauce. Take the carrots and rinse them under warm water. Use a sharp knife to remove the outer shell. Take out a grater and a board, grate the vegetable on a large shredder blade.

4. Let's get down to the onion. Carefully peel it off. Place the head on a kitchen board, cut into two halves, and then finely chop into cubes with a knife.

5. Next, place a deep frying pan on the stove. It is desirable that it has a non-stick coating. Pour vegetable oil into the bowl and turn on high heat. Let it warm up.

6. Place the onion and carrot in the frying pan and mix them together. Simmer the ingredients until semi-cooked with the lid closed. Approximately 3-5 minutes.

7. Now about the meat. If you use ready-made minced meat, then salt and pepper it to taste. You can add your favorite spices. And mix.

Remove half-cooked rice from heat. Drain excess water from it, if any, and place the porridge on the minced meat. Mix everything well. If you wish, add salt to the mass, which I did not do. Since salt will be added directly to the gravy.

8. Let's remember about vegetables. While forming the meat balls, I added a little water to them and continued to simmer over very low heat under the lid.

9. Now scoop up a piece of all the minced meat with your clean palms and form it into a ball with a diameter of 5 cm. Do the same with the entire mass. Place the rounds on a cutting board.

10. Open the lid of the pan and use a spatula to move the vegetables along the edge of the pan. And place the balls in the center. Turn up the heat underneath and fry the buns on all sides for about 3-4 minutes. Flip when one side is set.

11. Then fill the contents with filtered water up to approximately the middle or tops of the koloboks. Salt and pepper the sauce and mix everything carefully. Close the lid of the dish and simmer the dish over the same fire.

There's just a little bit left to do. Cook the dish for about 15-20 minutes and you can turn off the stove. It's that simple!

Serve your dish with tender mashed potatoes or other favorite side dish. Decorate it beautifully with meatball beads.

How to cook meatballs with gravy

1. For meatballs, I prefer to use homemade minced meat, which I make from pork and beef. Moreover, I take meat in equal proportions. This minced meat has the desired consistency – not liquid, moderately dense, but not hard or rubbery. It will be convenient to work with it when forming meatballs. Of course, you can also use store-bought high-quality minced meat (but keep in mind that it is made from tough meat, which is mercilessly soaked in water, so saving on purchased minced meat is actually questionable). So, put the required amount of mixed minced meat into a bowl. Take an egg and separate the white from the yolk. If you find it difficult to do this the traditional way, pouring an egg from one shell to another, you can simply carefully break the egg into a cup and scoop out the yolk with a tablespoon. If it breaks and a few drops of yolk get into the white, nothing bad will happen. I have a lot of onions in the recipe, because half goes into minced meat and half goes into frying. For minced meat, you can grind the onion through a meat grinder, but it is best to grate it, then the minced meat will be especially tender. Don't forget to salt and season the minced meat with spices. Focus on your taste. But remember that an under-salted dish can be re-salted, but with an over-salted dish everything will be much more complicated.

2. Mix the minced meat well, and then roll it into meat balls the size of a walnut. Wet your palms in water, then the minced meat will not stick to your hands. We will not fry the meatballs - we will immediately put them in the gravy.

3. For the gravy, finely chop the remaining onion, wash the carrots, peel them and grate them. Place the vegetables in a frying pan, add vegetable oil, stir and fry over medium heat for 5-7 minutes. Stir, make sure nothing burns!

4. Next, sprinkle the sautéed vegetables with flour, add tomato paste and mayonnaise. By the way, instead of mayonnaise, you can use full-fat sour cream (from 20%). I mix everything well.

5. Pour boiling water into the pan (it took me 1.5 cups). I stir. I'm waiting for the gravy to boil.

6. Place the meat balls into the boiling gravy. Be careful not to pour out all the meatballs at once, add them in small batches, distributing them evenly in the gravy. Cover the pan with a lid. I reduce the heat to moderate. Simmer the meatballs with gravy for about 25 minutes. During this time, you can prepare a side dish for the meat dish. This time I decided to boil the pasta.

7. At the end of cooking, sprinkle the meatballs with finely chopped green onions. You can also use other fresh or dried herbs.

Ingredients of the dish: half a kilogram of minced pork and beef, a few cloves of garlic, a red onion, an egg, ½ cup of breadcrumbs, grated cheese (one hundred grams). In addition, you will need basil, tomato paste (50 g), two zucchini, Risotti pasta, chicken broth (3 liters), herbs and spices.

Preparing minced meatballs should begin with preparing the meat: take equal proportions of pork and beef (preferably lean), grind in a meat grinder along with onions. Add squeezed garlic, chopped basil, grated cheese (1/2 part), breadcrumbs and beaten egg to the mixture.

Using a spoon, form neat balls. Pour the broth into the pan and let it boil. We throw our meat balls into the boiling water, season with tomato paste and stir for several minutes until they rise to the surface. Cook for ten minutes.

Then throw in the pasta and chopped zucchini and leave for five minutes. Serve with chopped herbs and grated cheese. Serve minced meatballs with sour cream and whole grain bread.
