Classic vol-au-vents
Puff pastry is very often used as a base for a variety of sweet pastries, as well as for sandwiches. An example would be vol-au-vents. They can be prepared very quickly and make a wonderful dessert.
Ingredients:
- 500 g – puff pastry;
- 500 g – fresh berries;
- 1 piece - whipped cream.
The result is a very fresh summer dessert that tastes amazing. Additionally, you can use powdered sugar for final decoration.
- The puff pastry needs to be slightly rolled out, you don’t need to make the layer too thin, the thickness is about a centimeter.
- Using a glass, cut circles. Some of them remain whole, while others should be made into bagels with a hole inside.
- All preparations are laid out separately and baked.
- In the meantime, fresh, varied berries should be washed. Remove the tails.
- The baked pieces are placed into vol-au-vents. The bottom is single, and the sides are 3-4 bagels. The parts are held together using whipped cream.
- All that remains is to fill the dessert with berries and sprinkle with powdered sugar.

Gone are the days when baked goods based on puff pastry had to be exclusively purchased by gourmands who were not familiar with the secret of its preparation. Today it is easy to find ready-made dough, even rolled out into layers. By adding your own filling option, you can get fresh, crispy baked goods. There can be any number of formation options. You can wrap olives, pieces of ham or fish in dough strips; you just need to make cuts in one of the dough strips that do not reach the edge by 1-2 mm and weave the filling into a braid.
Sides
Thanks to the unique ability of puff pastry to expand in volume, to form sides, simply make cuts along the perimeter along the edge and place the filling in the middle. The sides will grow on their own. The shape and filling of the open pie can be any.
Star puffs
To form such a puff pastry, you will need two squares of dough. In the middle of the bottom one we lay out a mound of filling, and in the middle of the top one we make through cuts in the shape of a snowflake. By superimposing one layer on another, we get a star. Now all that remains is to use a jar or bowl with a suitable diameter and, placing a puff pastry under it, trim off the excess dough, and then make a pattern along the edge using a fork. Using the same principle, you can make a large pie.
Puff pastries with filling
Cut the dough sheet into rectangles. Visually divide them in half. On one of the parts we make through notches in a checkerboard pattern. Place the filling in half without making any cuts, cover and press down on the edges.

Beer puff pastry recipe
This method of preparing puff pastry is for those who can’t wait to taste baked goods made from it, because classic puff pastry still requires a longer cooking time, including the baking time itself. The liquid base of such a dough will be light beer, and the dough on it will have a special taste and tender crispy crust.
It is good to make puff pastry with beer both immediately and after long-term storage in the freezer, from where you can take it out in parts and use it for baking as needed. You can use it to bake the famous puff pastries, cheese sticks and pies with various fillings of your choice.
Ingredients for making beer puff pastry:
- premium wheat flour - 3-4 cups;
- light beer - 1 glass;
- butter or margarine - 250 grams;
- baking soda - 1/2 teaspoon;
- table salt - 1/2 teaspoon.
Preparation of puff pastry with beer:
We know that yeast dough requires an air temperature above room temperature to ripen, and puff pastry - no higher than +20 C, so that margarine or butter does not have time to melt. All ingredients must also be chilled. Otherwise, the high layering of the dough is lost. In cold weather, you can reduce the temperature in the kitchen by airing it for a long time, cooling the ingredients and quickly working with butter or margarine when creating dough. In the summer, you can only count on frozen butter and quick production of the product.
First, in a deep bowl, mix some of the sifted flour, salt and soda. Add very cooled butter, chopped with a knife or crushed on a coarse grater, into this uniform mixture. While grinding, mix 1 cup of butter and flour.
Pour chilled beer into the mixture of chopped butter and flour, stirring constantly and adding small portions of flour. Add flour to the dough while kneading until it becomes soft and elastic.
The resulting dough should be rolled out into a thin rectangle on a cutting board sprinkled with flour, placed in a plastic bag or cling film and placed in the freezer for 1 hour or in the refrigerator for 2 hours.
For your information! The beer for puff pastry made from beer must certainly be light and weak, so that its unpleasant taste is not transferred to the dough and baked goods made from it. In addition, do not add sugar to the puff pastry - it will not be flaky.
Place the dough removed from the cold on a cutting surface sprinkled with flour and roll out a rectangular layer from a cooled rectangle, the thickness of which should be between 1-1.5 centimeters.
Form the resulting layer of dough into an envelope, fold it in half and roll it out again with a rolling pin into a rectangular layer, wrap it in cling film and place it in the cold: in the freezer for 30 minutes, and in the refrigerator for 2 hours. After the specified time, the beer dough is ready for final cutting for delicious sweet and savory pastries.
Puff braid
Simple puff pastry pies look too ordinary. It is possible to make them much more interesting if you change the design of the baked goods. At the same time, the taste will remain delicate, homely, and the aroma will gather the whole family around the puff pastries.
Using store-bought dough you can make a dessert very quickly. For the filling you can take cottage cheese, grated apples, jam or boiled condensed milk. The most important thing is not to add too much filling so that it does not leak out and burn. In the photo you can find examples of how to properly mold the edges.
The puff pastry is rolled out into a thin layer. Then you need to cut it into rectangles. This will be a preparation for future layers. The rectangle is visually divided into 2 parts. One will represent the bottom, and the second the top of the pie. Use a knife to make neat strokes on the top.
Then the filling is laid out on one half and covered with the one where the strokes were made. The edges of the puff pastry must be pinched well so that the filling does not leak out. These are original and beautiful envelopes.

Step-by-step preparation:
Step 1. First of all, defrost the dough. It is better to do this at room temperature, otherwise the dough may lose its elasticity. And it’s better to take it out of the cellophane too
Step 2. Lightly dust the surface with flour and roll out the dough thinly. You need to roll in one direction so that the layering of the dough is not lost. Otherwise, you won’t end up with puff pastries, but simple butter cookies.
Step 3. Cut the rolled out dough into small squares. The smaller the squares, the neater the puff pastries will be. You can use factory molds, which come in various configurations. A pair number of parts is required. If you prefer to cut the puff pastries by hand, then make one piece.
Step 4. Cuts should be made on the parts that are intended for the top. Don't make too long cuts. Steam will escape from them and the puff pastry may lose its shape.
Step 5. Place thick jam or preserves on the bottom. The quantity will depend on the size of the puff pastry dough
