Red bean and chicken salad recipe

A quick bean salad recipe that is especially good in the spring, when the first cucumbers appear. Their smell alone can drive you crazy! It’s unlikely that this salad can be placed on a holiday table, but it’s perfect for a personal snack.

For a salad with red beans and chicken you need:

  • 120 grams of red beans;
  • 1 chicken fillet;
  • 2 medium fresh cucumbers;
  • Greens and green onions;
  • Mayonnaise;
  • 1 onion;
  • Spices.

Red bean and chicken salad recipe:

  1. First, you need to soak the beans for 7 hours or overnight. Next, cook until the beans are completely cooked. Drain the water. You can add salt.
  2. Remove the film and veins from the fillet, put it in boiling water with spices: bay leaf and salt. It cooks for 20 minutes, then you need to let the meat cool directly in the broth. After this, disassemble it into fibers by hand. Can be cut.
  3. Wash the cucumbers and check for bitterness. If present, cut off the skin. Cut into cubes.
  4. Wash all greens in water and chop.
  5. Peel the onion and chop finely.
  6. Mix all products together with mayonnaise and season.

Tip: the salad will be much tastier if you use homemade mayonnaise. If you have an egg, mustard, sunflower oil, sugar, salt and a little lemon juice or vinegar, you can safely prepare the most delicate sauce. You can play with taste using different spices and vinegars, types of mustard or different eggs. And the most original would be mayonnaise made with milk without adding eggs.

The simplest and most delicious recipe for salad with beans in jars for the winter

This salad recipe is my favorite. You may think that there are too many carrots and onions. Then feel free to reduce their number. But for me, they provide just the right amount of sweetness and sauce.

Let's take:

  • dry white beans – 1 kg,
  • carrots – 1 kg,
  • tomatoes – 2.5 kg,
  • onion – 1 kg,
  • garlic cloves – 5 pcs.,
  • 2 laurel trees,
  • 400 ml vegetable oil,
  • salt – 2-3 tbsp. (adjust to taste)
  • sugar - glass,
  • 200 ml 9% vinegar.

White beans were soaked in water overnight. In the morning, drain off any liquid that the beans have not absorbed. It is convenient to do this through a sieve or colander.

Then take a pan and boil the beans for 15 minutes from the moment they boil. Without adding salt and on low heat on the stove. Then we pour the broth into the sink; we won’t need it. During this time we will have time to prepare the remaining ingredients.

We take tomatoes and cut off the stems from them. Grind through a meat grinder or blend in a blender.


Pour the tomato puree directly into the beans.

Remove the skins from the onion and cut it into pieces.

Peel the carrots and grate them on the coarse side of a grater. Transfer these products into a saucepan.

Add flavor with salt and sugar. Measure out the required amount of odorless sunflower oil and turn on the stove to heat slowly. From the moment it boils, cook the mixture for 25 minutes.

Then add vinegar. Let's taste it. Is the sweet and spicy enough for you? Add garlic squeezed through a press and a couple of bay leaves.

Cover it all with a lid and cook for another 15 minutes. Then we try the mass. All vegetables and beans should be soft and completely cooked. If you don’t have time, then cook for another 15-20 minutes under the lid. It is necessary to stir the snack.

Sterilize containers and lids. Pour the bubbling salad to the top.

Roll up the lids. We check the blanks for the quality of the closure. To do this, turn it over onto the lid and see if there are any air bubbles inside and the sauce oozing out.

We wrap the preserved food in a blanket and wait for it to cool completely.

It turned out to be about 6 liters of snacks.

Salad with red beans and chicken

Corn and beans are the key to a satisfying dish. In addition, the recipe contains chicken meat, which means the salad will appeal not only to women, but also to men.

For a salad with beans and avocado you need:

  • 1 small chicken fillet;
  • 240 grams of red beans;
  • 130 grams of corn;
  • Greenery;
  • Sunflower oil;
  • 1 onion;
  • Pine nuts;
  • Spices.

Prepare salads with red beans and chicken:

  1. Cut the chicken fillet into slices, first removing the film and removing the veins. Roll the meat in your favorite spices. Then fold in foil and bake in the oven. A few minutes before the end of cooking, the foil can be removed to allow a crust to appear. Then cool. Cut into pieces.
  2. Beans that have been soaked overnight should be cooked. Please note that red beans take longer to cook than white beans, but they retain their solid structure better and will not turn into mush when stirred in a salad.
  3. Boil a head of corn and separate the grains. In canned food, you just need to drain the liquid.
  4. Dry the nuts a little in a dry frying pan. Grind in a mortar.
  5. Peel the onion and chop finely.
  6. Wash the greens in water and chop.
  7. In a container, mix corn, fillet, onions and beans along with sunflower oil, season. Sprinkle pine nuts on top.

Tip: To reduce the amount of spices, you can use soy sauce. It can be added to both meat and the general mass. But then you need to be very careful with salt. Pine nuts can be replaced with others, but be sure to dry them in a frying pan.

Salad with smoked breast and legumes

This dish is quite simple to prepare: buy all the necessary products at the grocery store, most of which are already prepared.

  • Red beans – 1 can;
  • Smoked breast – 350 g;
  • Eggs – 4 pcs.;
  • Mayonnaise – 200 ml;
  • Green onions - a bunch;
  • Cheese – 200 g;
  • Salt - to taste;
  • Potatoes – 2 pcs.

Preparation: 35 minutes.

Calorie content: 113 Kcal/100 g.

Carefully wash the potatoes, put them in a saucepan, add eggs on top, add water and set to boil. After fifteen minutes, take out the eggs and immerse them in cold water, boil the potatoes for another five minutes.

Cut hard cheese into large cubes. Open the jar and pour the brine from the beans. We remove the skin from the chicken breast, remove the bones and chop it into cubes, just like cheese. Peel the cooled potatoes and eggs and cut them into bars.

Mix all the prepared products, add some salt, and add homemade mayonnaise. Let it sit for a little while. This dish with smoked chicken and beans can be eaten not only cold, but also warmed up as a warm salad.

Red bean and chicken salad

This bean and chicken salad is very colorful, although it doesn't include a ton of veggies. The recipe is rather hearty, and with the special taste of your favorite crab sticks. By the way, they can be replaced with crab meat if you live by the sea.

For red bean chicken salad you need:

  • 1 red bell pepper;
  • 100 grams of crab sticks;
  • 90 grams of red beans;
  • 1 chicken fillet;
  • 3 eggs;
  • Spices;
  • 140 grams of hard cheese;
  • Mayonnaise;
  • Greenery;
  • 1 clove of garlic.

How to assemble red bean salad with chicken:

  1. Wash the pepper well, remove the stalk, seeds and white partitions. Next cut into cubes.
  2. The beans that have been pre-soaked overnight need to be boiled, then the water should be drained.

Tip: hard cheese (Dutch or Russian) can be replaced with Parmesan. But do not grate it, but place it on top in very thin slices, as served with Caesar salad. With the above-mentioned crab meat, you can either complement the salad or decorate it. When you boil already peeled crabs, add a slice of lemon and fresh rosemary to the water for a more sophisticated taste.

I highly recommend trying a simple, tasty and satisfying bean salad with croutons, corn and cheese. There are many variations of this dish. This recipe is the simplest and most democratic. Suitable as a dish for a holiday table made from simple ingredients, as well as for a simple lunch meal.

To prepare you will need:

  • Canned red beans - 250 gr.
  • Corn (canned) - 250 gr.
  • Hard cheese – 150 g
  • Chicken eggs - 3 pcs.
  • Garlic – 2 cloves
  • Mayonnaise – 3 tables. Spoons
  • Salt - a pinch
  • Black pepper - to taste
  • Rye bread - 300 gr.

Progress:
