Soft base recipe
The base for pizza from this type of flour is prepared very simply and quickly; you don’t need too much food, and you can easily find them in the nearest supermarket.
Pizza made from whole grain flour will be slightly darker in color than regular pizza.
Ingredients:
- whole grain flour – 1 cup;
- a glass of warm water or kefir;
- a tablespoon of olive oil;
- salt to taste.
Cooking method:
- Sift the flour into a deep bowl and add salt. Mix.
- Carefully pour kefir or water into the flour and salt, stirring constantly. To obtain a soft dough, it is better to use kefir or sour cream, while with water the base will be somewhat stiffer. When using kefir, you can add a pinch of soda to make the future pizza fluffy.
- Knead the soft dough until completely smooth, gradually adding olive oil, then roll into a ball.
- Using a rolling pin, roll out the dough to the required size, depending on the container in which you plan to bake. For a standard baking sheet, for example, these ingredients are enough to roll out the base 1 cm thick. For a round shape with a diameter of 28-31 cm, you can use the same number of ingredients and make the dough a little thicker or reduce the amount of flour and liquid (water or kefir) by 1 /3.
- Having given the crust the required shape, you should send it to bake in the oven for 10-15 minutes, after which you can begin laying out sauces and fillings.
To obtain an even more interesting taste and aroma, finely chopped favorite herbs, such as dill, are often added to the dough.
Cooking without yeast
While the crust is baking in the oven, you can prepare the sauce and filling. The example in question is suitable for a pizza the size of a standard baking sheet.
Tomato sauce is ideal for this base, so when the dough is ready, you should generously grease it with tomato paste (about 3 tablespoons).
Then you need to add the filling to your taste. The traditional cheese filling with mozzarella is best suited here. To do this, you will need two large balls of mozzarella cheese, which must be cut into small squares. If you want the cheese to melt more, you can grate it on a fine grater or cut it into very small pieces. The larger the cheese squares, the more viscous and cheesy the dish itself will be.
After the cheese is placed on top of the tomato paste, add a glass of olives, also crushed.
Dry or fresh herbs and herbs can be added as desired. You can also add a few pieces of feta cheese to go with the mozzarella.
When the sauce and filling are placed on the dough, it’s time to bake the dish until cooked at a temperature of about 220C until aroma and golden brown appear, about 10 minutes.
A little trick: it’s best to place both the dough and the pizza on a hot baking sheet or a heated baking dish, after keeping the container in a preheating oven.
For a round shape with a diameter of 28-31 cm, the amount of sauce and filling must be halved.
Some features and types of fillings
The use of this type of flour gives the dish a new taste and also changes the color of the base, which looks somewhat darker. In addition, whole grain flour is famous for its beneficial properties, which has a positive effect on baked goods made from this product.
The best sauces for this type of base are usually red or pink tomato sauces, as well as pesto. However, for sweets it is better to use a delicate white sauce with cream and Parmesan.
As for the filling, it all depends on personal taste preferences, since any traditional types go well with this dough - cheese, chicken, mushroom, vegan and even sweet (for example, pineapple or pear).

There is probably no person on earth who does not like baking, flour and other dishes using flour. Therefore, it is quite difficult to immediately wean off eating foods that are not healthy. Today I will tell you how to make everyone’s favorite pizza, but in a low-carb version, without any flour. It turns out to be very satisfying and tasty, although it does not at all resemble a traditional Italian dish.

How to Make Low Carb Pizza
While the base for classic pizza is dough made from cereal flour, our base will be made from chicken breasts, or rather minced meat. So let's get started...
Ingredients for PP pizza without flour

Technology for making carb-free pizza
First we need to prepare the crust. Cut the breasts into pieces and throw all the ingredients into a food processor and grind into minced meat. Then prepare parchment paper, spread it on the table and brush it with olive oil for frying. Next, with wet hands, so that the minced meat does not stick to your hands, take it out of the bowl and form a ball.
Let's put this ball in the middle of the paper and cover it with a food bag. Now we need to roll out the minced meat with a rolling pin. That's why I used a plastic bag to prevent the meat from sticking to the rolling pin. Roll out the pancake to a thickness of 1-1.5 cm and place in the oven for 15 minutes. Meanwhile, prepare the filling.
I advise you to first cut the mushrooms and fry them in a frying pan. While they are frying, chop the cucumbers, tomatoes and grate the cheese on a coarse grater. When our “dough” is baked a little, we just need to fill it with filling.
To do this, first coat the surface of the chicken pancake with tomato paste, then place cucumbers, tomatoes and mushrooms in a random order, and sprinkle generously with cheese on top. Remember that the best thing about classic pizza is the cheese. Our dish is no exception.
Place the pan back in the oven until the cheese is melted and just barely toasted. Take out, sprinkle with fresh herbs and serve immediately. Just like traditional pizza, our pizza is also delicious while it’s hot. Bon appetit!

- in the end you should have a moderately soft and elastic dough. Wrap it in a napkin or cling film and put it aside
— Let's prepare garlic sauce for the base of diet pizza. Finely chop the garlic, mash it lightly with a pestle to release the juice and add one or two tablespoons of olive oil. Stir and let it brew
For filling:
- cut the chicken breast into small pieces
— fry the meat in a non-stick frying pan without oil until golden brown. And, you can fry on the grill, or in a regular frying pan with a little olive oil.
- cut the tomatoes into circles and the mozzarella cheese into thin slices
— defrost the spinach and squeeze to remove excess moisture. If you use fresh spinach, wash it, dry it with a paper towel, cut it or tear it randomly with your hands.
The filling for the diet pizza is ready. Let's start assembling it:
We will prepare the pizza in the oven without first baking the base, namely: - roll out the dough into a thin layer, on top of which we apply garlic sauce
— then distribute the spinach evenly,
- now fried chicken breast, on top of which we will place rounds of tomatoes. Season the filling with salt, pepper and oregano
— scatter slices of cheese on top of the filling in random order
- place the pizza in a preheated oven at 160°C for about 20 minutes

One of our family's favorite foods is pizza! Oh, how delicious it is: with spicy Gorgonzola, with prosciutto, with seafood, and even the simplest Margarita, prepared with care and love, will drive anyone crazy with its aroma! Pizza made from whole grain flour is an excellent alternative to classic pizza, and without harming your figure: as they say, the sheep are safe and the wolves are fed :)
I know that many guardians of proper and healthy nutrition do not allow themselves “sins” like pizza (according to the original recipe, it is made from the highest quality flour, grade “00”), I hope that my version of pizza made from whole grain flour will please them (as it pleases me :), because whole grains will not harm your figure, and besides, they are a source of valuable dietary fiber (fiber), B vitamins, minerals and trace elements, and they also contain antioxidants and plant estrogens.
When I took on this experiment, I doubted until the last moment: would such dough turn out to be something reminiscent of pizza? And in vain! The pizza made from whole grain flour turned out wonderful: the dough was made with yeast, as it should be, so it rose without any problems, and was subsequently soft with a crispy crust and an exciting aroma.
In general, there are still many opportunities for further experiments with pizza. Not only are there hundreds of options with fillings, but the dough can also be prepared by mixing different types of flour (for example, as I did, mixing wheat, rye and oatmeal).
To make pizza with whole grain flour, you can, of course, use exclusively wheat flour, or you can add other types of flour to it to suit your taste.
Whole wheat pizza: recipe
Ingredients:
- whole grain flour – 130-140 g;
- warm water – 70 ml;
- dry yeast (fast-acting) – 1 tsp. (without slide);
- salt - a pinch;
- olive oil – 1 tbsp;
- sugar – ¼ tsp.
Preparation:
Dissolve the yeast in warm water and add a little sugar. Leave for 10-15 minutes (preferably in a warm place). After the specified time, the water will become cloudy and foam a little.
Mix flour and salt in a deep bowl, make a small depression (“well”) and pour the yeast mixture into it. Mix first with a spatula, then knead the dough with your hands.
At first it will be sticky (you can add a little flour if necessary, but don’t get carried away), after a minute or two add olive oil and continue kneading (at least 7-10 minutes!).
Stretching, twisting, passing between your fingers, knead thoroughly - the quality of the baked goods will depend on this. As a result, the dough should become smooth and elastic and not stick to your hands.
Roll it into a ball, put it in a bowl and, covering it with a damp towel, put it in a warm place (I put it in an oven preheated to 50-60 degrees) for 40-60 minutes until it rises.
When the dough has doubled in size, you can start working with it. Knead it a little more (a couple of minutes) and start rolling it out or, as real Italian chefs do :), stretch it with your hands to the desired shape. The thickness should be somewhere around 5 mm. To make the sides, you need to pinch the edge a little.
Before adding the filling, be sure to generously brush the base with tomato paste.
I repeat, you can experiment endlessly with the filling: tomatoes and mozzarella, chicken, mushrooms, onions and peppers, seafood, prosciutto and aromatic herbs, even sweet options with pineapples, figs or pears are possible!
Whole wheat pizza: NB!
The oven should be preheated to maximum! It is better to transfer the pizza along with the parchment to a hot baking sheet (keep it in the oven for 5-10 minutes). Pizza is baked from whole grain flour for a minimum of time (about 10 minutes depending on the oven) at a maximum temperature (220-250 degrees). I also recommend it on the bottom shelf. As soon as the golden brown crust appears, take it out!
