Yeast dough with sour cream

Once on the Internet I came across a recipe for a dough called “like fluff”. But the recipe called for regular yeast dough. But when I baked pies from yeast dough with sour cream, I immediately remembered this name. The dough is really like fluff, soft and tender. From this dough you can bake buns, pies, pies with any filling.

Ingredients for the dough:

(for 1 baking sheet)

  • 125 g sour cream (fat content 15-20%);
  • 60 g margarine;
  • 15 g fresh yeast;
  • 3 teaspoons sugar;
  • 1 teaspoon (without top) salt;
  • 125 ml + 60 ml water;
  • 1 tablespoon vegetable oil;
  • approximately 500 g of flour.

Preparing yeast dough with sour cream

Sift the flour.

Dissolve 1 teaspoon of sugar and yeast in warm water (60 ml). Add 2-3 tablespoons of sifted flour. Stir, cover with a napkin and place in a warm place for 15 minutes.

In a saucepan or large bowl, combine melted margarine, sour cream, 125 ml warm water, 2 teaspoons sugar and 1 teaspoon salt. Pour almost all the sifted flour on top (leave a handful of flour), but do not mix. Pour the appropriate yeast mixture onto the flour and gently mix it with the flour, being careful not to grab the bottom layer. Then add vegetable oil and mix everything, grabbing a layer from the bottom. The dough should not be too tough.

Sprinkle a cutting board with the remaining flour, place the dough on it and knead with your hands until the dough has absorbed all the flour.

Cover the dough with a towel and leave for about 40 minutes in a warm place.

When the dough has risen, knead it and leave for another 30-40 minutes in a warm place.

From this dough you can make buns, pies or pies with any filling, sweet or not. For sweet pies or buns, you can increase the amount of sugar in the dough to 3 tablespoons.

For pies, divide the dough into pieces (about 40 g each). Roll each piece into an oval cake. Place the filling in the middle and seal the pie.

The buns can be made simple round or shaped, for example, in the form of buns or bagels.

Line a baking tray with greased baking paper. Place buns or pies on a baking sheet. Let rise in a warm place for 30-40 minutes. Brush with beaten egg.
