We offer you a recipe for making quick pies with potatoes and mushrooms. This time we will prepare them using smooth choux pastry, which is easy to mold and holds its shape perfectly.

Ingredients:

For the test:

  • Water – 250 ml.
  • Flour – 2.5-3 tbsp.
  • Granulated sugar – 1 tbsp.
  • Vegetable oil – 3 tbsp.
  • Salt – 1 tsp.
  • Eggs – 2 pcs.

For filling:

  • Potatoes – 0.8-1 kg.
  • Mushrooms – 0.2 kg.
  • Onions – 2 pcs.
  • Salt, spices - to taste.
  • Vegetable oil - for frying.

Cooking process:

  1. You need to boil the potatoes for the filling in advance and mash them while hot.
  2. Boiled wild mushrooms or raw champignons should be chopped into thin strips and fried in vegetable oil along with finely chopped onions.
  3. Then mix the onions with mushrooms and potatoes until smooth. Salt the filling and add spices to taste.

This pie is baked with the addition of butter and without the addition of yeast.

Required components:

  • 750 g flour;
  • 210 g butter;
  • 1 egg;
  • 200 g water;
  • 3 onions;

50 grams of sugar, 350 milliliters of still warm potato broth, a small piece of butter, 30 grams of yeast (fresh), 10 grams of salt and flour.

This “dough” can be made quickly and easily. It is prepared literally in one step. You just need to mix all the ingredients and put the finished mixture to rise. Everything happens in a matter of minutes. Thanks to fresh yeast, the “dough” grows right before your eyes. After this, all that remains is to prepare some filling, shape the workpiece, and then fry it in boiling oil until it has a characteristic golden brown crust. This is also done very quickly. And as a filling you can use the same potatoes, the decoction of which has already found its way into the “dough”. You just need to mix it with fried onions and add a little chopped herbs for flavor.

Ingredients:

  • 500 g puff pastry;
  • 300 g minced meat;

Preparation

  • 1-2 onions.

Cooking sequence

  1. Add soda, salt and sugar to kefir. Mix thoroughly. Break eggs into kefir and mix. Now add oil and mix again.
  2. Sift most of the flour into a bowl or on the table, forming it into a mound. Make a notch in the center and pour the kefir mixture into it. Knead the dough, gradually adding flour. It should be moderately soft and hold its shape, and not spread.
  3. Fry finely chopped onion. Boil the potatoes or take yesterday’s ready-made mashed potatoes. Mix potatoes with onions and add spices and salt.
  4. Divide the dough into small, equal parts and roll them into balls.
  5. From each kolobok we make a flat cake with our hands or using a rolling pin. Place the filling in the center of the flatbread and form a pie, pinching the edges tightly.
  6. If you, like me, like thin pies, then lightly go over each one with a rolling pin. Just do it carefully so as not to damage the pie.
