This recipe is even simpler than the previous one: to recreate it you don’t even need an oven, because all the ingredients are combined using gelatin, and the base for the pie is a ready-made sponge roll. With the help of such a cherry charlotte, any housewife will be able to please her family with an interesting dessert, without fear that the dough will fall or not rise.

- Cottage cheese,
- Biscuit roll,

Apple charlotte with cherries and nuts
Another quick pie option. The recipe calls for dried cherries, but if you don’t have them, you can replace them with fresh or frozen ones. Such berries, like dried fruits, can be pickled in alcohol, but after that you need to dry them well in a colander and squeeze lightly.
Ingredients:
- selected eggs – 4 pcs.;
- 230 gr. dark sugar;
- three large sweet apples;
- half a glass of dried cherries (pitted);
- three tablespoons of rum or cognac;
- half a large lemon;
- two tablespoons of peeled walnuts;
- half a spoon of cinnamon powder;
- 40 grams of “Peasant” butter.
Step by step recipe
Scald the dried cherries with boiling water, pour in rum and leave for a while to soften. If the pie is being prepared for children, it is better to use cherry juice instead of alcohol.
Cover the bottom of the mold with parchment and rub it with a thin layer of butter. Sprinkle the oiled paper with sugar (50 g), coat the sides of the mold with vegetable oil.
Thinly peel the apples without cutting the fruit and remove the core and seeds. A through hole should form, up to one and a half centimeters in diameter. Cut the apples into rings, similar to canned pineapples, one centimeter thick.
Arrange the fruit rings along the bottom of the pan.
Squeeze out the softened cherries and tightly fill the holes in the “washers” with berries. Fill the free space between the apples with walnut pieces. Sprinkle everything with ground cinnamon.
Scrape the zest from the lemon with a fine grater. We do this carefully so as not to touch the white pulp. Measure out a teaspoon of chopped zest.
Pour the eggs into a bowl and, whisking with a mixer, bring them until they almost triple in volume. Without ceasing to beat, gradually add sugar. After this, continue beating for another 8 minutes, adding the zest at the end.
In the center of the bowl, pour some of the sifted flour onto the dough, mix from bottom to top with a wide spatula or spoon. Having received a homogeneous mass, add the remaining flour using the same method.
Pour the batter over the fruits laid out in the mold and level the surface.
We cut the remaining apples into small cubes and evenly arrange them with the remaining cherries on the surface of the future charlotte.
We bake, as in any previous recipe - heating 180 degrees, duration about half an hour.
Cool the finished cake without removing it from the mold. Then we insert a knife between the cake and the side of the pan, carefully circle it to separate it. Turn the mold over onto a plate and remove the charlotte.
There is no need to decorate this pie; thanks to the nuts, apple rings and cherries, it already looks presentable.

Ingredients:
- small lemon;
- 600 gr. fresh cherries;
- half a small vanilla pod;
- 60 gr. dark raisins;
- 2/3 stick of butter;
- stale, dried bread (sliced) – 350 gr.;
- half a glass of sugar;
- a teaspoon of rum (5-year-old cognac).
How to cook
Wash the cherries, remove the pits, and dry.
Scald the raisins with boiling water, add very hot water and leave for 10 minutes. Lightly squeeze the soaked berries and, like cherries, dry them well on a towel.
Combine cherries and raisins. Using a fine grater, add lemon zest to the berries.
Cut the vanilla pod, use a knife to collect the pulp and add it to the bowl with the berries, mix.
Place 40 grams in a small saucepan. butter and place it on low heat. When the fat has melted, add a spoonful of sugar and, without removing from the stove, stir until completely dissolved.
Place the berry mixture in a saucepan and add the peeled vanilla pod. Boil the filling over low heat for three minutes, then set aside and cool well. Remove the vanilla immediately after turning off.
Mix alcohol into the cooled cherry filling.
Pour the remaining 75 grams of sugar into a small plate, melt the rest of the butter in a saucepan on the stove.
Prepare the molds. For portioned charlotte, it is better to take containers for large muffins. We moisten the bottom and walls of the containers with vegetable oil.
We cut out circles from the slices of bread, the size of the bottom of the containers and rectangles, 2 mm wide below their height.
First dip the round pieces in oil on both sides. Dip one side into sugar and place in the molds, sugar side down. Use the same method to close the sides.
Compacting well, fill the void with cherry filling and place the molds on a baking sheet.
Cover each container with foil and place the baking sheet in a hot oven. Bake at 200 degrees for 40 minutes.
