Ayran: types, composition and taste
Ayran is made from milk, water, salt and ayran starter. In Turkey, this drink can be found in 2 types:
- Regular ayran
- Yayik ayran
Regular ayran can be found in shops, supermarkets, restaurants and cafes. It is sold in a glass of 200-350 ml or in a bottle (glass or plastic) from 1 liter to 2.5 liters. This drink looks no different from a regular dairy product. It tastes like a salty fermented milk product.
Yayik ayran differs from the usual one in that it is a fermented drink, more sour and having a characteristic slightly pungent odor. This drink is prepared from sour yogurt, salt and water. Yayik ayran is made by churning in an oil mill and therefore the drink has a foamy head when served. This drink has a short shelf life, so you can only find it in cafes and restaurants where you will be offered yayik ayran on tap.
There is also a variety of yayik ayran - susurluk. This ayran, among all types of ayran, is the lightest salted. In Turkey, it began to be produced in the 1950s in the Susurluk region of the province of the city of Balikesir. Susurluk is made in a special machine equipped with a motor, which constantly distills ayran, which is why the drink develops foam and a special taste.
