It is better to have dried pitted cherries, then the drying process will be significantly less. In addition, there is no guarantee of the safety of the product during long-term storage.
Ingredients:
- • fresh cherries – 3 kg (weighed without pits);
- • sugar – 1.2 kg (400 gr. * 1 kg of berries).
Cooking steps:
- Strong, ripe fruits are suitable. You can’t take overripe and too soft ones, they will spread. After separating the seeds and drying on a towel, place the cherries in a container and cover it with sugar. Shake slightly, distributing the sugar equally and leave to infuse for 8-10 hours in a warm place (20-22 degrees).
- After waiting the required time, transfer the berries to a large flat colander and leave to infuse for +8 hours. This will release more juice. Pour the accumulated liquid into jars, they will be useful for cooking compote.
- Weigh the remaining berries without liquid again. Out of 3 kg, 2 kg remain. The proportions for the syrup are as follows: 1 kg of berries * 350 ml of water + 300 g. Sahara. You can't skimp on the last ingredient.
- Cooking syrup. When the water boils, stir until the sugar is completely dissolved. Then, after waiting for it to boil, reduce the heat and after 7 minutes of cooking, turn it off completely. Cover the pan with a lid and let the cherries cool.
- When the berries have cooled, place them again in a colander, allowing the liquid to drain. Collect the syrup in a jar and put it in the refrigerator. Place the cherries on trays from electric drying. Preferably in one layer. Dry for the first three hours at a high temperature of 55-65 degrees, then reduce the mode to 35 degrees and wait for readiness.
The readiness of the berries must be determined by touch. If the cherry is soft when you squeeze it and no juice appears between your fingers, that’s it.
How to dry cherries correctly
Tart varieties are best suited for processing. Before drying the berries, they need to be processed.
Treatment
- Sort the berries, separate the large ones from the small ones. Small berries are more convenient to dry - they dry faster. Remove the stems and rinse the cherries with water.
- Prepare a pan, pour water into it and put on fire. Bring to a boil. When boiling, add 1 tsp. soda for 1 liter. water.
- Pour boiling water and soda over the cherries. Immediately transfer the berries to a bowl of cold water. Rinse through a colander until the liquid has completely drained - this will soften the skin and make it easier to dry.
- Remove the seeds.
Dried cherries at home in the oven
An electric dryer is a rare device; not every housewife can boast of having one. But most people definitely have an oven. However, sunny weather also helps with drying fruit. Summer, in the heat, you can lay the berries on paper or cloth, then collect them after 4-5 warm days. Dried cherries with pits will turn out delicious, but it is better to remove the kernels. The process goes faster in the oven.
Ingredients:
• cherries – 2.5 kg;
• sugar – 0.9 kg.
Cooking steps:
- Rinse the berries thoroughly and set aside, allowing the water to drain. Then carefully remove the seeds. The longest stage. We need to weigh the cherries again. The difference is noticeable. At first it was 2.5 kg, after cleansing it became 2,150 kg.
- Place clean berries in one bowl, cover them with sugar and leave to steep for several hours. Preferably overnight.
- In the morning, drain the accumulated juice and remaining sugar. Boil it in a special pan with thick metal walls.
- When the liquid boils, add cherries and wait until it boils again. Turn off the heat after 7-10 minutes have passed.
- After transferring the cherries, let them cool, carefully straining the juice. A regular colander will help.
- Drying. Taking a large flat baking sheet, spread a sheet of parchment paper on it. Place cherries on top in one layer. Drying system: 1-1.5 hours - setting 90-100 degrees. The second stage is 2-3 hours – at 50-70 degrees. Leaving the oven door ajar.

- filtered water – 700 ml.

- Water is mixed with sugar, brought to a boil, berries are dipped in portions into the prepared syrup and blanched for 3-4 minutes.
- Place the cherries in a colander to drain the juice.
- Cover the baking sheet with baking paper and lay out the berries.
- Place the cherries in an oven heated to 70 degrees and dry until the berries become slightly elastic.
- Oven-dried cherries will be ready in 3 hours.
Homemade dried cherries with pits

- Place the prepared berries on a baking sheet lined with paper, cover the top with gauze and leave in a well-ventilated area.
- As soon as the berries become less elastic, they are ready.
Drying cherries in the sun

This is an unrealistic procedure in a city apartment, but in a country house everything is very feasible. The main thing is that the weather is sunny and dry. - water – 350 ml;
- granulated sugar – 1.5 kg.
- The cherries are washed, sorted, and pitted.
- Add 1 kg of sugar to the berries and leave for 5 hours for the cherries to release their juice.
- The juice is drained, and the cherries are placed in a colander to strain out the remaining juice.
- Make a syrup from the remaining sugar and water, dip the berries in it and let them boil for 5 minutes.
- Leave the cherries in the syrup to cool to 50 degrees and drain again in a colander.
- Let the syrup drain.
- The berries are laid out on a baking sheet lined with paper in one layer and dried at 50 degrees for 3 hours.
- After the specified time, the dried aromatic cherries will be ready. It is completely cooled and only then put away for storage.
