A very simple and quick recipe that makes a wonderful squid appetizer. Just look at this beauty! And what a taste it is - you'll lick your fingers!
The outside is fluffy and slightly crispy, and the inside is tender, aromatic squid. Speaking of squid! You can use both frozen rings (very convenient and quick) and whole carcasses, which will have to be cleaned, cut and chopped first.
Separately, it is worth mentioning the sauce, it is simply incomparable here! Spicy, sweet and sour and slightly salty. All connoisseurs of Asian cuisine will like it.
Ingredients:
- Squid – 200 g.
- Wheat flour – 150 g.
- Corn starch – 50 g.
- Water – 150 ml.
- Baking powder – 1 teaspoon;
- Vegetable oil;
- Salt and pepper - a few pinches;
- Ground paprika - to taste;
For the sauce:
- Sugar – 1 tbsp. spoon;
- Apple juice – 1 tbsp. spoon;
- Lemon juice – 1 tbsp. spoon;
- Garlic – 1 clove;
- Fresh ginger – 5-10 g.
- Hot pepper paste (adjika) – 1-2 teaspoons;
- Soy sauce – 1-2 teaspoons;
- A pinch of salt;
Preparation
We defrost the squid carcasses, scald them with boiling water (there is no need to keep them in boiling water for a long time), remove the skin from the outside and inside, take out the cartilages, and then cut them into thin rings. If you bought squids already peeled and sliced, then simply defrost them.
Now let's make the batter. Sift flour (100 g), baking powder and starch into a deep bowl. Stir thoroughly.
Add 1 tablespoon of oil and stir again. The batter has a consistency similar to sour cream or mayonnaise.
Place the squid rings on a paper towel and dry thoroughly.
Place the rings in a dry cup, add a pinch or two of salt, then stir. Add 50 g of flour and mix thoroughly again so that each squid ring is covered with a layer of flour on all sides.
Meanwhile, pour more oil into a frying pan (or saucepan) and place on the stove. Let it warm up. Ideally there should be so much oil that the rings literally float in it (like fries).
Place a few rings in a bowl of batter and gently dip them in. Here it is very convenient to use Chinese chopsticks or kitchen tongs (like tweezers). Then your hands will be clean and the batter will remain in place.
Check the readiness of the oil - throw some dough or dough into the frying pan. If a piece rises to the surface and bubbles, it means the oil has warmed up well and you can start frying the squid rings.
Carefully place a few rings into the pan. Fry for a couple of minutes until golden brown on all sides. If necessary, the rings can be turned over.
You should not fry for a long time, as the squid will become “rubbery”, and this will no longer be very tasty.
Once the rings are ready, place them on a paper towel to drain excess fat.
That's it, send the next batch to the frying pan and fry in the same way. Now let's move on to an equally important point - the sauce.
Making the sauce
- Cut and peel a piece of ginger and also peel a clove of garlic. Now put them in a mortar, add a pinch of salt and grind thoroughly until a paste forms. If desired, you can grate them on a fine grater or grind them using a blender.
- Place the garlic-ginger mixture in a small bowl, pour in 1 spoon of lemon juice and a spoon of apple juice.

This recipe is similar to the previous one, but there is a slightly different cooking technology. Instead of batter we will have a breading mixture. Roll the rings in breadcrumbs, and then fry in oil (the principle is the same).
As a result, the snack turns out crispier and brighter! In general, I advise you to try it.
Ingredients:
- Squid – 1-2 large carcasses;
- Breadcrumbs – 100 g.
- Wheat flour – 70 g.
- Rice flour (or starch) – 70 g.
- Chicken egg – 1 pc.
- Lemon juice – 2-3 teaspoons;
- Dried garlic – 1 teaspoon;
- Pepper mixture (ground) – 1 teaspoon;
- Salt, vegetable oil;
Let's start cooking
Defrost the squid, peel and cut into thin rings. Add lemon juice and 0.5 teaspoons of salt to them. Stir and leave to marinate for about 15-20 minutes.
Mix 2 types of flour in a cup, add a few pinches of salt, a teaspoon of pepper and ground garlic. Mix everything.
Roll squid rings in this flour mixture.
Now you need to beat the egg in a separate bowl, pour breadcrumbs into another bowl. You can make your own crackers, or you can buy them ready-made in bags.
Dip several squid rings into the egg mixture.
At the same time, heat a frying pan with vegetable oil.
Dip the squid in breadcrumbs and place on a paper towel. Let them sit while the oil heats up in the frying pan.
