Minced meat and potato soup

If you have absolutely no time, but a hungry family is about to gather, prepare this hearty and quick soup. It couldn't be easier to prepare :)

Ingredients:

  • Minced meat - 200 grams
  • Potatoes - 2-3 pieces
  • Onion – 1 piece
  • Carrots – 1 piece
  • Tomato - 1-2 pieces
  • Garlic – 1-2 cloves
  • Vegetable oil - 2 tbsp. spoons
  • Salt - 1.5 teaspoons
  • Ground black pepper - 2 Pinches
  • Bay leaf – 1 piece

Number of servings: 4-5

How to cook:

We clean and grate the carrots. Peel and finely chop the onion. Peel the potatoes and cut them into small cubes. Fry the chopped onion in vegetable oil for 3-4 minutes. Add carrots to the onions, fry everything together for another 5 minutes. Pour about 2 liters of water into the pan and set the potatoes to cook. Let's add a little salt. Grind the tomatoes using a blender. You can use tomato paste instead of tomatoes, or you can cook the soup without this ingredient - it all depends on your desire. Add the minced meat to the pan, knead it well so that it does not form large pieces. Fry until done. Pour the chopped tomatoes into the frying pan with the minced meat, add salt and pepper. Let it simmer for about 5 minutes. During this time, the potatoes have already cooked, so add the contents of the frying pan to the pan with the potatoes. Let it simmer for 3 minutes. Taste for salt and add if necessary. Add chopped garlic and bay leaf to the soup. If you have greens, feel free to add them. Turn off the heat under the soup and let it brew for 5 minutes.

This dish is really good with a bowl of warm fluffy white rice, and we often argued over the savory gravy. This kind of humble homemade food (家常菜) is the reason I love to cook, because it tastes so homely and you can't ordering this kind of food on the street, at least not that often.

How to cook “Soup with minced meat and egg”

Heat the butter in a saucepan and place the minced meat in small pieces. When the minced meat is lightly fried, add finely chopped onion. Fry for 5 minutes, don’t forget to stir. Cut the bell pepper into thin strips and add to the pan. Add turmeric, tomato paste, ground pepper and a little salt there. Stir and fry for a minute and a half. Peel the potatoes and, if they are small, cut them into circles. Thickness - approximately 0.7 cm. If large, then cut the circles in half. Place the potatoes in the pan and mix everything. Pour boiling water, add salt, cook until the potatoes are ready. When the potatoes in the soup are ready, beat the eggs in a bowl. And in a thin stream, while stirring the soup, pour the eggs into the boiling soup. Remove the pan with the soup from the heat and let it brew for 10 minutes.

  6. Peel the tomatoes and cut into medium cubes. We wash the basil, dry it and chop it. Fry the tomatoes with the basil for 5 minutes;
  7. Fry the meatballs in vegetable oil and then add them to the boiling soup;
  8. 5 minutes before the end of the potato cooking time, add fried vegetables and tomato paste into the broth, which should first be diluted in warm water;
  9. Remove the first dish from the heat, cover with a lid, and let it brew for 15 minutes. After which it can be poured into cups and served.

Soup with minced meat and potatoes in a slow cooker

The soup in a slow cooker is not cooked, but simmered, which is why it turns out so rich, aromatic and tasty. It is advisable to cook the soup in meat or vegetable broth, but you can also use plain water.

Ingredients:

  • 400 gr. minced meat;
  • four potatoes;
  • some vermicelli;
  • carrot;
  • a pair of onions;
  • egg;
  • bay leaf;
  • salt, seasonings;
  • fresh herbs;
  • a little vegetable oil.

How to cook

Step 1:

Peel the onions and carrots and rinse thoroughly. Finely chop the onions and grate the carrots on a fine or medium grater.

Step 2:

Pour a couple of tablespoons of oil into the multicooker saucepan and set to frying. If it is not there, then the baking mode will do. Fry the onions and carrots for 10 minutes, stirring occasionally. Leave some of the onion for minced meat.

Step 3:

Wash the peeled potatoes and divide them into small cubes. Rinse with cold water several times to remove the starch.

Step 4:

Recipe for Tuscan minced meat soup:

Soup with minced chicken meatballs: the most delicious recipe

This recipe can be called dietary. There are only vegetables and light minced chicken, which you can prepare from breast fillet. But if you don’t have time to do this, then a store-bought one will do just fine. The meat balls turn out very tender and airy.

Ingredients for a 3 liter saucepan:

  • Minced chicken – 300 g
  • Potatoes – 3 pcs.
  • Carrots – 1 pc.
  • Onion – 1 pc.
  • Butter – 20 g
  • Greens - to taste
  • Salt - to taste
  • Black pepper - to taste
  • Black and allspice peas - 2-3 pieces each
  • Vegetable oil - for frying
  • Water – 2 l

Preparation:

1. Add salt, ground black pepper and butter to the prepared minced chicken. Take the butter out of the refrigerator in advance to soften it. Finely grate 1/3 of the onion and add to the meat. Mix everything very thoroughly.

To get even more tender minced meat, add 2-3 teaspoons of water and stir. Then beat it about 10 times on the bottom of the dish in which it lies.

2. Now form the meat balls. Wet your hands with cold water each time to prevent the meat from sticking to them. Place them with a short distance from each other.

3. Next, pour water into the pan, put it on the fire and bring to a boil. When the water boils, add bay leaves, peppercorns and allspice. Also add salt and stir. Then put the meatballs in there. When the water returns to a boil, skim off any foam that forms and cook for 10 minutes.

4. While they are cooking, cut the onion into small cubes. Cut the carrots into strips. Place the frying pan on the fire to heat up and pour vegetable oil into it. Add onions and carrots and fry until soft.

3. Peel the potatoes and cut into cubes. When the meatballs have cooked for the required amount of time, remove them from the pan and immediately add the potatoes. Bring the broth to a boil and cook for 10 minutes. After this time, return our meat balls back to the pan. Also put the roast there. After boiling, cook for another 5 minutes.

4. At the end of cooking, add chopped greens to the pan, stir, turn off the heat and cover with a lid. Let our soup brew for 15-20 minutes, after which you can serve.
