Ingredients:

To cook the soup we will prepare the following products:

  • 4 l. vegetable or meat broth,
  • 1 onion,
  • 1 carrot,
  • 1 Hungarian mild chili pepper,
  • 3 tbsp. spoons of vegetable or sunflower oil,
  • Salt to taste.
  • 900 grams of minced meat (pork and beef),
  • 1 bunch of cilantro (optional)
  • 3 onions,
  • 100 grams of rice,
  • 80 grams of ghee,
  • A little salt
  • A little ground black pepper.
  • 2 cups (per 200 ml) wheat flour,
  • 1 glass of water,
  • 0.5 teaspoons of salt.

How to cook soup with meatballs and dumplings:

  1. Peel the onion and cut into small cubes. Peel the carrots, cut into strips (you can use circles - to taste). Peel the chili pepper from seeds and membranes, cut into rings.
  2. Place the frying pan on the fire, add vegetable oil, heat it up. Fry the onion until translucent, then add the carrot sticks and fry for another three minutes.
  3. Add chili pepper and two tablespoons of broth to the vegetables in the frying pan and simmer covered. Once the vegetables are soft, remove the pan from the heat. Transfer the roasted vegetables to a bowl and set aside.
  4. Meatballs. Pour the rice into any convenient cup and rinse. Pour the washed rice into a glass of water, add a little salt, a small piece of butter and after boiling, cook under the lid for seven minutes.
  5. Peel the onions and cut into small cubes. Melt ghee in a frying pan and fry the onion cubes until transparent. Salt the onion a little.
  6. Place the cooked rice in the pan with the onions, stir, fry for two minutes and remove from heat. Cool.
  7. If you cook meatballs with herbs, rinse the cilantro well, dry it and chop it finely.
  8. Mix the minced meat with chopped cilantro, salt and ground black pepper in a large bowl, stir. Add the rice and onion mixture to the minced meat and mix again. Form meatballs from the resulting meat mass.
  9. Dumplings for soup. Sift the flour. Mix flour with salt, add water and knead into a tight dough. Leave the dough to rest for about 10-15 minutes.
  10. Divide the dough into small pieces and roll them into cylinders (each cylinder is about 3 cm thick). Cut the cylinders into pieces (the length of each piece is at least 3 cm).
  11. Place a pan of water on the fire, add a little salt, and bring to a boil. After boiling, boil the dough dumplings for five minutes.
  12. Soup. Heat the prepared soup broth, place the meatballs in it and boil them for 15 minutes. Then add the roasted vegetables to the soup, stir and cook for three minutes. Add the dumplings and remove the soup from the heat. Cover the saucepan with the soup and leave for 10-15 minutes.

Serve the meatball soup in serving bowls with sour cream.

Soup with dumplings and meatballs - step-by-step recipe with photos

Fill a saucepan (3 liter) 2/3 full with water. Mix minced meat with onion and spices.

Boil water and put meatballs in it. Cut the potatoes as desired.

Add bay leaf. Let it simmer for 5 minutes. Now let's add greenery and turn it off immediately.

Assalamu alaikum, Aliya! Yesterday I made dumplings. The broth base was shurpa. I think my dough was a little runny, the dumplings were scattered all over the shurpa :).not like you kept their shape. But I still liked it. (But my husband didn’t) it was delicious, I ate it with pleasure
