Recipes for delicious pita lasagna with meat and mushrooms

Posting in the group: Main courses

It is believed that the first version of lasagna was invented by the Greeks. They folded the strips of dough into layers and gave the dish the name "lagon". The original idea was picked up by the Etruscans from Bologna, Italy, adding red sauce, aged cheese and meat to the food composition. The culinary experiments did not end there, and among many new recipes, a “lazy” treat of Armenian lavash with mushrooms, minced meat, pasta or other fillings appeared.

The simplest recipe

The difference between “lazy” lasagna and its traditional version is the use of thin Armenian flatbreads instead of Italian pasta. However, such a substitution did not change the technology of preparing the dish, which will always remain recognizable among the variety of variations of this tasty and satisfying food invented around the world.

Preparation next.

What ingredients will you need?

The table shows the components required to complete the recipe:

List of productsQuantity
Butter and olive oil120 g and 50 ml respectively
garlic cloves3–4 pcs.
Minced meat (combined from pork, chicken fillet, beef, taken in equal proportions) homemade1 kg
Armenian lavash5–6 sheets
Bulb onions2 pcs.
Fresh or canned tomatoes without skin (pilati)15–16 pcs.
Whole milk500 ml
Parmesan cheese + Mozzarella300 g each
Premium flour120 g

Step-by-step cooking process

Sequence of stages of creating a dish:

  1. First you need to put the minced meat in a frying pan heated with oil. When preparing the mass, its types of meat and proportions can be changed according to personal tastes. All films and tendons must be cut off before chopping.
  2. The mass placed in the container must be fried along with peeled and diced onions over medium heat with continuous stirring. During the heat treatment of the product, you should knead any lumps that form with a fork or spatula, and also add pepper and salt to the composition.
  3. In the meantime, you have to coarsely grate the pre-washed tomatoes (fresh vegetables should be peeled), then pass the fruits through a fine sieve.
  4. After this, you need to add garlic cloves passed through a hand press to the resulting tomato, mix the combined components, then boil them for about 25–30 minutes. over low heat until a thick consistency forms.
  5. Now you need to prepare the Bechamel sauce. To do this, you need to fry the sifted flour in a saucepan.
  6. When the product acquires a golden hue, reduce the heating intensity to a minimum and add butter. Then, vigorously stirring the products with a whisk, pour in warm milk and continue preparing the sauce until a thick and homogeneous mass is obtained.

  7. At the next stage, you need to divide the sheets of pita bread into squares corresponding to the size of a wide refractory mold with kitchen scissors, moisten each part in bechamel sauce.
  8. Next, you need to grease the container with butter, place a thin layer on the bottom, lay out a portion of the tomato mixture, and distribute it over the entire surface of the pita bread.
  9. The next layer will be ½ the amount of minced meat, half the volume of bechamel sauce, shavings of finely grated Parmesan cheese.
  10. Then cover the assembled products with a second layer of dough, and then repeat placing the filling in the same order.
  11. The next sheet of pita bread should be greased with the remaining tomato, and mozzarella cut into thin slices should be distributed on top.
  12. The finished piece should be covered with foil and placed in an oven preheated to 180°C.

Lazy lasagna made from pita bread with minced meat (the recipe can be supplemented with fragrant Italian herbs in terms of the sauce) will be baked for 30 minutes.

After 15 min. From the beginning of baking, the paper must be removed so that the dish turns out appetizingly ruddy.

What can I add?

The cheeses suggested in the recipe can be replaced with other varieties - suluguni or Adyghe fermented milk products.

Such components melt perfectly in the oven, creating an amazingly golden, but not crispy, but pleasantly viscous and tender crust.

Serving rules, decoration

The prepared treat is traditionally served in portion form. To do this, you need to divide the pie into pieces of the desired size, place the pieces on wide flat plates, decorate them with fresh herbs, and place small containers with the desired type of sauce nearby. Cutting lasagna “in the heat of the moment” will be very problematic, so the food removed from the oven should be slightly cooled in order to preserve the layered beauty of the decorated components.

Lazy lavash lasagna - recipe with mushrooms.
Lazy lasagna made from pita bread with minced meat (the recipe can be slightly modified by adding wild mushrooms to the meat instead of champignons) will turn out especially juicy if the product is placed in a preheated oven. With this technology, the dish will not dry out and will remain juicy and soft.

Serving rules, decoration

Hot food should be cooled a little, divided into portions, sprinkled with fresh herbs, and presented to the table along with a vegetable salad.

Lasagna with pita bread at home

Recipe ingredients:

  • Thin Armenian lavash – 4 sheets
  • Meat (any variety) – 700 g
  • Tomatoes – 2 pieces
  • Onions – 1 piece
  • Garlic – 2 cloves
  • Eggs – 1 piece
  • Cheese – 200 g
  • Sour cream – 400 ml
  • Tomato paste – 1 tablespoon
  • Vegetable oil - for frying
  • Salt and pepper - to taste
  • Any herbs and spices - to taste

How to prepare the dish at home:

  1. Peel the onions and garlic, rinse and finely chop. Wash the tomato and cut into medium slices.
  2. Wash the meat (in my case pork), dry it with a paper towel and cut it into small pieces. You can also twist it through a meat grinder by installing a grid with large holes.
  3. Heat a frying pan with oil and add the meat. Over high heat, quickly fry it for about 3 minutes until it is covered with a golden brown crust, which will retain its juiciness.
  4. Add the onion to the pan, stir and fry over moderate heat for about 7-10 minutes.
  5. Then add tomato paste, tomatoes, garlic, herbs, salt, pepper and spices.
  6. Stir and simmer the ingredients over low heat under a closed lid for 5 minutes. The lasagna filling is ready.
  7. Now let's prepare the sour cream sauce. Pour sour cream into another clean and dry frying pan and add salt and spices.
  8. Beat in an egg and add 50 grams of cheese grated on a medium grater. Stir and heat over medium heat.
  9. Choose a suitable dish for baking lasagna; I use a round heat-resistant glass baking dish. Place the pita bread in it, cutting it to the desired size.
  10. Place the meat in the pan, spreading it over the entire area.
  11. Lubricate the meat with sour cream sauce and sprinkle with a little grated cheese.
  12. We will continue to layer all the pita breads with minced meat, sauce and cheese shavings, filling the entire form. Let the food stand for 10-15 minutes so that the layers of pita bread are well saturated with the sauce, otherwise it will become dry and brittle in the oven.
  13. Preheat the oven to 180 degrees and bake the dish for 15-20 minutes until golden brown.
  14. Serve the finished lavash lasagna hot, garnished with herbs. If you wish, you can top it with your favorite sauce.

Bon appetit!

With Bechamel sauce

The presented sauce from French cuisine is universal, able to go well with almost all protein products, vegetables and, of course, with pita bread as part of Italian lasagna.

What ingredients will you need?

To create the dish you will need:

  • olive oil - 50 ml;
  • minced meat - 400 g;
  • premium wheat flour - 120 g;
  • hard cheese - 300 g;
  • fresh tomatoes - 4 pcs.;
  • thin pita bread - 5–6 sheets;
  • bulbs - 2 pcs.;
  • heavy cream - 750 ml;
  • butter - 100 g;
  • seasonings - optional.

Step-by-step cooking process

Step-by-step preparation:

  1. The first step is to fry the minced meat on a hot plate with oil for about 5-7 minutes. In this case, it is necessary to constantly and actively mix the composition, breaking up all the lumps. The best taste of the filling and the finished dish depends on the quality of this work.

  2. Then you need to peel the onions, peel the tomatoes, finely chop the vegetables, and fry them in oil until translucent.
  3. After this, you need to prepare bechamel, for which you need to melt the butter in a saucepan, pour the sifted flour into it, then, quickly stirring the combined products, fry them over low heat until a cream-colored mass is obtained.
  4. Meanwhile, heat the cream in a separate bowl. The hotter they are, the less likely it is that lumps will form in the sauce.
  5. Next, you need to pour the cream into a frying pan with fried flour, add your favorite spices and a pinch of salt, then continue to actively and continuously mix the composition with a whisk until a homogeneous consistency is obtained. Cream can be replaced with infused meat broth or whole milk.
  6. Now you need to oil the baking dish, divide the pita bread into pieces, and cover the bottom with a cut sheet. This must be done in such a way that one side of the cake lies in the container, the other hangs from the dish.
  7. After this, you need to place the minced meat on a layer, level it over the surface of the sheet, pour about 4-5 tbsp. l. bechamel sauce, sprinkle the food with cheese shavings.
  8. The formed layer should be covered with hanging pita bread, then the onion-tomato mixture should be spread on it.
  9. Then you need to repeat the assembly of the components used in the proposed order.

The surface of the future dish should be poured with the remaining sauce, sprinkled with grated cheese, and then set aside for 30–40 minutes. into an oven heated to 200 °C.

Serving rules, decoration

Lazy lasagna, prepared from pita bread with minced meat according to the presented recipe, is recommended to be presented slightly cooled. The baked product must be cut into pieces measuring approximately 10x10 cm, sprinkle the food with shavings of Parmesan or other cheese, garnish with parsley sprigs, and serve on large serving plates. The dishes can be heated in advance to keep the treats hot.

Homemade lasagna made from Armenian lavash

  • 1-2 onions;
  • 300 gr. beef;
  • 300 gr. lean pork;

  • 2-4 tomatoes;
  • 2 garlic cloves;
  • A little vegetable oil;

  2. To prepare lasagna, it is better to use homemade minced meat rather than store-bought minced meat.
  3. Sprinkle the prepared ingredients with herbs and grind in a meat grinder.
  4. Wash the tomatoes, scald them with boiling water, and put them in ice water for a few seconds. Remove the skin and cut the pulp into medium pieces.
  5. In a deep frying pan, heat the vegetable oil, put the tomato pieces there, and simmer until soft.
  6. Then add the minced meat to the tomatoes, stir, simmer until the meat is cooked.
  7. Meanwhile, start preparing the bechamel sauce. To do this, melt the butter in a saucepan over low heat and add flour. Stir everything thoroughly until a homogeneous viscous composition is obtained. Then pour in the heated milk little by little, carefully stirring the bechamel with a whisk each time. Boil the bechamel until thick, stirring all the time to prevent lumps from forming. At the end, season the sauce with nutmeg and salt.
  8. Three hard cheeses on a fine grater. For a richer flavor, you can use two types of cheese, such as Gouda and Parmesan.
  9. Now let's start assembling the lasagna. Grease the mold with butter, place a large sheet of pita bread on the bottom so that it hangs over the edges.
  10. To prevent the lasagna from falling apart when cutting and serving, it is better to make a double bottom, spreading sauce between the layers.
  11. Place the filling in layers: fried minced meat, sauce and cheese.
  12. Cover each layer of filling with a piece of pita bread, cut strictly to the size of the mold. There must be at least three layers.
  13. We wrap the hanging edges of the large pita bread inside and pour the remaining sauce over everything. To level the top of the dish, place another sheet of pita bread, cut to size, on top of the folded edges. Lubricate everything with bechamel and generously sprinkle with cheese.
  14. Place everything in an oven preheated to 200 degrees for 30-40 minutes.
  15. Take the browned lasagna out of the oven, cut into portions, and serve as a main hot dish.

Useful tips and tricks

Lazy lasagna made from pita bread with minced meat, the recipe of which is slightly different from the classic version, will always turn out tasty, elegant and appetizing if you take into account the following recommendations:

  • The ideal basis for the presented dish is thin Armenian flatbread. Lavash, which contains water, table salt and flour, is of gastronomic value. Yeast may be included in the mass, but the shelf life of such a product will be significantly reduced;

  • It is recommended to pay special attention to the integrity of the packaging material with the presence of small holes in it for air ventilation, which prevents the appearance of mold on the sheets;
  • separated parts of thin sheets can be briefly soaked in sauce (bechamel, bolognese, tomato, cream, other compositions), and only then used for their intended purpose;
  • It is advisable to bake lasagna in a square pan made of ceramic or heat-resistant glass. A thin-walled deck will not work, as the treat will turn out dry;
  • when creating a sauce - an essential component of Italian food - it is better to replace milk with cream, which will make the consistency of the composition thicker, and the finished dish - as satisfying and nutritious as possible;
  • Fresh herbs - rosemary, dill, tarragon, thyme, mint, and other aromatic herbs will help to get a particularly refreshing taste of lasagna;
  • To make the minced meat more juicy and easy to spread on sheets of pita bread, add sunflower oil, tomato dressing or sour cream to the ground mass. The quantity of these products must be adjusted depending on the fat content of the meat taken;
  • The baked product should not burn under any circumstances. It is almost impossible to correct such an oversight, therefore the workpiece should be covered with a sheet of foil before placing it in the oven;
  • When assembling lasagna, you need to lay out the pita bread in a cross-shaped order in relation to the previous layer. This technique will make the “structure” more durable, maintain its integrity when cutting portions and serving the treat in even and beautiful pieces;
  • the meat filling will be especially tasty if it includes chicken fillet, beef and pork, taken in equal proportions;
  • Cheeses are an essential component when creating the perfect treat. In the classic version, “Mozzarella” is recognized as such. However, soft, creamy varieties of fermented milk product, with a pungent taste and sharp aroma, are quite suitable.

Lazy lasagna, prepared from pita bread and minced meat according to any of the presented recipes, will become even more tender, juicy and tasty if you let the dish steep for 1–1.5 hours before baking.
