This hearty first course is not only quick and easy to prepare, but also very healthy thanks to the fresh vegetables in the composition and, of course, it is very tasty!

Let's try to prepare okroshka with sour cream according to a proven classic recipe.

Ingredients

  • Sour cream – 200 ml + –
  • Water – 2 l + –
  • Chicken egg - 2-3 pcs. + –
  • Potatoes - 2 pcs. + –
  • Cucumber - 2-3 pcs. + –
  • Green onions – 1/2 bunch + –
  • Dill – 1/2 bunch + –
  • Parsley – 1/2 bunch + –
  • Salt - 1/2 tsp. + –
  • Black pepper - on the tip of a knife + –
  • Sausage – 250 g + –
  • Radishes – 1 bunch + –

How to cook okroshka

  1. Boil hard-boiled eggs and jacket potatoes. They can be put together - it's convenient. Drain the water and let it cool completely.
  • We boil water in a kettle or put it in a saucepan; it should be boiled and not hot.
  • While it cools, prepare the remaining ingredients: peel and cut the potatoes into cubes, wash and chop the radishes - if desired, you can grate them on a coarse grater, and also finely chop the boiled sausage.
  • It is better to try the cucumber first - if the peel is bitter, it should also be removed. Finely chop the pulp.
  • Peel and chop the eggs with a fork or knife, or cut them into quarters lengthwise and place them on each plate separately when serving.

Depending on what kind of sour cream we use, we cool the water either completely to room temperature, or leave it warm enough. If our sour cream is rustic and fatty - “it costs a spoon”, the water may even be bitter, because in the cold such a product simply will not dissolve.

6. Stir the sour cream completely, using a mixer if necessary, and let the resulting broth cool completely in the refrigerator.

7. Place all the ingredients in a tureen or pan and pour in sour cream dissolved in water. Salt and pepper.

8. Finely chop the greens, sprinkle the okroshka with it and put it back in the refrigerator - the first one should be cold. After 25 - 30 minutes you can serve. Bon appetit!

Replacing the sausage

It is better to take lean sausage or at least without lard, otherwise in a cold soup it will be heavy and not very tasty. If necessary, it can be replaced with sausages or sausages, but also without excess fat.

If you are one of those who prefer meat to factory products, we recommend adding boiled lean veal or beef to okroshka. 250 - 300 g is enough for the indicated amount. Let the finished meat cool and chop finely.

Chicken or turkey - smoked or boiled - are also suitable. In the latter case, it is better to prefer fillet, such meat is more tender.

Add sourness

Sometimes we can add citric acid or a little freshly squeezed juice of this citrus to sour cream okroshka to make the taste more summery, especially if the sour cream itself is not sour.

We do this at the stage of dissolving it in water - add literally a few grains or pour in 1 teaspoon of lemon juice.

Also, to make the okroshka more spicy, add a little mustard to the sour cream - 2 - 3 tsp is enough. Make sure it is mixed well.

The classic recipe can be slightly modified by preparing okroshka with the addition of mayonnaise. Using all the same ingredients in the same quantities as indicated above, we cut the amount of sour cream by 2 times, replacing it with mayonnaise.

You can use a store-bought one, or you can make it yourself - homemade mayonnaise will not only be much tastier, but also healthier.

Place the chopped ingredients in a deep bowl, where the okroshka will remain, mix them well with the addition of mayonnaise and sour cream. And then, depending on which consistency of the first is preferable, add cold water little by little, portionwise.
