    I made today’s pies with frozen apricots, but depending on the season, you can also use fresh fruit, not just apricots, for example, cherries, currants, raspberries. Or you can make unsweetened pies - with potatoes, cabbage... If you use a fruity, sweet filling, then before serving the pies can be dusted with powdered sugar.

    Recipe for pies with cabbage

    For the dough it is: 700 g white flour; 3-4 tbsp. spoons of vegetable oil; teaspoon of granulated sugar and the same amount of salt; 50 g pressed yeast; half a liter of water. For the filling: a kilogram of cabbage; 30 g sl. oils; two onions; 2 eggs; salt and black pepper to taste.

    It is better to knead yeast dough with live yeast, so you can make pies with a delicate structure. The filling can be anything, in this case it is white cabbage stewed in butter.

    Preparation:

    1. Start preparing the fried yeast pies with the filling. To do this, chop the cabbage, pour boiling water over it and keep on medium heat for 5 minutes.
    2. Cut the onion into thin half rings and fry in butter until it browns.
    3. Place the steamed cabbage in a colander and wait until all the liquid has drained.
    4. Squeeze out additional water with your hands, and place the cabbage in a frying pan with fried onions.
    5. Simmer the filling for five minutes under a closed lid, then add salt and season with ground pepper.
    6. Remove the pan from the stove.
    7. Add boiled eggs, chopped into small cubes, to the filling, mix so that all ingredients are evenly distributed.
    8. Knead the yeast dough. Dissolve yeast, vegetable oil and sugar in 250 ml of warm water.
    9. Leave the resulting mixture aside for 5 minutes, and in the meantime, sift the flour and boil 250 ml of water.
    10. Pour half the flour into the yeast and mix the dough thoroughly with a spatula.
    11. Pour hot water into the bowl in a stream, continuing to make circular movements with the spatula.
    12. Add the rest of the flour and knead into an elastic dough. If you think there is not enough flour, add a few more spoons, the dough should not stick to your palms.
    13. Roll the dough into a “sausage” and divide into 24-25 equal parts (see photo).
    14. Form each into a circle and place the cabbage filling in the center.
    15. Make an oblong pie, trying to pinch the edges tightly.
    16. Fry the yeast pies in boiling oil on both sides and serve hot.

    Recipe for kefir pies with mashed potatoes, fried in a frying pan

    Fried pies are perfect for a snack when lunch is still far away, and breakfast was left behind a few hours ago. Preparing the filling will not take much time, and you can handle the dough quickly.

    So, in order to knead the dough, you will need:

    half a kilogram of fine flour; 2 eggs; 50 ml vegetable oil; dessert spoon of sugar; a teaspoon of salt; half a liter package of kefir; 1.5 teaspoons of soda.

    For the filling, boil the potatoes and mash them into a soft puree. If desired, you can add fried onions and mushrooms, minced liver or meat, and warm milk.

    We start preparing the fried pies with the filling; it must cool before placing it on the dough pieces. Boil several peeled potato tubers in salted boiling water.

    Mash them with a potato masher and add a little broth or milk if necessary. Meat, mushrooms or offal will help add additional color to the filling. Set aside the filling and in the meantime knead the dough:

    1. Sift the flour into a deep bowl.
    2. In a separate bowl, mix the remaining ingredients. Add the soda last, quenching it with 15 ml of table vinegar.
    3. Mix the dough first with a spatula, and when you see that the mass has become stiff, knead vigorously with your hands.
    4. Divide the dough into pieces, stretch each piece with your hands to form a round cake.
    5. Place the filling, fold the edges of the flatbread towards the center and seal.
    6. Lightly flour the dough and roll it out flat.
    7. Fry the pies in a frying pan, first on one side, then on the other, until the surface is browned.

    When choosing a frying pan for frying pies, attention is paid to its depth and the thickness of the bottom. You have to pour a sufficient amount of oil, so it is better to take a deep dish, reminiscent of a stewpan. The bottom should be thick. It's good if there is a non-stick coating. The shape of the dishes does not matter at all, as does the presence of a handle or its color.

    To cook pies with or without filling, a lot of oil is used in a frying pan. There are special requirements for the selection and use of this product:

    • odorless oil is taken;
    • you can combine a plant product with an animal product, then the pies will be juicy, but more fatty;
    • You can determine the readiness of the oil for frying in a simple way: a drop of water drops to the bottom, if it has evaporated, it’s time to lay out the preparations;
    • the appearance of foam indicates the low quality of the selected product; to reduce its amount, add a pinch of salt;
    • As the pies fry, the oil heats up more and burns, so it must be changed to avoid bitterness;
    • the pies will be more tender if you combine vegetable oil with butter in a ratio of 3:1;
    • adding a spoonful of vodka to the hot oil will make the baked goods less greasy, the excess fat will drain better when they are taken out on a plate.

    Test preparation

    The main thing is to decide in advance what recipe the pies will be prepared in a frying pan. It can be different, both in the composition of the products and in the preparation technology. More often, homemade cakes are prepared from dough:

    You can replace baking powder with baking soda, and it is not at all necessary to extinguish it. As you know, kefir contains enough acid so that the soda does its job and is not felt in the finished baked goods.

    Take: 2 eggs; half a liter of kefir; a teaspoon of salt and sugar; two thirds of a teaspoon of soda; 50 ml vegetable oil; flour - enough to knead an elastic dough.

    Prepare the filling from boiled potatoes. Add onions, minced meat or fried mushrooms as desired.

    Preparation:

    1. Heat kefir to 30-35 degrees.
    2. Add baking soda and stir the mixture well until air bubbles appear.
    3. Separately, mash the eggs with sugar and salt.
    4. Combine eggs with kefir, add sifted flour.
    5. Let the dough rest for 15-20 minutes and then start shaping the baked goods.

    Sour cream dough

    Fried pies made with sour cream last the best and longest shelf life. According to the recipe you need to use: 150 g of low-fat sour cream, 5 g of dry yeast, 450 g of flour, 250 g of flour, 270 ml of water, 10 g of sugar, a pinch of fine salt.

    1. Half of the carefully sifted flour is mixed with sugar, salt and quick yeast, poured with warm water and mixed.
    2. The mass should stand in a warm place for 15-17 minutes until bubbles appear on its surface.
    3. After the specified time, sour cream and the remaining flour are added to the dough. As a result, it should become soft, but not stick to your hands.
    4. The pie dough, covered with film, is sent to a warm place until the first rise (the mass will approximately double).

    You need to dip the resulting pies into hot oil, first shaking off excess flour from them.

    Recipe for original meat pies

    The hearty double filling will make fried pies your favorite dish. When treating your guests to them, do not forget to serve a cup of hot tea.

    Ingredients for the dough: 0.6 kg flour; 250 ml of boiling water and the same amount of cold water; one teaspoon each of salt and granulated sugar; 3 tbsp. spoons of vegetable oil; 50 g of pressed yeast (you can take 1 package of dry). The filling consists of: 100 g of Dutch cheese; 100 g feta cheese; 2 tbsp. spoons of low-fat sour cream; 250 g minced meat; 4 champignons; salt, spices, dried garlic to taste.

    Step-by-step cooking recipe:

    1. Wash and dry the mushrooms, blotting them with a paper towel.
    2. Cut into small cubes and place in a dry frying pan.
    3. When excess moisture has evaporated, add vegetable oil and fry the champignons along with chopped onion until golden brown.
    4. Add minced meat made from several types of meat. Keep on fire until cooked, then add salt and seasonings.
    5. Remove the frying pan with the filling from the heat and cool.
    6. Grate the Dutch cheese and crumble the cheese with a fork. Mix the ingredients together and with sour cream. If necessary, add salt to the filling, but taste it first.
    7. Let the filling brew and soak, and in the meantime knead the dough. Dissolve yeast in warm water, add sugar and vegetable oil.
    8. Sift the flour, mix with salt.
    9. After 5 minutes, pour in the yeast and stir.
    10. Boil water and add to the dough in a thin stream.

    13. Place the minced meat in portions and add the cheese mixture on top.
    14. Roll out the second half of the dough on the water, cover the filling with a layer, press lightly to release the air.
    15. Using a glass, cut out the blanks, trying to get the filling in the center.
    16. Make the pies around the edges and fry them in a frying pan until golden brown (as in the photo).

    To knead yeast choux dough, you need to follow the technology that I described in detail below. In the meantime, check out the list of products:

    4 tbsp. spoons of sunflower oil; 600 g flour; 20 g granulated sugar; a teaspoon of salt; 11 gram package of dry yeast; 460 ml water.

    For the filling, use mashed potatoes with fried onions, or any other product that you like best.

    1. Pour the water in half into two containers.
    2. Heat one part to a temperature of 30 degrees and dilute the yeast and sugar there.
    3. Boil the second one.
    4. Sift the flour, mix with salt and yeast dissolved in water.
    5. Add vegetable oil, then pour in boiling water.
    6. Knead the dough. If the dough is sticky, add more flour.
    7. Let the mass stand on the table for 10-15 minutes so that it becomes more elastic and pliable, and then form fried pies with filling.

    Liver, lungs and heart are products that require a special approach. If you follow the instructions, you can make excellent fried pies.

    Take: one and a half kilograms of offal; a package of yeast dough weighing one kilogram; half a glass of rice; onion; salt, spices to taste.

    1. Boil the offal until tender in salted water.
