Appetizing and aromatic apple rolls will bring the whole family together for tea. You will definitely love my recipe for apple rolls.
Ingredients
In order to knead the dough for the future apple roll, you need to prepare:
- 1 cup whey
- 3 cups sifted flour a couple of times
- 1 package of dry yeast
- 50 g butter
- 50 ml vegetable oil
- 0.5 tsp salt
- 1 tbsp. Sahara
- 4-5 sweet and sour apples
- 2-3 tbsp. Sahara
- pinch of cinnamon (optional)

Cooking method
- Turn on the oven to preheat to 190 degrees. Wash the apples, cut them and remove the core.
Grate the pulp on a coarse grater, squeeze and pour out the excess juice. Squeeze the juice from half a lemon and add to the apples along with sugar and ground cinnamon. Stir.
Line a baking tray with baking paper and place the apples on it in an even layer.
Using a mixer, thoroughly beat the eggs with sugar until thick and white. Carefully add the sifted flour and mix with a spatula until smooth.
Place the biscuit dough on top of the apple filling and smooth it out with a spatula so that it completely covers the filling.
Place the baking sheet in the middle of the oven and bake the sponge cake for about 15 minutes. Once the top turns golden, remove the biscuit.
Spread a clean and dry towel on the table. Turn the sponge cake over on a towel so that the apple filling is on top. There are two ways to do this. First: carefully take the baking paper by the edges on both sides and turn it over onto a towel that lies on a flat surface, with the apple layer facing up. Second: cover the sheet with the sponge cake with a towel, place a cutting board to size or another sheet on top and turn it over. Using a towel, drag the biscuit onto a flat surface (table). Then carefully remove the baking paper.
Using a towel, roll the sponge layer into a tight roll. To do this, fold one side of the sponge cake towards the center. While the cake is hot, it is flexible and pliable. The towel is needed to lift the edge and direct it towards the middle. Trim the edges with a knife. Wrap the roll in cling film and let it cool.
Sprinkle the finished roll with powdered sugar and decorate with berries or fruits.

I made this roll five times over the New Year holidays, both for guests and for the home table. Very quick and simple, yet tasty and effective! The roll is especially good if you add cream, vanilla custard sauce or top it with salted caramel and serve with whipped cream!
The apple filling is baked here at the same time as the biscuit dough, and my friend said: this is your “charlotte roll”. Of course, there are similarities in the cooking method, but the roll is much more tender, juicier and more interesting than the well-known pie. Be sure to try it! It's simple!
Apple roll - recipe step by step
- First you need to slightly warm up the serum - let's say, to body temperature.
- Combine it with the required amount of salt and sugar, add dry yeast. Now mix well.
- It's time to add vegetable and previously melted and cooled butter.
- Mix everything vigorously again.
- All that remains is to gradually introduce oxygenated flour - usually it takes up to 3 glasses.
- Knead until our dough becomes elastic and soft, and does not stick to your hands.
- Now you need to leave it alone and cover with a towel - the dough should rise.
- But you and I won’t be bored – we’ll get busy preparing the filling. Yes, yes - we will prepare our apple filling.
- To do this, wash, peel and finely chop (preferably into cubes) the required number of apples.
- Then take a dry frying pan, heat it over medium heat and lay out the chopped fruits - begin to simmer them, stirring lightly.
- After 4-5 minutes, they will begin to become transparent and slightly decrease in size. When all the liquid has gone, you can add sugar. More or less - decide for yourself. Now you need to mix everything thoroughly, heat the apples together with the sugar, sort of caramelize them, and then leave them to cool. How delicious it is - the main thing is to remove the frying pan away from your household!
- So, the dough has already risen (we even kneaded it a couple of times), the apple filling has cooled down - you can start forming the rolls.
- Divide the dough into 3 (or more) parts (the size of future rolls depends on this) and roll each into a layer.
- Place some of the filling on one side of the rolled out dough and lightly sprinkle it with flour (and in the end I couldn’t resist and added a little cinnamon to one roll).
- Then we roll everything into a roll, tightly pinch the edges and place it on a baking sheet (or in a mold) lined with paper, seam side down. You can make several cuts on top for beauty.
- Now let's wait and let the rolls rise a little.
- Then, for added beauty, we brush them with beaten egg and finally bake them in a slightly heated oven - it will take about half an hour at 190 degrees (I baked each roll separately).
- Baking with apple filling prepared in this way is very different from the usual one - it is much tastier and more interesting. So, if possible, I suggest you all make sure of this and prepare an apple roll from yeast dough. And if you don’t have fresh apples, then you can use apple jam instead.

Puff pastry apple roll
Ingredients:
- puff pastry without yeast - 2 sheets;
- raisins – 0.5 tbsp;
- apples – 2 pcs.;
- walnuts – 0.5 tbsp.;
- cognac – 30 ml;
- ground cinnamon - a pinch;
- nutmeg - a pinch;
- semolina – 2 tbsp. spoons;
- lemon – 0.5 pcs.
Preparation
Steam the raisins with boiling water in advance and add alcohol. We wash the apples, cut them into pieces, constantly sprinkling them with lemon juice and mix them with raisins. Then add sugar, grated lemon zest, ground cinnamon and nutmeg. Mix everything well and let the finished filling sit for 15 minutes.
Meanwhile, chop the walnuts finely and add them to the fruit mixture. Then we connect 2 sheets of puff pastry without yeast and roll it out in one direction. Now lightly sprinkle the surface with semolina, spread the filling evenly, level it with a spoon and roll the dough into a roll. We make punctures along its entire length with a fork to allow steam to escape during baking, and pinch the edges tightly. Bake the puff roll with apples at 180 degrees for 30 minutes. Serve the apple pie slightly cooled with vanilla ice cream or whipped cream.
Lavash roll with apples in the oven
Ingredients:
- Armenian thin lavash – 1 pc.;
- butter – 30 g;
- apples – 3 pcs.;
- sugar – 3 tbsp. spoons;
- powdered sugar – 2 tbsp. spoons;
- raisins – 100 g;
- ground cinnamon - a pinch.
Preparation
We wash the apples, cut off the peel and cut the fruit into small cubes. Pour hot water over the raisins and leave to stand and swell for about 1 hour. Then carefully drain the water and combine with the apples. Pour some ground cinnamon into this mixture, add sugar to taste and stir.
Now take a thin sheet of Armenian lavash, grease it with butter, spread the fruit filling in an even layer and roll it tightly into a roll. Next, carefully transfer it to a baking sheet and place it in an oven preheated to 200 degrees. Bake the roll with apples and cinnamon for 10 minutes, then carefully remove, cool slightly, cut into small pieces, arrange beautifully on a platter, sprinkle with powdered sugar and serve.
Roll with apples made from yeast dough
Ingredients:
For the test:
- milk – 500 ml;
- yeast – 50 g;
- sugar – 1 tbsp;
- margarine – 70 g;
- flour – 1 kg.
For filling:
- apples;
- ground cinnamon - to taste.
Preparation
Melt the margarine in a saucepan over low heat, pour in the milk and add sugar to taste. Then remove the mixture from the stove, gradually pour in the milk, add the yeast and add the pre-sifted flour in portions. Then knead a homogeneous dough that does not stick to your hands, roll it into a ball and put it in a warm place for 1.5 hours, covering it with a clean towel on top.
Sprinkle the table with flour, lay out the risen dough, knead it and divide it into 3 equal parts. Roll out each part into a rectangle shape. We wash the apples, remove the stems and seeds, cut them into small cubes and spread them on the dough in an even layer. Sprinkle ground cinnamon on top, roll into rolls and place them on a baking sheet at a short distance from each other. Then bake the apple rolls for 15 minutes in a hot oven until cooked. After this, carefully remove them, cool, grease with sugar syrup, sprinkle with powdered sugar if desired, cut into portions and serve.
