During my childhood, Soviet bakeries sold wonderful buns sprinkled with sweet crumbs. I remembered them when I became a mother myself. Now I bake similar buns for my children.
They are about a hundred times tastier than store-bought ones. With milk and juices they go for a sweet soul. Today I will tell you how to make the most delicious buns with jam at home. Let's cook.
Kitchen appliances:
deep bowl for preparing dough; cling film; bowl for making streusel; shallow plate; 2 baking sheets; oven, fine sieve.
Cooking sequence
- Let's start by preparing the dough. Pour milk at room temperature (or lukewarm) into a deep bowl. Add a tablespoon of sugar, a tablespoon of yeast, three tablespoons of flour. Mix everything well and set aside until the yeast activates (about 10 minutes).
- Melt the creamy margarine in the microwave.
- When the yeast cap with bubbles rises on the dough, add a pinch of salt, vanillin, two tablespoons of sugar, 50 grams of melted butter margarine, a tablespoon of vegetable oil and an egg. Mix everything well. Gradually add half a kilogram of flour and knead the dough.
- Knead the dough with your hands for about 5 minutes. Your dough should be smooth (thorough kneading will improve the quality and flavor of the finished bun dough). Roll the dough into a ball, place in a bowl, cover with cling film and place the bowl with the dough in a warm place until it rises well. The rising time of the dough depends on the temperature of the place where it rises and on the activity of the yeast (on average about an hour and a half).
- While the dough is rising, prepare the streusel. It's such a delicious crumb to sprinkle on the top of the bun. Mash soft butter in a bowl with a fork, add sugar and mix it with butter, add flour and rub into crumbs with your hands. Transfer the finished streusel to a plate and put it in the refrigerator.
- Check how your dough is doing. If it has risen well and doubled in volume, proceed to cutting the buns. Grease a clean work surface and your hands with vegetable oil to prevent the dough from sticking.
- Place the dough on the table and divide into 10 equal pieces.
- Use your fingers to form each piece of dough into a ball. Make ten identical neat balls and leave them for a while so that the dough “rests” a little.
- While the dough is resting, prepare the egg scramble. Beat the egg into a shallow bowl, add a little water and beat a little with a whisk or fork.
- Remove the bowl of streusel from the refrigerator, place it on the table next to the mash, grease two baking sheets with vegetable oil and continue cutting the buns.
- Take two pieces of dough (do this with both hands simultaneously, for speed), roll them out at the same time to make oblong cakes the size of a saucer. Place a teaspoon of jam in the middle of each cake. Fold the tortillas so that one half covers the other and press the edges together. Dip each bun on one side only, first in the mash, then in the streusel. Place the buns on the baking sheet with the other (“clean”) side. Make all ten buns in this manner. Place the buns slightly apart from each other (they will still rise). I ended up with two baking sheets with buns, five on each. Leave the buns for half an hour to let them rise.
- After 15 minutes, turn on the oven to preheat to 180°C.
- Place the buns in the preheated oven and bake for 10-15 minutes
. The buns bake quickly. In 10 minutes, your kitchen will be filled with the blissful aroma of baking. - Remove the finished, golden brown buns from the oven and cover with a kitchen towel to let them steam a little. When your fragrant and beautiful buns with jam have cooled a little, sprinkle them with powdered sugar.
Serve with a cup of tea, warm milk, fruit juice or yoghurt. My kids also often ask to cook and. Read here how to cook them correctly, quickly and tasty.
Step by step
- I want to offer you a very simple, but at the same time very successful option for preparing pies with jam. The filling can also be supplemented with nuts, for example, if desired.
- Do the dough first. First, make a dough by dissolving yeast and sugar in a small amount of warm water. Add a spoonful of flour, mix everything and leave for a while.
- Add the beaten egg, melted butter and a pinch of salt to the dough.
- Sift flour with salt. Add in small portions while kneading the dough. Don't make it too steep; you can add flour a little later if necessary. Leave the dough under a clean towel for 1-1.5 hours.
- When the dough has risen properly, divide it into small balls and roll each of them out.
- Prepare thick jam to taste. Place the filling in the center of each piece of dough: there can be more or less of it as you like.
- Carefully seal the edges towards the center, leaving a small opening.
- Place on a greased baking sheet.
- For a more golden brown crust, brush pies with jam at home with whipped yolk.
- Place in a preheated oven and bake until done.

Grandma’s traditional treat is delicious buns with jam. Some people call them “pies” or “krutenki”, but the main thing is that these pastries are very simple to prepare. You can make the first test exactly as the recipe says, and only then start experimenting, in particular with the design of the buns.
Most often they are made with apple jam; basically, these are yeast baked goods. You can also make pies from puff pastry, but this pie differs from the classic recipe.
Its calorie content is high, but the number of calories can be reduced by using not very sweet jam and replacing some ingredients. You can also make lean buns, but the most delicious ones are still the same ones that my grandmother made in childhood.

- Now the balls need to be flattened, done carefully so that the future buns are identical and even in appearance.
- Place a spoonful of jam into the hole in the bun, which can be made with a glass.
- Place the baking sheet in the oven. Attention! There is no need to preheat the ovens; the buns will rise better in the oven, which begins to warm up.

How to wrap buns with jam: methods
There are several ways to shape buns.
You can make roses from dough
:
- Cut the “sausage” of dough into pieces, make a small piece almost flat, divide with a knife into 4 petals, without cutting to the center.
- Place jam in the middle, then take one petal and wrap it around the jam.
- Then the next petal comes, and the remaining two move as if in a spiral.
- It will turn out like jam in a cup of dough, each petal of the workpiece touches the previous one.
You can make “ears” in the blank, which then lie crosswise, and inside the bun there will be jam. Or you can wrap it in the shape of a heart; the jam does not have to peek out from the bun.
By the way, buns fried in a frying pan are also an option, however, they will not turn out as light as fluff, which can be said about pies from the oven.
Buns with jam are a recipe for all times and for all occasions, the filling can be anything, but light, tender, not cloying jam is always the leader in culinary preferences. Serve the dish with aromatic tea or not very strong coffee.
Bon appetit!

List of ingredients
Today we will master a recipe that will allow us to prepare delicious yeast buns filled with homemade or store-bought jam in just 15 minutes (plus 2 hours for rising the dough). You can also make them from puff pastry, which will save a lot of time, especially if you use ready-made frozen dough.
You will need the following ingredients:
- maximum half a kilogram of white wheat flour;
- 1 packet of dry active yeast (about 7 grams);
- two eggs + one yolk for decoration;
- 60-70 grams of sugar;
- two tablespoons of odorless sunflower oil (or melted butter, needed to lubricate the work surface);
- 250 milliliters of fresh or sour milk;
- 70 grams of melted margarine;
- a little salt;
- 200 grams of any jam.
Instead of filling delicious buns with jam, you can also use seedless jam, a mixture of nuts and honey, simply sprinkle the dough with cinnamon and sugar, and also take slices of fresh fruit or seasonal berries. For puff pastry, you need to use a dry filling, so when using jam or fruit, you need to remove (decant through a sieve) excess juice.
How to make butter buns without the jam leaking out
It's no secret that even the most responsible, attentive and creative people can encounter various problems in the kitchen during the cooking process. One of them is the problem of leaking filling. A very common point, I think. What should you do to forget about it forever and be content with juicy and tasty food? Now we will discuss this with you.
A small digression about the filling, how to fix this problem.
Every housewife has her own secrets, let's look at a few of them:
1. Perhaps the easiest way to solve this problem is to add less filling. Properly prepared baked goods will not lose their taste. However, not everyone will like this method, because the filling in pies or buns is the basis of the basics... I think everyone will agree with me.
2. The second option is still suitable for those who like it sweeter. It is necessary to add a component to the filling, a product (semolina), which will take all the moisture and make it much thicker. Because if jam, marmalade or any other filling is too liquid, then in any case they will flow out of our baked goods.
We will need:
- flour (4.5 cups)
- sugar (2 tbsp)
- compressed yeast (50 g)
- water (1.5 cups)
- vegetable oil (0.5 cup)
- vanillin
- salt (0.5 tsp)
Stages:
1. Take out any deep plate and fill it with warm water. Throw in yeast, then sugar. And finally, flour (1 tbsp). Mix thoroughly. Leave the prepared mixture for 15 minutes.
2. After the required time has passed, add the remaining ingredients into the mixture. Add vanillin and vegetable oil. Also add flour.
Cooking method
Since yeast dough requires rising, let’s start preparing the buns according to the recipe by kneading the ingredients:
- Melt margarine or butter in the microwave or on the stove, let it cool to 35-40 degrees.
- Pour a packet of yeast into the milk, stir thoroughly until all the crystals dissolve.
- Add a portion of sugar, previously beaten eggs with a fork, a little salt, melted margarine.
- Mix everything well with a whisk, you can even use a mixer while the dough is liquid.
- To save time, sift the flour directly into the liquid part using a sieve. Place a maximum of 2 tablespoons, whisk the mixture thoroughly after each portion of flour.
- The secret to fluffy yeast dough lies in high-quality hand kneading. Therefore, sprinkle a table or large board with a small amount of flour, or better yet, grease it with vegetable oil. Place a lump of dough, knead it thoroughly with your hands, making an envelope each time, that is, folding the edges of the dough inward towards the center.
- After 15 minutes of kneading, place the lump of dough back into the bowl and cover it with a towel.
- After 1 hour, press the dough with your hands to release the air.
- After another 1 hour, when it has risen, place it on a greased table and start preparing the buns.
- Divide the dough into several parts and roll each part into a circle. To make it even, you can cut it along the plate or lid.
- Place a small tablespoon of jam (or other filling, always sweet) on the wide part of the triangle, and carefully roll up a kind of croissant. Be careful not to let the filling come out, otherwise it may burn.
- Thus, twist all the buns. Beat one yolk with a fork, you can add one teaspoon of milk. Now, using a brush, brush the entire surface of your “snails” and place them on parchment lined on a baking sheet.
- Preheat the oven for 15 minutes at 190 degrees. During this time, the buns will rise on a baking sheet, then transfer them to the oven and close the door tightly.
- After 15 minutes, the buns will be ready; you can additionally sprinkle each with powdered sugar through a strainer for beauty.
If you use the recipe for preparing the dough, you will need about half an hour more time. Such butter buns with jam exude an incredible aroma, have a flaky consistency due to rolling into a roll, and look very appetizing.
No matter how spoiled a person is with delicious foods, no matter how much of a gourmet he is, everyone still has food that they have loved since childhood. For some it is semolina porridge, for others it is cottage cheese casserole, and for others their favorite treat is buns with jam. These buns are deliciously prepared by grandmothers when feeding their grandchildren, and that’s why they are amazingly good. But even if you are still young and don’t have grandchildren, following these recipes, your buns will turn out at least as good!
Fried pies with jam
But those who don’t like to stand at the stove in the heat can please their household with pies according to the second recipe.
Ingredients and preparation
Preparation will take
- 3 hours.
Number of servings
: 12 pies.
To prepare you will need:
- one deep bowl;
- two small deep plates;
- whisk;
To prepare pie with fish, we will need seven hundred grams of yeast dough (unsweetened and rich), two hundred and eighty grams of boiled salmon, four boiled eggs, a couple of sprigs of dill, ground black pepper, salt, thirty grams of butter.
And now about the method of preparing pie. Divide the yeast dough into equal pieces, roll each into a ball and place on a greased board in a row. Boil the eggs, peel them and chop them finely. Now mix the eggs, salmon, chopped dill, melted butter, pepper and salt. Roll out the dough using a wooden rolling pin, place the filling in the center with a small spoon, pinch the edges and leave the middle slightly open. Using the same pattern, we make the rest of the pies. Place the pies on a greased baking sheet and let rise slightly. If you want the pies to be more beautiful, brush them with beaten egg or milk and sugar. Bake for twenty to twenty-five minutes at a temperature of two hundred degrees.
Buns with jam - preparing food and utensils
If you are planning to make such buns, then carefully consider the following rules:
The jam can be anything, but not liquid. If your jam is very rare, then it will not work, since the filling will end up on the baking deck separately, the dough shell separately.
Flour must be sifted, even if it is of the highest grade. Don't think that grandmothers sift flour to rid it of debris. In fact, this is one of the secrets of delicious village baking, because the sifted flour is enriched with oxygen, and therefore the dough is kneaded easily and efficiently.
Use special yeast for baking. On many yeasts, manufacturers make such a mark for the convenience of housewives
Recipes for buns with jam:
The process of forming semi-finished products
After the yeast base is suitable after the next kneading, you can safely sculpt beautiful and smooth semi-finished products. To do this, you need to take a piece of dough and roll it into a ball with a diameter of 5-6 centimeters. It should be taken into account that the base increases significantly in size during heat treatment. Therefore, if you prefer to eat smaller buns with jam, then this value can be reduced slightly.
Next, the ball formed from the dough should be flattened, place 1 or 2 dessert spoons of applesauce in its middle part and pinch the edges so that you end up with a round and even shape again. After all the semi-finished products are ready, they need to be placed on a sheet greased with oil, leaving a distance of about 2-3 centimeters from the sides of the dish and from neighboring buns. This is necessary so that the dough rises during baking, but the products do not stick to each other.
Recipe 1: Buns with jam
Let's prepare delicious buns without any hassles. The dough will turn out especially tender due to the fact that we use mineral water. This is also one of the secrets - tap water is not suitable for preparing a delicious dish.
Required ingredients:
- Flour 3 cups
- Sugar 3 tablespoons
- Purified water 250 ml
- Vanilla
- Jam (any)
- Vegetable oil
- Powdered sugar
- Dry yeast 1 teaspoon (1 bag)
Cooking method:
- Let's start preparing the dough with dough. Let's heat the water a little to room temperature. Add a spoonful of flour, sugar and yeast into it. Stir well and let stand for about 10 minutes.
- Let's knead the dough. Sift the flour into a deep bowl, add the dough, sugar, salt, and vanilla. The dough should rest for 40 minutes.
- Make more small balls from the dough. You can safely divide the resulting amount of ingredients into 8-10 balls. The buns in the oven will be fine and will not be small at all.
- Make a depression inside each ball (it’s easiest to use a glass) and put a spoonful of non-liquid jam there.
- Place the buns on a greased board and put them in the oven. Baking temperature 180 degrees, time 30-35 minutes. Sprinkle the finished buns with jam with powdered sugar.
How to bake buns in a slow cooker?
Previously, our grandmothers baked buns in Russian ovens, but now they have been replaced by ovens, multicookers and bread makers.
Let's look at how to do this in a multicooker, because it has a special “Baking” or “Cake” program. Usually it is programmed with a time of 50 minutes.
The peculiarity of baking in this technique is that the upper part, which does not touch the bottom, remains white and does not brown at all, so the bun must be turned over if you do not cover them with glaze or cream.
I want to offer you a recipe without milk and eggs. The taste of the finished donuts is very similar to the purchased buns from the factory.
- 160 ml warm water
- 1.5 tsp. dry yeast
- 3 tbsp. granulated sugar
- 10 g vanilla sugar
- 1 tsp salt
- 50 ml vegetable oil
- 2-3 cups flour
- Jam (jam, confiture)
1. Make the dough. To do this, stir dry yeast in warm water (if you have pressed yeast, then you need to crumble it). Add a spoonful of sugar and a tablespoon of flour there. Let the mixture work for 10 minutes.
2. Add vegetable oil, vanilla, sugar and salt to the dough. Add flour in parts and knead soft dough. Let it rise for an hour.
3. While our mass is growing, let’s open the jam or confiture.
4. Divide the dough into equal parts. Roll it into flat cakes and put a little filling in the middle. Pinch the edges to form a ball.
5. Grease the multicooker bowl with oil. There are about 7 balls at the bottom. Turn on the “Warming” mode for 10 minutes to allow the buns to rise and rise.
6. Then turn on the “Baking” mode. I have a programmed time of 50 minutes. Some may have an hour or even more.
7. After the multicooker beeps to complete the mode, brush the tops of the buns with butter or vegetable oil and turn them over to brown.
8. Continue baking for another 15 minutes.
You can decorate the finished buns with powdered sugar.
Recipe 2: Quick buns with jam
If you don’t want to fuss with yeast dough (after all, you need to wait at least half an hour for it to rise!), take note of this recipe. Quick buns with jam will also turn out delicious, although the dough will not be as fluffy.
Required ingredients:
- Flour 300 grams
- Sourdough 300 ml
- Baking powder 2 teaspoons
- Jam (not rare)
- Powdered sugar
- Vegetable oil
Cooking method:
- Let's prepare a “quick” dough. To do this, pour 2 tablespoons of vegetable oil into the starter and stir.
- Combine flour with powdered sugar, salt and baking powder, mix with a spoon and pour in the starter and butter. You need to knead a soft and pliable dough.
- When you have a ball of dough, divide it into 8-10 smaller balls - these are the future buns.
- Using a glass, make a hole in each ball and place jam there with a spoon.
- Place the buns on a greased board and place them in the oven. Baking temperature - 180 degrees, time - 30-35 minutes.
Sprinkle the finished buns with jam with powdered sugar.
Pie with jam
To prepare pies with jam, we take seven hundred grams of dough (ready-made yeast), fifteen grams of jam or jam, two grams of melange for coating.
We prepare it like this: we form seventy-gram balls from the finished dough, melt them for five to ten minutes, then roll them out into round flat cakes. Place a spoonful of filling in the middle of each, pinch the edges of the flatbread, leaving the middle open. Then place the prepared pies on a greased baking sheet and leave to proof for another forty to sixty minutes. About twenty minutes before baking, brush with melange. Set to bake at two hundred degrees for eight minutes.

Recipe 3: Chocolate buns with jam
For this recipe, it is best to use non-liquid pitted cherry jam. Just imagine - chocolate dough, juicy cherries and soft pastry!
Required ingredients:
- Flour 3 cups
- Purified water 1 glass
- Chicken egg 1 piece
- Dry yeast 1 spoon (1 package)
- Sugar 2 tablespoons
- Not a rare cherry jam
- Cocoa 1 tablespoon
- Vegetable oil
Cooking method:
- Let's start by preparing the dough. Pour a spoonful of sugar, flour and yeast into slightly warmed water. Stir and let stand for about 10 minutes.
- It's time to knead the dough. Add salt, sugar, cocoa to the sifted flour, pour in the dough, and knead the dough. Let it sit for about 40 minutes.
- Make 8-10 balls from the dough. Using a glass, make a hole in each ball and put cherry jam there.
- Place buns with jam on a pre-greased deck and place in the oven. Grease each bun with yolk. Baking time - 30-35 minutes, temperature 180 degrees.
- Do not preheat the oven before placing the buns in. While the oven is warming up, our flour products will rise well.
- Don't put a lot of sugar in the dough. The jam is already quite sweet, so excess sugar will make the buns cloying.
- If the dough for buns is yeast, then the flour products themselves will double in size during the baking process. Therefore, make small bun balls from the raw dough. But add more jam if you don’t want to get the “store-bought version” when there is a lot of dough and just a little filling.
Pies with jam from yeast dough
Kitchen appliances and utensils:
- one deep bowl;
- whisk;
- baking tray;
- oven.
Ingredients for the dough:
Additionally:
- milk – 3 tablespoons;
- chicken yolk – 1 pc.;
- butter – 50 g.
Cooking sequence
Preparing the dough
- Pour yeast, granulated sugar and 150 grams of sifted flour into milk, heated to a temperature slightly above room temperature. Mix all ingredients thoroughly.
- Beat the egg into a bowl, add salt and beat a little until the salt dissolves. Pour the resulting mixture into the dough. Add oil.
- After mixing again, we begin to gradually add the remaining flour and knead the dough.
- After kneading for 15 minutes, the finished dough will stick a little to your palms. To avoid this, grease your hands a little with vegetable oil and do not add any more flour.
- If you did everything correctly, your dough should look like in the photo.
- Place the dough in a large bowl, lightly dusted with flour. Place the bowl in a plastic bag and tie it with a knot so that there is free space with air on top. After an hour, knead the dough slightly, form a bun and again place it in the bag for 30 minutes.
- We take out the dough, divide it into 12 (or more) equal parts, give them a round shape and place on a board lightly sprinkled with flour, cover with a towel on top.
- In this form it should stand for about 15 minutes.
Forming and baking pies
- Take each of the 12 pieces of dough one by one and use your fingers to shape it into a round cake, stretching the dough from the center to the edges.
- In the center of each cake we place 2 teaspoons of jam or thick marmalade (in our case, apple, but you can use it at your discretion). If the jam is too liquid, you don’t have to pinch the middle of the pie completely - it will turn out to be a pie. Then the dough will be better baked inside.
- We form a pie and carefully pinch the edges.
Important! Pay special attention to shaping; poorly glued edges of the pie will lead to the filling leaking out and burning during baking. - If necessary, cover the baking tray with baking paper and grease it with oil. We place the pies on paper with a small distance from each other so that they do not interfere with the growth of the “neighbor” during the baking process.
- To give our pies a beautiful appearance, before placing them in the oven, brush them with a mixture of beaten egg and three tablespoons of milk.
- Place a baking sheet with pies in a preheated oven at 180 C° and bake for about 25 minutes.
- The dough bakes well and quickly, so when you see the browned pies, you can take them out. Grease the tops of the still hot pies with butter; it will be quickly absorbed, but will add a pleasant creamy taste.
Serving the finished dish
To avoid damaging the pies, it is best to pull them together with the paper onto the table and let them cool. After which the paper will easily separate from the pies.
Ready-made oven pies are a great addition to tea or a small snack at home or on the go. It is better to serve them to the table on a large platter or tray. We eat with pleasure!

Sort through the apples, remove seeds and other parts that are not suitable for consumption. It is better to leave the peel, because it contains a lot of vitamins. Cut the fruit into slices and place on a plate in one layer.
Microwave the apples for a couple of minutes. It is better to cover them with a special lid before putting them in the oven. Let it cool a little while we prepare the dough.
Divide the dough into 7 equal pieces. Roll each of them into a sausage, roll out along its entire length. The result should be narrow rectangles.
Grease each dough piece with jam. Place apple slices on top to make improvised “roses”. Roll the dough into a spiral.
Preheat the oven to 180°. Place the buns in a greased pan (you can use silicone muffin molds). Place them in the oven for half an hour.
Sprinkle the finished products generously with powdered sugar while they are still warm. Serve the buns with unsweetened tea or fruit drink.
If you are not going to cook right now, it is better to sprinkle the apples with lemon juice. This will prevent them from darkening while the dough defrosts. In addition, the fruit will have a pleasant citrus flavor and aroma. You can even sprinkle the finished buns with the zest left after squeezing out the juice.
