In an ordinary home kitchen, you can use a special metal nozzle and a pastry syringe to repeat the shape of Kurabye. Unfortunately, I didn’t have the necessary equipment, so I came up with my own way of shaping cookies. I'll tell you in detail)

First, break off small balls of dough from a large ball of dough. For convenience, you can immediately place the dough balls on a baking sheet covered with parchment.

The parchment sheet does not need to be greased with anything or sprinkled with flour, since the dough for Kurabye contains a large amount of oil.

Using your fingers or the bottom of a glass, press down each ball, turning it into a flat cake. Don’t be overzealous, we need the final cakes to remain thick, at least 0.5 cm.

We make a depression in the middle of each piece (we use available kitchen utensils). I used the handle of a garlic squeezer.

Fill each cavity with thick jam. I used thick lingonberry jam, it was perfect: the sourness of lingonberries complemented the taste of the sweet dough.

It is very important that the jam for Kurabye is thick. It is recommended to mix jam that is too liquid with starch, thereby thickening it.

If you don’t have thick jam on hand, you can use candied fruits or marmalade for decoration. Remember, the colored center in these cookies is more for appearance than taste. And if, in pursuit of a generous filling, we add runny jam, at high temperatures it will flow and turn the baked goods into porridge. No one wants such a result, right?

And now the most interesting moment of preparation: we turn the circles into flowers. Using a toothpick, draw petals on the chamomile (or rather, apply the toothpick to the dough and press, leaving a mark). This activity can easily be entrusted to children - give them an ocean of fun!

  • Kurabye often contains powdered sugar. Many housewives are interested in the question of whether it can be replaced with granulated sugar. Substitution is permissible only if the sugar is very fine. You can turn regular granulated sugar into powder yourself by grinding it using a blender or coffee grinder.
  • Kurabye is baked at a temperature of 200–220 degrees; for this, the oven should be preheated in advance. If you bake kurabye at a lower temperature, the butter contained in the dough will melt before the dough has time to set. As a result, flowers, leaves and other figures lovingly laid out on a baking sheet will spread, losing their attractive appearance.   • There is no need to bake kurabye for a long time - usually it has time to bake in 10 minutes or even earlier.

  • Pour in a spoonful of milk, add 2-3 tablespoons of flour, stir. Continue adding milk and flour little by little, mixing thoroughly until the milk is gone and the dough has a soft but firm consistency.

Sequence of actions:

  1. At room temperature, naturally soften the butter to the consistency of sour cream. Then grind it with powdered sugar and liquid honey.
  2. Grind the cloves in a coffee grinder to a powder and add them to the dough along with other spices. Next, pour in the milk one by one and stir in the flour until you get a soft, homogeneous dough.
  3. Cool the finished dough for about 15 minutes in the refrigerator, then roll it out into a flat cake 10 mm thick, from which cut circles with a glass. Bake cookies for about 5 minutes at 180 degrees. Sprinkle the cooled pastry with a mixture of powdered sugar and vanilla sugar.

Kurabye in Turkish

  • butter – 150 g;
  • chicken egg – 1 pc.;
  • starch – 180 g;
  • flour – 160 g;
  • powdered sugar – 120 g;
  • vanillin – 1 g;
  • chocolate – 150–200 g;
  • crushed nuts (any) – 50 g;
  • jam - how much will it take?

Cooking method:

  • Combine softened butter with powdered sugar and grind.
  • Break an egg into a container with oil, beat the ingredients together.
  • Add starch mixed with vanilla. Mix thoroughly to obtain a homogeneous mass.
  • Add sifted flour one spoon at a time and stir until the dough reaches a dense consistency, while remaining soft and pliable.
  • Wrap the dough in cling film and put it in the refrigerator for half an hour.
  • Cover a baking sheet with parchment.
  • Roll the dough into a sausage with a diameter of about 2 cm (or make several such sausages).
  • Cut the sausage into pieces and form into balls.
  • Place the balls of dough on the parchment, flattening them slightly so that they take an oval shape. Apply a pattern on top with a fork.
  • Place the baking sheet with the preparations in an oven preheated to 200 degrees, bake for 10 minutes.
  • When the cookies have cooled slightly, melt the chocolate in a water bath and mix it with crushed nuts.
  • Dip one side of each cookie into chocolate. Wait for the glaze to harden. This will happen faster if you put the kurabye in the refrigerator.
  • Seal the cookies in pairs with jam and serve.

If you have never tried Turkish kurabye, you should cook it at home. It tastes just as good as the Baku one, and looks no less appetizing.

Cooking according to GOST at home

The times of the USSR, as well as strict adherence to GOST standards in the food industry, are far behind us, so the taste of childhood favorite delicacies prepared using new technologies is often disappointing.

To prevent this from happening, having decided to drink a cup of tea with aromatic kurabye, it is better to spend time not going to the store, but baking it in accordance with GOST requirements, taking:

  • 300 g butter 82% fat;
  • 150 g powdered sugar;
  • 260 g flour;
  • 3 chicken egg whites;
  • 3 g salt;
  • 2 g vanillin.

Step-by-step preparation:

  1. Combine butter with very soft consistency with powdered sugar and vanilla. You can cope with this process manually by grinding these ingredients, or whipping until fluffy with a mixer.
  2. Add flour a little at a time to the sweet butter mixture. It may require a little less than the amount specified in the recipe, since the mass should be soft and plastic.
  3. Beat the whites into a fluffy foam along with a pinch of salt. Mix the protein foam into the dough in two or three additions. This must be done carefully so as not to precipitate the mass.
  4. Squeeze small cookies through the “Star” or “Astra” nozzle onto the prepared baking sheet (greased or lined with parchment). If desired, make centers. The center of the kurabiye chamomile can be a drop of thick jam or preserves, a piece of dried apricots, or a small round berry (cranberry, lingonberry, currant).
  5. Cookies are baked at 240 degrees. The duration of heat treatment will largely depend on the characteristics of the oven and can range from 7 to 12 minutes.

Kurabye in Greek

  • flour – 0.35 kg;
  • powdered sugar - 180 g, not counting the cost of sprinkling the finished cookies;
  • butter – 0.2 kg;
  • yolk – 1 pc.;
  • cognac – 20 ml;
  • almonds – 50 g;
  • orange liqueur or syrup - to taste;
  • baking powder for dough – 5 g.

Cooking method:

  • Mix the softened butter with powdered sugar, add the yolk, mix thoroughly.
  • Sift the flour and mix with baking powder.
  • Dry the almonds in a dry frying pan and grind them with a blender or coffee grinder.
  • Add nuts and cognac to the butter, stir.
  • Gradually adding flour and kneading, prepare a fairly dense, but at the same time soft dough.
  • Let the dough cool by placing it in the main compartment of the refrigerator for 20-30 minutes.
  • Form small balls from the dough, place them on a baking sheet and place in an oven preheated to 200 degrees.
  • After 15 minutes, remove the cookies from the oven.
  • When the kurabye has cooled slightly, sprinkle the balls with orange liqueur and roll in powdered sugar.

Greek kurabiye looks unusual and very appetizing. Sometimes it is baked not in the form of balls, but in the form of various figures, cutting them out with molds from rolled out dough.

Chocolate kurabye

  • flour – 0.25 kg;
  • butter – 80 g;
  • vegetable oil – 60 ml;
  • powdered sugar – 50 g;
  • chicken egg – 1 pc. (small);
  • vanillin - a pinch;
  • cocoa powder – 50 g;
  • baking powder for dough – 10 g.

Cooking method:

  • Combine the sifted flour with cocoa powder and baking powder.
  • In a separate container, mix softened butter with vegetable oil.
  • Add sugar and egg to them, mix well.
  • Adding a mixture of flour, cocoa and baking powder to the resulting mass, knead a homogeneous plastic dough, soft enough to be piped out of a cooking bag.
  • Squeeze the dough out of the baking bag onto a parchment-lined baking sheet, forming curls or other shapes.
  • Place the baking sheet with the dough in an oven preheated to 200 degrees.
  • Cook kurabye for 10 minutes.

Before serving, you can sprinkle the cookies with powdered sugar or cinnamon (or a mixture of both).

Oriental kurabye cookies are made from shortcrust pastry, but according to different recipes. It can have different shapes and have other features associated with the national traditions of preparing this dessert in different countries. According to any of the recipes, kurabye turns out to be crumbly, aromatic, melting in the mouth. It is difficult to find a person indifferent to this delicacy.

I want to show you how to bake kurabye cookies at home. I’ve been wanting to make this for a long time, but I never got around to it, and there was some extra egg white left, so I decided to use it here.

Below I will show you what kind of dough kurabye is usually made from and tell you how best to shape it. Unfortunately, I don’t have a suitable wide nozzle, and everything is quite small in diameter, so my cookies didn’t come out with a beautiful shape. It’s very good that such factors do not affect the taste at all.

The recipe for kurabye cookies at home is very easy to prepare; it also requires the simplest ingredients. From these ingredients I made 24 cookies. I prepare them with plum jam, which is quite thick and does not flow, but you can use any other jam or even jam. Since the dough is quite sweet, I advise you to take a sour jam, such as plum, cherry or apricot, and it must be thick. I also advise you to bake it in the form of chrysanthemums, which many people know from childhood.

Ingredients:

  • Butter – 100 g
  • Powdered sugar – 40 g
  • Egg white – 1 pc.
  • Vanilla - a pinch
  • Wheat flour – 125 – 150 g
  • Thick jam or jam

Kurabye cookies at home - recipe

Once all the ingredients are prepared, you can start preparing the kurabiye cookies. Remove the butter from the refrigerator in advance and let it soften. Cut it into pieces. Place in a bowl.

As for butter, I recommend using high-quality butter, not margarine or spread, but butter with a fat content of 72%. It is with this that the kurabye cookies will turn out soft and crumbly. Add the required amount of powdered sugar to the butter. If it is not available, then prepare it at home using a coffee grinder or a special Mriya meat grinder.

Now, using a mixer, beat the butter and powdered sugar until smooth and smooth.

Beat in the egg. Instead of an egg, you can use two egg whites.

Pour a packet of vanillin into the kurabye cookie dough. The dough will immediately become fragrant.

Turn on the mixer and mix all ingredients again. As you can see in the photo, the base for the kurabie cookies turned out to be quite liquid.

Now we need wheat flour. Before adding it to the dough, be sure to sift it through a sieve. The flour will be saturated with oxygen and the cookies will rise better. I recommend introducing flour into the dough gradually, in small portions.

We knead the dough with a spatula, and in the last stages of cooking I already kneaded it with my hands.

The finished shortbread dough for kurabye cookies turned out thick, but at the same time it should stick to your hands. Preheat the oven to 190C. Line an oven tray with parchment. Prepare a cooking bag with attachments or a syringe. The classic chicken liver has the appearance of stars. Unfortunately, I didn’t have such a nozzle, so I had to use another one.

Place the dough into a piping bag or syringe. Pipe stars or corrugated strips from the dough in a spiral in the shape of snails, as in my case, immediately onto a baking sheet. Since there is a sufficient amount of fat (oil) in the cookies, there is no need to additionally grease the baking sheet. The finished liver will not stick.

Kurabye liver is almost ready for baking in the oven. All that remains is to finish it – decorate it with jam. Any thick jam, jam or confiture is suitable for these purposes. Since the liver base turns out to be quite sweet, to balance the taste it is best to give preference to jam (preserve) with sourness. Kurabye cookies with cherry, apricot, raspberry, blackberry, and plum jam will be very tasty. In this recipe for kurabye cookies, I used orange jam. While baking, the aroma of citrus and vanilla wafted throughout the house.

The amount of jam on cookies can be reduced or increased. As a rule, a little jam is used. To place it on cookies in even circles, use a cornet, or in other words, a sheet of paper rolled into a bag.

After all the cookies are filled with jam, place the baking tray with it in the oven. Bake kurabye cookies in the oven at 210 C for 10 minutes. As soon as you see the top of the cookies starting to turn golden, remove them from the oven.

Carefully remove the kurabye cookies from the baking sheet with a metal spatula. Please note that the cookies are fragile, crumbly and crumble easily, especially when hot, so place them on a plate in layers.
