Olivier with fried chicken and onions

Fried chicken with onions is a great way to diversify the taste of Olivier salad.

Ingredients:

  • White meat (breast) chicken – 1 piece;
  • Red onion – 1 piece;
  • Potatoes – 4-5 pcs;
  • Carrots – 1 piece;
  • Eggs – 3-4 pcs;
  • Peas – 1\2 cans;
  • Cucumber – 1-2 pcs;

For dressing, you can season the salad with mayonnaise and freshly ground black pepper.

Preparation:

Cut the chicken into “cubes” and fry with onions until the meat is cooked. Add some salt. Add to boiled and chopped potatoes, carrots and eggs, add chopped cucumbers and peas. Serve dressed.

How to prepare Olivier salad with chicken

1. To prepare Olivier salad with chicken, we need to open a can of peas. Drain the water and place the peas in a deep bowl.

2. Boiled chicken meat (I have two chicken legs) needs to be removed from the bone and chopped finely.

3. Chop the greens and add to the bowl.

4. Cut the fresh cucumber into small cubes. If you have an overripe cucumber, remove the seeds first and only then cut the cucumber for salad. Large seeds spoil the salad.

5. Boiled eggs must be cut into small cubes.

6. Boiled carrots need to be peeled and cut into small cubes.

7. Peel the boiled potatoes and cut them into cubes.

8. Place all prepared ingredients in a bowl. Mix. Add a little salt and pepper. Mix.

If you look at history, the creator of the dish, French chef Lucien Olivier, instead of beef, added pieces of boiled hazel grouse and crayfish to the salad. But there are always chefs who can replace these ingredients with any sausage or chicken. We will prepare an appetizer with boiled chicken meat and fresh cucumber.

Ingredients:

  • Chicken fillet - 200 gr.;
  • Chicken egg - 2 pcs.;

Cooking method:

1. First of all, you need to wash the potatoes and carrots, boiling them until tender. Boil hard-boiled eggs in a separate pan.

2. Peel the potatoes and cut into cubes.

3. Remove the peel from boiled carrots and cut into small cubes.

4. Cool the eggs, peel them and also cut them into cubes.

5. Boil chicken fillet in salted water until cooked. Cut the cooled meat into medium pieces.

6. Cut fresh cucumbers into cubes.

7. Pickled cucumbers also need to be cut, but do not forget to squeeze them afterwards to remove excess liquid.

8. Finely chop the onion.

9. Now mix all the ingredients and add green peas.

10. Dress the salad with mayonnaise, add salt to taste and decorate with herbs.

Since Olivier salad is prepared mixed together, you can make a culinary masterpiece out of it that will decorate your New Year's table. Simply form the mixture into, for example, a Christmas tree, and decorate with green peas and boiled carrots, making a wavy garland using mayonnaise. And imitating needles, add dill.

But when you boil the breast for salad, put it in boiling water so that all its properties are preserved.

Important!!! If you are boiling chicken for broth, then put it in cold water, and if for salad, then put it in boiling water.

Potatoes and carrots also need to be boiled until ready. Also place them in boiling, salted water. You can check readiness with a regular fork. Vegetables should be easily pierced.

Cut the boiled chicken breast into small cubes, about 1 cm wide.

Cut the boiled potatoes and carrots into exactly the same cubes as the breast.

Mix all ingredients in a salad bowl.

Drain the liquid from the peas and add to the total mass.

Cut the pickled cucumber and eggs into the same cube or even smaller. You can use an egg slicer to cut eggs. She makes a cube about 0.5 cm.

At this stage, you can finely chop the onions, if of course you like them.
