Gooseberry jam is simply delicious. It’s not for nothing that it’s called a treat for depression or a vitamin bomb.

Gooseberries are a very healthy berry. It contains many vitamins and microelements. The peculiarity of the berry is that it retains its beneficial qualities even when harvested, but in its raw form. You can grind the gooseberries through a meat grinder and freeze them. And we will prepare a dessert that will delight and surprise your loved ones and friends with its wonderful taste.

For you, my dear readers, I have tested and prepared a small collection of different recipes for gooseberry jam. First of all, they differ from each other in the technology of preparation, and, accordingly, in the results. I present this selection for your consideration.

Gooseberry jam with orange for the winter - a simple recipe (using a meat grinder)

In my opinion, this is the easiest and fastest way to prepare a fabulous raw gooseberry treat. With this method of preparing it, all vitamins are preserved as much as possible, and the orange adds a pleasant citrus note. I just love this delicacy. I hope that you will appreciate it too.

We will need:

  • gooseberries – 1 kilogram,
  • granulated sugar - 1 kilogram,
  • orange – 2 pieces

Preparation:

Step 1 Prepare the gooseberries, sort them, remove leaves and rotten berries, rinse well in several waters, remove the tails and sepals. You can leave them if you wish. Everything will change anyway.

Step 2 We wash the orange well with a brush, even scald it with boiling water, because we will use it together with the zest. Cut the orange into slices, removing the seeds. They give bitterness, and we don’t need that at all.

Step 3 Grind the berries along with the orange through a meat grinder. You can grind the berries in a blender, then the structure of the delicacy will be more uniform.

Step 4 Add sugar to the berries, mix well until smooth and leave overnight until the sugar dissolves well. In the morning, mix everything again and put our dessert into clean jars and close the lids.


Just four simple steps and you have a wonderful gooseberry delicacy ready, with a uniform consistency, but you only need to store it in the refrigerator.

Baking recipes with gooseberries

Pie with gooseberries and red currants

Ingredients: 50 gr. margarine, 7 eggs, 300 gr. sugar, 5 tbsp. l. cream or low-fat sour cream, 300 gr. flour, gooseberries and currants (currants should be half as much).

How to cook. Add 100 grams of sugar to the sifted flour, cut the chilled margarine, and rub into crumbs with your hands. Add 2 eggs, a couple of tablespoons of cold water and quickly knead the dough. Roll it into a flat cake, put it in a mold (make sides), bake over medium heat for 15 minutes. Pour boiling water over the gooseberries and currants, put them in a saucepan along with sugar and cook for 10 minutes. Rub half the berries through a sieve. Beat 5 eggs with cream or sour cream, add chopped berries. Place whole berries on the finished crust, pour in the filling and bake for another 20 minutes.

Strudel with gooseberries

Ingredients: 450 gr. flour, 200 gr. butter, 1 tbsp. l. sour cream, 100 gr. sugar, 1 egg, cinnamon and powdered sugar for sprinkling, 2 tbsp. l. starch, 500 gr. gooseberries.

How to cook. Beat soft butter with sugar, add egg and sour cream, beat again. Add flour, knead the dough. Grind the gooseberries in a blender and mix with starch. Divide the dough into two parts, roll out to the size of the mold. Place one part in the mold, make sides, and add the filling. Sprinkle with cinnamon, cover with dough, pierce it in several places to allow steam to escape, and pinch the edges. Bake for 30 minutes over medium heat. Sprinkle the finished strudel with powdered sugar.

If the gooseberry harvest is such that it allows you to get serious about harvesting, then try drying very ripe gooseberries. Spread it on a baking sheet in one layer and dry it in the oven at 90 degrees. It tastes almost as good as raisins. Dried gooseberries can be used in baking and preparing sweet and sour sauces for meat and poultry. Happy preparations!

Royal or emerald gooseberry jam with cherry leaf

This is the most delicious and impressive gooseberry jam, but it is better to cook it from green rather than red gooseberries. It is this that provides the incomparable beautiful emerald color. Cherry leaves also play a special role. Thanks to them, the syrup acquires transparency and richness. For this luxurious color and unique taste, the dessert is called royal. Despite such an important status, preparing a delicacy is not at all difficult if you do everything step by step.

To prepare it we will need:

  • green gooseberries – 1 kilogram,
  • sugar – 1 kilogram,
  • cherry leaves - 1 handful,
  • water – 2.5 cups (250 ml each)

Yield: 1.5 liters of finished delicacy.

Step 1 Preparing the berries. This is the most time-consuming process. It will require a little diligence and patience from you. The fact is that the berries need to not only be sorted, removing spoiled ones, but also cut in both directions. This is how we remove sepals, twigs and stalks. If you are not bothered by their presence in the jam, then you don’t have to trim them, but I remove them with scissors. Sometimes this process takes longer than the cooking itself. We wash the prepared gooseberries in water, place them in a colander and set aside.


To make the dessert beautiful, use elastic, not overripe berries, then they will not fall apart during cooking.

Step 2 Prepare cherry decoction. We wash the cherry leaves well, add water, put on the stove, bring to a boil, reduce the heat to low and cook for 15 minutes.

Step 3 Additional preparation of berries. We pierce each berry with a toothpick in 2-3 places. This trick must be done so that during cooking the fruits do not crack and all the pulp and seeds do not spill into the syrup. This manipulation must be done for large fruits; small ones, if they are dense, then you can leave them alone. This is the easiest way to prepare berries for further cooking. There is a more complicated method, when each berry is cut, the seeds are removed, and only the shell itself is boiled.

Step 4 Cook sugar syrup. After the cherry leaves have boiled for the required time, we remove them from the beautiful greenish broth, but do not throw them away, we will need them later. Add sugar to the broth, mix well, bring to a boil over medium heat and immediately remove.

Step 5 Place the prepared gooseberries in a cooking container and fill with syrup. There is one caveat here. You need to gently pour boiling syrup over the fruits, pouring the berries from a spoon or small ladle so that they warm up evenly.

It is important that the berries are heated gradually, otherwise they will burst. And even the procedure of piercing them with a toothpick will not help.

When the berries are warm, add the remaining syrup.

Step 6 Leave the berries covered in syrup for 5-6 hours. During this time, they will become saturated with syrup and change color. You can leave it for a longer time, for example overnight and continue cooking the next day in the morning.

Step 7 Bring the jam to a boil over low heat, stirring lightly. When the berries are warming up, we do this very carefully so that they do not lose their shape, you can even just shake the basin. From the moment of boiling, boil for 2-3 minutes. Remove from the stove again and leave in the room for 6 hours.

Step 8 Bring the berries to a boil again over low heat, cook for 2-3 minutes and let sit for 6 hours. It is interesting to watch how the berries change color and the syrup becomes transparent.

Step 9

For the fourth time we place the cooking basin on the stove. At this stage we add cherry leaves again. Decide for yourself how much to put in. This could be half the leaves, or maybe 1/3. Boil everything for 2 minutes and place in sterilized jars.


This dessert has enough sugar, so it keeps well in the room.

How to freeze gooseberries correctly

Those people who like to enjoy berries all year round should know some nuances. Gooseberries need to be frozen correctly so that they do not lose their benefits and taste. The berries are frozen in the following way: they are picked two hours before freezing, washed, dried, and placed in containers, which must be small in size. In this case, they need to be pressed tightly against each other, and air must be released when packing. Do not take glassware, as exposure to cold may cause it to crack or even burst. Also, do not forget about the special temperature conditions in which all fruits should be stored. The optimal temperature is considered to be from -5 to -18 degrees. It is worth remembering that at temperatures above -18 degrees there is a possibility of bacterial growth.

How to make delicious gooseberry jam - a simple recipe with lemon

Gooseberries go well not only with orange, but also with lemon. You can make raw jam by grinding lemon and gooseberries through a meat grinder and adding sugar, but I offer a completely different recipe for this delicacy.

We will need:

  • ½ lemon
  • 1 kg gooseberries,
  • 400 ml water,
  • 1 kg sugar

To make gooseberry jam tasty, I suggest following the following rules for cooking it:

  1. To cook the delicacy, use only ripe berries. If the berry is not ripe, it will not give juice; if it is overripe, it will ferment;
  2. Before cooking, be sure to remove spoiled berries, they will worsen the taste of your dessert;
  3. The ratio of sugar to berries is usually 1:1, but for red, sweeter gooseberries, the amount of sugar can be reduced;
  4. Long cooking of berries gives the jam a cloudier color;
  5. The addition of citrus fruits to gooseberries improves its taste.

Preparation.

Squeeze the juice from the lemon and mix it with water.

Pour the prepared gooseberries with water and lemon juice, bring to a boil, and cook the berries over low heat for 15 minutes.

Then add sugar and cook for 10 minutes, stirring constantly, check for readiness by dropping a drop of jam onto a plate. If it’s frozen, then put the dessert in jars; if not, then cook for another 5 minutes. That’s all our delicacy is ready.

What else can you make from gooseberries?

Using gooseberries, you can make a variety of preparations, both sweet and savory. Sweets, as already described above, include jam, marmalade, jam, and compote. Pickled gooseberries are considered unsweetened and can be used as an additive to meat dishes.

Using gooseberries you can make excellent jam. This will be especially convenient if you have a microwave. It will take about 45 minutes to prepare the sweet preparation. Only ripe or overripe berries should be used for jam.

Gooseberry compote has a rather interesting taste and smell that is slightly reminiscent of grapes. The drink should be prepared from ripe berries. And it is advisable to do this on the day of harvest. Be sure to prick the berries so that they remain intact and do not lose their shape.

Recipe for gooseberry jam with walnuts

This dessert can be called royal. It's great, as is the cherry and walnut jam. Just an oriental fairy tale. I prepare this delicacy as gifts for my closest friends. Both green and red gooseberries are suitable for its preparation, but it is better if they are slightly unripe.

We will need:

  • fresh green gooseberries - 1 kilogram,
  • peeled walnuts - 1/2 cup,
  • sugar - 1.5 kilograms,
  • cold clean water - 0.5 liters,
  • dried star anise -1 star

Preparation:

We wash the peeled walnuts in water, cut them into slices and fry them in a frying pan so that they reveal their aroma more strongly. Fry over medium heat, stirring occasionally with a wooden spatula.

To make the dessert tasty, it is better to prepare it from green, hard, slightly unripe berries, which we sort well, cut off on both sides, rinse in water and dry. You can drain it in a colander, or you can dry it on a towel; it doesn’t matter.

It is better to prepare this jam from large gooseberries, the berries of which are carefully cut and stuffed with walnuts. Place the filled berries in a deep bowl.

Cook sugar syrup. Pour water into a saucepan, pour sugar into it and cook over low heat until the sugar is completely dissolved. Pour hot syrup over the stuffed berries, cool and put in the refrigerator for a day. It is important that the berries are infused.

In the morning, take the sweet mass out of the refrigerator, add star anise, bring to a boil over low heat and simmer for 7-10 minutes.

We put the finished delicacy into jars, close them with lids, let them cool and put them in a secluded place.

How to prepare gooseberry seasoning

In order to prepare gooseberry sauce, you need to chop the onion and garlic (take a large clove), add the chopped ones to a pan with oil and water, simmer it all for 20 minutes with the lid ajar. Add one kilogram of washed and peeled gooseberries, salt, sugar to this mixture, stirring, and simmer for 10 minutes. Then the following ingredients are sent to the pan: raisins, ginger, curry, vinegar. Afterwards, the contents of the pan are simmered until the mixture thickens. At this time, you can add salt and sugar to taste. When the sauce is ready (it takes about 10 minutes of cooking), it needs to be poured into sterilized jars.

Five-minute gooseberry jam for the winter

A quick way to prepare gooseberries for the winter that has never failed. It is convenient for them to process a large number of berries at once.

We will need:

  • gooseberries – 1 liter,
  • water 200 ml,
  • sugar -1 liter


Pour the prepared berries with water, put on high heat, bring to a boil and cook over low heat for 2-3 minutes.

Then add and mix sugar, set the heat to maximum and cook for 2-3 minutes. Reduce the heat to a light simmer, remove the foam and cook for five minutes. Pour hot into jars with lids. When it cools down, put it away for storage.

If you were preparing a dessert from red gooseberries, then so as not to confuse the jars with other jam, for example with blackcurrant jam, I suggest this trick. Take a nice paper napkin, cut it into 4 pieces and use an elastic band to secure it to the jar. Trim the ends and label on top what kind of delicacy is here.

Cream

It can be an independent sweet dish, or used in the preparation of pastries and cakes (then you need to choose a recipe with a thicker consistency).

Option 1. Pour 50 g of sugar and a pinch of salt into half a kilo of ripe gooseberries, pour in 100 g of water, put on the stove and boil for a couple of minutes. Beat the whites and yolks of three eggs separately, combine, add 50 g of sugar and mix with the warm berry mass (but serve chilled). This is the simplest gooseberry cream recipe.

Option 2. Fill half a kilogram of gooseberries with water (half a glass) and simmer until the berries soften, and then rub through a sieve or grind in a blender. To the whipped cream (100 g) add ¾ cup of sugar and vanilla on the tip of a knife and beat again, and then mix with the pureed berries. Once cooled, you can decorate the cream with chocolate chips, mint leaves and fresh gooseberries, either whole or cut in half.

Option 3. We dilute two teaspoons of gelatin in water and leave to swell. Pour half a glass of water into 500 g of gooseberries, a little cinnamon and simmer until soft, and then wipe. Grind three yolks with sugar (200 g), mix with the grated zest of one lemon, gelatin and send to the berries. Beat three egg whites into a thick foam and carefully fold into the cream. Place into portioned vases/sockets/creams. Cool the dessert and serve with whipped cream.

Gooseberry jam with banana, cinnamon and cloves

An incredibly tasty jelly-like delicacy with a spicy note. Thanks to pectin, the gooseberry treat becomes jelly-like.

Required ingredients:

  • gooseberries – 500 grams,
  • sugar – 500 grams,
  • banana - 1 piece,
  • cinnamon – 1 stick,
  • cloves – 1 tablespoon

Cut the banana into pieces.

Grind the prepared gooseberries and banana in a blender into a homogeneous mass. Add sugar and leave in the room for 2-3 hours.

Then put the sweet mass on low heat, add cinnamon and cloves and cook after boiling for 4-5 minutes.

While hot, seal into jars. Agree, a very simple way to make delicious gooseberry jam.

What can you protect yourself from using gooseberries?

So, let's summarize all of the above. By eating gooseberries you can:

  1. Avoid developing diseases such as anemia. It will be possible to increase hemoglobin levels in the shortest possible time.
  2. Level the sugar level due to the fact that the berry contains special substances. They promote the production of insulin.
  3. Reduce the likelihood of stroke. This is due to the fact that gooseberries contain vitamin PP in large quantities.
  4. Get a choleretic and diuretic effect.
  5. Return stomach acidity levels to normal.
  6. Protect the body from cancer due to its significant vitamin E content.
  7. Strengthen your immune system.

Gooseberry jam with cherries

I’ve already told you how to make cherry jam with pits, and now here’s another interesting recipe with a pleasant cherry aroma.

Ingredients:

  • cherry – 400 grams,
  • gooseberries – 200 grams,
  • sugar – 600 grams,
  • water – 150 ml

You can use other proportions, but it is important that there are 2 times more cherries than gooseberries. We determine the amount of sugar accordingly.

First, prepare the berries: sort them and wash them. Remove the pits from the cherries. They can be removed manually, or using a special machine. But is it worth purchasing it if you make jam only once a year and not on an industrial scale?

Trim the gooseberries on both sides and cut large ones in half.

Place the berries in a cooking basin, sprinkle with sugar, mix and leave in the room for an hour. This will allow the berries to release their juice.

Using a masher, mash the berries, add a little water and place on the stove. Bring to a boil over low heat and cook for 10 minutes. Turn off the stove and let the jam cool. Turn on the stove again and simmer until done, which can be determined by adding a drop of syrup. Our delicacy is ready.

What to do with gooseberries

It would seem that you can only eat gooseberries raw, but then you can do this for a very short time. The situation is slightly corrected by the fact that the berries are used to make preparations for the winter. It is also a good idea to use gooseberries as decorations for other dishes, or add them to baked goods or cream. The sweet and sour taste is unmistakable. However, there are still many culinary recipes in which gooseberries are an ingredient. It is worth adopting the most delicious and healthy of them. So, you can make the following dishes and drinks from gooseberries:

  1. Jam.
  2. Sauce.
  3. Wine.
  4. Compote.

Each housewife prepares the above drinks at her own discretion, sometimes with the addition of unusual ingredients. However, there are general recommendations and tips for preparing dishes with gooseberries. Knowing them, you can please your family with a delicious and healthy menu.

Pickled gooseberries

To prepare such a wonderful snack you will need: 1-1.5 kg of gooseberries (depending on the size of the berries), 400 g of sugar, a cinnamon stick, 100 ml of vinegar, 5-6 peas of allspice, the same amount of cloves, 1/2 liter of water .

Pour water into a saucepan, add sugar, pepper, cloves and cinnamon. The marinade is prepared for 30 minutes. Then cool it and add vinegar. Pierce ripe gooseberries with a toothpick and place in pre-sterilized jars. Pour marinade over them and close the lids.

Canned gooseberries

In addition to preserves and jams, gooseberries can also be used to make compote. If desired, this preparation can be made alcoholic.

For this recipe you need:

  • 1.8-2 kg of slightly unripe gooseberries;
  • 800 grams of sugar;
  • 2 cups (500 ml) water;
  • 2 tablespoons honey;
  • 2 tablespoons lemon juice;
  • 1 bottle (750 ml) white rum (if you want to make an alcoholic drink);
  • 2 whole vanilla pods.

Green gooseberry cheesecake

Cheesecake made from this berry is a wonderful dessert with a contrasting taste. Tart and sour gooseberries go well with the sweet creamy filling. To prepare it you need the following:

  • 800 grams of gooseberries, peeled;
  • 75 grams of sugar;
  • 150 grams of any cookies, crushed;
  • 50 grams butter, melted.

For filling:

  • 600 grams of cream cheese;
  • 2 tablespoons plain flour;
  • 100 grams of lemon sugar;
  • 2 large eggs plus 1 egg yolk;
  • 2 tablespoons gooseberry syrup;
  • vanilla extract;
  • 150 ml sour cream.

For cream:

  • 150 ml sour cream;
  • 2 tablespoons gooseberry syrup.
