Cooking method:

  1. Take any container of the required size and sift the flour into it. Add salt, sugar and part of the whey.
  2. Beat everything with a mixer or whisk until you get a thick dough. It should be of uniform consistency.
  3. Next, pour out the rest of the whey.
  4. Pour baking soda into the dough and beat again.
  5. Next, pour vegetable oil into the dough. Let it sit for 10-15 minutes.

The dough with whey turns out higher than without whey and rises about half an hour earlier than without it.

Sweet glazed cinnamon rolls with whey

Ingredients:

  • whey – 200 g;
  • flour – ½ kg;
  • yeast – 1 sachet of instant yeast;
  • sugar – 120 g;
  • cinnamon sugar – ½ kg;
  • 120 g butter;
  • yolks from chicken eggs – 3 pcs.;
  • vanilla – 1 g;
  • salt – 1 tsp;
  • curd mass – 250 g;
  • 2 tbsp. l. vegetable oil.

Glaze:

  • orange sugar - 1 tbsp. l.;
  • powdered sugar – 3 tbsp. l.;
  • 1 tbsp. l. lemon juice;
  • water – 2 tbsp. l.

Cooking method:

  1. Dissolve the yeast in the heated whey.
  2. Melt the butter and cool. Not all, only 5/6 of the total. Mix vegetable oil, 2 yolks, salt and sugar with it. One yolk and the remaining butter will be used to grease the buns.
  3. Add yeast, vanillin to this mixture, add flour, and gradually get a dough. Dividing it in half, grease each part with oil and send it to rise.
  4. Knead the dough twice and proceed to making buns. From one part we will make cinnamon buns and snails, and from the other we will make the same buns, but with curd filling.
  5. Making snail buns. To do this, roll out the dough into a layer, grease it with soft butter, and sprinkle it thickly with cinnamon sugar.

Cooking method:

  1. Pour all the whey into a small saucepan.
  2. Place it on low heat and heat it to high temperature.

  4. The resulting composition should sit for several minutes.
  5. Pour everything into a suitable container.
  6. Pour in some of the sunflower oil and mix thoroughly.
  7. Sift the flour and gradually add it to the whey.
  8. Stir the dough all the time until it completely leaves the bowl.
  9. Then add the rest of the sunflower oil.
  10. After kneading the dough, put it in a warm place and cover with a wet towel.
  11. The dough should rise 2-3 times, then knead it some more. When the dough rises, let it sit.
  12. If you are preparing dough for pies, you should divide it into small pieces and make flat cakes.

In order to prepare the whey, take kefir, which should be slightly heated over low heat.

It is boiled until the milk begins to curdle, then it must be cooled and the curd strained through cheesecloth. The resulting liquid is whey.

A simple recipe for whey dough for pies

  • wheat flour - 0.5 kg;
  • whey - 0.25 l;
  • refined vegetable oil - 100 ml;
  • dry yeast - 10 g;
  • salt - 2 g;
  • granulated sugar - 20 g.

  • Heat the whey to 30–35 degrees.

  6. Knead the dough. It should stick to your hands a little.
  7. Mix the dough in a bowl, and then put it on the board and knead thoroughly.
  8. Next, put the dough back into the container, cover it with a towel and let it rise for an hour in a warm place.

When the dough has doubled in size, you can make baked goods from it.

Yeast-free bread buns with whey

Bread made from dough without yeast will be very fluffy and tasty. If you add whole grain flour or bran to it, this will only add benefits. The dough for these buns should be prepared in the evening.

To prepare the buns you need:

  • whey – 310-340 g;
  • flour – 455-485 g;
  • rye flour – 455-485 g;
  • bran – 85-100 g;
  • salt – 4-7 g;
  • sour cream – 25-35 g;
  • sugar – 12-15 g;
  • cumin – 15-17 g.

Preparation progress:

  1. Leave the whey in a warm place for 5-6 days (to speed up fermentation, add sour cream to it).
  2. Add all the ingredients to the resulting whey and knead the bread dough (it should not spread).
  3. Dust the finished dough with flour, cover with a plastic bag and leave until morning.
  4. Prepare a baking sheet sprinkled with semolina or flour.
  5. Place the formed buns from the infused dough into it and place in the oven, preheated to 185-205 degrees.
  6. As soon as the buns are sent to the oven, the temperature in it should be reduced by 20-25 degrees.
  7. Bake the buns for 45-55 minutes.

Baked unleavened buns should be covered with a towel and allowed to cool slightly.

  • Vanillin (to taste, of course) or cinnamon (I sprinkle it with all my heart so that the casserole acquires a chocolate flavor and shade)
  • You can add dry pudding or jelly.

If you want to make a “cheesecake-type” casserole, then take exactly as many ingredients as I wrote. The dough will be liquid - this is normal. If you want a denser casserole - a bun, you can double the amount of oatmeal, for example. In this case, the dough will also be liquid, but stretchy and thick.
