You do the traditional kneading for 10-15 minutes, after which you let the yeast dough rise for 2 hours, kneading once. Cooking step by step:

The recipe for this tender and airy bread includes wheat flour (I used the highest grade, but the first grade is perfect), whey, oat flakes (Oatmeal), lard (lard), quick-acting yeast, salt and granulated sugar. So, let's go through the products that should be at room temperature. Take any oatmeal, but not instant (there is nothing healthy in them in my opinion), a teaspoon and a tablespoon in my recipes are always used under the knife, that is, without a slide, unless otherwise specified when preparing a particular dish. Instead of lard, you can add any other fat to the dough - chicken, butter or odorless vegetable oil are also great. I just really like the special aroma that distinguishes ready-made baked goods made with pork fat. 1.5 teaspoons of instant yeast is 5 grams.

My bread maker has the following arrangement of ingredients: first liquid, then bulk. If it's the other way around, follow the instructions. Pour 300 milliliters of lukewarm whey and 30 grams of melted pork fat into a bucket.

Now pour in 400 grams of sifted wheat flour. I hope you understand that during the process of kneading the bread dough you may need a little more or less - it depends on its moisture content.

Next add 120 grams of oatmeal. There are no others in our family - only Hercules, which needs to be boiled.

And at the end, add salt (2 teaspoons), sugar (2 tablespoons) and high-speed yeast (1.5 teaspoons). If your kitchen is hot (especially in summer), pour all three of these ingredients into different ends of the bucket so that the dough does not have time to sour during the fermentation process. Otherwise, there is a high probability of the roof of the finished bread sagging.

Select the French bread program, time - 3 hours 50 minutes. The first kneading of the dough begins, which lasts 15 minutes. During the process, we monitor the condition of the bun - it should be soft, tender, but at the same time keep its shape and not spread. If the bun does not want to come together, add a little flour, since the moisture content of this product is different for everyone. We noticed that the bucket was clean, all the flour was mixed into the dough. If the dough, on the contrary, is still lumpy and even crumbles, you need to add more liquid, but very little at a time. Now I don’t recommend opening the lid so as not to disturb the dough - it may fall during baking.

Exactly 3 hours 50 minutes after the start of the program, our assistant will squeak that the bread is ready.

We take out a bucket and take out the bread. Cool completely on a wire rack so that the bottom does not get wet. The finished oatmeal bread with whey weighs about 830 grams.

Let's start cooking with the dough. Yeast should be diluted in a small amount of heated whey with sugar.

In addition to a bread machine and oven, aromatic and tasty whey bread can be baked in a slow cooker. In addition to the fact that the bread is kneaded with whey, ground paprika and mustard powder are also added to it, which makes the bread piquant and very tasty.

To make whey bread in a slow cooker you will need the following ingredients:

  • Wheat flour - 1 cup,
  • Rye flour - 2 cups,
  • Raw yeast -25 grams,
  • Granulated sugar – 1 tbsp. spoon,
  • Salt – 1 teaspoon,
  • Whey (warm) – 1.5 cups,
  • Vegetable oil 5 tbsp. spoons,
  • Ground paprika – 1 tbsp. spoon,
  • Mustard powder – 2 tbsp. spoons.

How to prepare and bake whey bread in a slow cooker

First you need to warm the whey to room temperature, then dissolve the raw yeast in it. Next, add sugar, mustard powder, ground paprika, vegetable oil (2 tablespoons), salt. Mix everything.

Pre-sift the white flour and mix it with rye flour, which should not be sifted. Then, in small portions, we begin to add flour to the liquid part of the dough.

As a result, you should get a soft dough that should not stick to your hands.

Transfer the finished dough into a deep container, sprinkle with flour and cover with a napkin, and leave with a lid on top for one hour.

After an hour, the dough should be transferred to the table and kneaded again.

Then roll the dough into a ball.

Grease the multicooker bowl with vegetable oil and place the rolled dough ball into it. Then close the lid of the multicooker and leave it in the “Warming” mode for half an hour.

After half an hour, you should switch the multicooker to the “Baking” mode and set the time to one hour, without needing to open the lid.

Then, after an hour, you should turn the loaf of whey bread over (turn it upside down to brown the other side), using a steamer basket.

Then set the multicooker again in the “Baking” mode for 40 minutes.

After the signal for the end of baking sounds, you will need to open the lid, but do not remove the bread from the multicooker bowl; leave it to rest for 20 minutes. Then remove the bread from the multicooker bowl and leave to cool on a wire rack, so the crust turns out crispy.

Ingredients:

  • rye flour – 220 g;
  • wheat flour – 140 g;
  • – 45 g;
  • kefir – 475 ml;
  • refined vegetable oil – 20 ml;
  • granulated sugar – 10 g;
  • salt – 10 g;
  • soda – 10 g;
  • cumin, sesame or any other seeds (optional).

Products for making yeast-free wheat bread with kefir:

  • Kefir – 750-1000ml kefir
