With Italian herbs
To make a marinade according to this recipe, you will need citrus juice, oil, and herbs de Provence. Place all ingredients in one bowl. With pomegranate juice

- onion – 500 g;
- garlic - half a clove;
- lemon – 1 pc.;
- martini – 100 ml;
- cilantro - a bunch;
- dried dill – 1 tbsp. l.;
- seasonings;
- salt.
Prepare a set of spices - combine garlic, finely chopped cilantro, spices, dill. Rub the salmon pieces on all sides with the mixture and let stand for 10 minutes. Yoghurt based
What do you need:

- natural homemade yogurt (or store-bought, but without flavorings);

Fresh cream and herb sauce
The sauce is based on cream or unflavored yogurt. For greens you will need about 100 grams of fresh cucumber, dill; and the only spices are salt and pepper. So, grind the cucumber and dill in a blender. Then mix it with cream. Add salt and pepper to taste. Our sauce is ready! Let's leave it in the refrigerator and get on with the main dish.
Foil boats for salmon
Let's prepare the fish for grilling. For this we need lemon, salt and pepper. Cut the fish fillet into portions (it is not necessary to remove the skin). Squeeze lemon juice onto the fish pieces. Sprinkle them with salt and pepper and rub them thoroughly.

Moroccan steak
The recipe for salmon steak on a grill pan will not take much time, but the product will meet all the requirements of a culinary masterpiece.
You will need a sauce of 1 tablespoon of lemon, 2 cloves of garlic, herbs. The products are crushed in a blender at low speed. Add olive oil in the amount of 150 ml. The resulting mixture looks like a puree. Leave to cool in the refrigerator for 15 minutes. Wash and dry 4 pieces of fish, brush with sauce. Cover with film and put in a cool place. This is how marinating occurs.

- egg yolk - one;
- onion – 1 piece;
- flour – 2 tbsp;
- butter – 20 gr.;
- parsley - 1 root;
- dry wine – 50 ml;
- sugar – ½ teaspoon;
- lemon juice – 10 ml;
- salt - to taste.
- Cook a rich fish broth with spices.
- Peel the parsley root, remove the peel from the onion, and wash it.
- Place the saucepan on the fire. Heat 10 grams of butter in it, fry the chopped vegetables over low heat, sprinkle with flour.
- Quickly stirring with a whisk, dilute with broth, add salt, add sugar, cook for 10 minutes, remove from heat.
- Mix the raw yolk with 10 grams of butter, pour into a saucepan, stir.
- Strain through a sieve.
- Add lemon juice and wine.
- Beat with a whisk.

- Wash the salmon thoroughly and dry it with napkins until the water completely disappears. It is very important that no droplets of moisture remain on the fish, otherwise the oil will not be able to be completely absorbed into the steaks, and its juiciness will decrease to almost zero. If you use frozen salmon, you need to defrost it on the bottom shelf of the refrigerator.

Marinade for salmon
Some people consider salmon to be a tasty, oily fish that doesn't need a marinade. In principle, this is true, but the salmon will be much tastier and more interesting if you marinate it before grilling. Usually the result obtained exceeds all expectations: the fish meat becomes tender and its aroma is delicious. Just fifteen minutes of marinating and you will get a fragrant and juicy salmon kebab.
Salmon marinade requires gentle preservatives that will not soften the meat to the point that the fish falls apart on the grill.
To prepare a traditional marinade with olive oil, you need to take 500 grams of salmon, four tablespoons of olive oil, five to six olives, half a lemon, a bunch of green dill and salt to taste. Lemon juice should be squeezed into the oil, and the olives and dill should be finely chopped and mixed thoroughly. The fish is salted and placed in the marinade for fifteen to twenty-five minutes.
The Italian salmon marinade recipe has a similar composition, but it also adds 200 grams of white wine and three to four tablespoons of soy sauce. It differs slightly from the first in its taste, but also gives grilled salmon a unique taste. If any seasonings are used, it is important not to overdo them, since the delicate fish meat is very easy to spoil.
Preparing the dish

The fish needs to be salted and spices added. Dip each piece in flour and place in a heated frying pan with oil. Fry until done.
While the salmon steak is cooking on the grill pan, place the butter in a small saucepan and place over medium heat. Melt the butter, add flour to it and mix well. Then quickly add the wine and cream. The sauce needs to be stirred constantly: it should thicken well. Remove the pan from the heat and add salt and pepper to the sauce.
Place the fish pieces on a plate and serve with the sauce. Sprinkle the dish with finely chopped green onions on top.
Classic cream sauce
Classic creamy sauce does not require the use of any additives. It can be served with fish, meat, and vegetables. It can be used as a basis for preparing special creamy sauces that are served with specific dishes.

How to make classic cream sauce:
Before preparing the sauce, flour should be lightly fried in a dry frying pan until golden brown.
Then put the butter in the pan and mix it well with the flour, continuing to fry.
Pour the cream into the pan, wait until it boils, and cook, stirring the sauce for another 2 minutes. Be careful not to form lumps.
Lightly pepper the sauce and add salt to taste.
