Preparation:

  1. We will prepare the products we need. Special noodles can be purchased at any supermarket.

  2. First, wash the beef and place it in a deep pan.
  3. Fill the meat with filtered water.
  4. Peel and rinse the onion, 1 carrot root and ginger root.

  • 2-3 cucumbers;

  • 45 ml vinegar;
  • 3-4 tomatoes;
  • 2.2 liters of water;
  • 225 g cabbage (white);
  • 45 ml sunflower oil;
  • 425 g beef;
  • 12 g sesame seeds;
  • 85 ml soy sauce;
  • ground pepper (red and black);
  • rice noodles.

Preparation:

Cooking “Kuksi” will take time, because you need to fry the meat, make a salad, dressing, etc. But let's start with preparing the components of the soup.

  1. Chop the onion into small squares, grind the coriander grains in a mortar, first dry the sesame seeds in a dry frying pan, and then also grind them in a mortar.
  2. Take beef, the meat should not be fatty, rinse with water, dry and cut into strips.
  3. We put a small cauldron on the stove, heat the oil in it and fry the meat until reddened, then pour the onion into it, stir, do not fry, but add salt, a little ground coriander, pour in a little water, cover and simmer.
  4. While the beef is cooking, make the brine. Everything is simple here: we take water, first boil it and cool it. Add salt, the remaining coriander, sesame seeds, two types of pepper, cilantro, add soy and vinegar, stir well and put in the cold, since we do not forget that we are preparing a cold soup.
  5. Now we make an egg pancake, take the eggs, break them into a bowl, shake, adding a little salt, and fry the pancake in a frying pan.
  6. Cool the egg pancake, roll it up and cut it into thin strips.
  7. We also cut the cabbage into thin strips, season it with vinegar and mash it with our hands.
  8. We cut the remaining vegetables into small slices; if the cucumbers have thick skin, it is better to peel it off. Add a little salt to all the chopped vegetables and, like the brine, put them in the cold.
  9. We first cool the finished meat indoors, and then send it to the rest of the ingredients.
  10. Boil the rice noodles according to the instructions on the package, the main thing here is to ensure that the noodles do not stick together. Be sure to wash the finished noodles under cold water.

  • 1.5 tbsp. l. tomato paste;
  • 2 tbsp. l. purified vegetable oil;
  • a mixture of dry herbs;
  • cumin;
  • ground hot pepper;
  • salt;
  • vinegar;
  • soy sauce.

Preparation:

  1. Wash the beef and set the broth to simmer. It needs to be salted. We will also season the broth with cumin and dry herbs. Be sure to collect the foam that appears!

  2. Boil the spaghetti until done. Place them in a colander to drain all the liquid.

  3. Peel and rinse the onions and carrots. Chop the onion into small cubes, and chop the carrot root vegetable on a grater.
  4. Heat the vegetable oil in a frying pan and add the onion. Fry it for a few minutes.

  5. Add carrots to the pan and stir. Sauté vegetables until soft.
