Once again succumbing to the temptation to create another “super recipe” and firmly believing that this time everything would work out for sure, I took the next “freak” out of the oven.

It was something! Something, but not chicken with a glossy and varnished skin! On a baking sheet lay a shapeless carcass with burst, charred remains of skin and half-raw meat. And this despite the fact that I clearly followed all the steps of the recipe and strictly observed the baking mode and time.

Before choosing any marinade, you need to pay attention to simple tips. For example, the larger the chicken pieces, the longer they should be kept in the marinade. So, it is best to leave a whole carcass overnight. And wings and breast pieces can be successfully marinated in an hour.

If the marinating process takes more than two hours, then you should put the meat in the refrigerator, first covering it with film or a bowl. It is also worth noting that if there is salt in the marinade, it is better to add it ten minutes before cooking so that the meat is even more tender and juicy.

With mustard

The ideal combination of a meat product with honey and mustard will not only ensure the tenderness of the chicken, but also obtain a subtle piquant taste of the finished dish.

Required Products:

  • butter;
  • honey - 20 g;
  • Dijon mustard (you can also use the usual composition) - 40 g;
  • chicken breasts - 2 pcs.;
  • spices (pepper, salt).

    How to marinate chicken for baking in the oven? To begin, the chicken is washed, cut into pieces and dried. Mix all the ingredients for the marinade, let them stand for about five minutes, then pour over the pieces. It is best to transfer the entire mixture into a plastic bag so that the marinade envelops each piece. Leave the chicken like this for an hour, shaking the bag periodically.

    After draining the liquid, it can be used for baking. To do this, boil it for about ten minutes, and then cool slightly. Place the chicken on a baking sheet, bake for about twenty minutes, then drain off excess fat. Lubricate with boiled marinade, put in the oven until the meat is ready.

    Marinade for whole chicken with crust in the oven

    With this marinade, the chicken turns out with a beautiful crispy golden crust and is so juicy that when cut, the juice just flows out of it.

    To prepare the marinade for a 2 kg chicken you will need:

    • 3 liters of water;
    • 75 gr. salt;
    • 30 gr. Sahara;
    • 1 tsp. ground black pepper;
    • 1 tsp. ground coriander;
    • 1 tsp. paprika;
    • 1 tsp. khmeli-suneli;
    • 1 head of garlic;
    • 250 ml semi-sweet wine;
    • 1 tbsp. l. butter.

    Pour 3 liters of cold water into a large saucepan. Add salt, sugar, ground black pepper, coriander, paprika and suneli hops. Grate a small head of garlic there on a fine grater and pour in semi-sweet wine.

    Stir the marinade until the salt and sugar dissolve. In order for such a marinade to thoroughly saturate the carcass, it must be pricked frequently. This can be done using a special needle knife or simply using toothpicks or a wooden skewer.

    Prick the chicken as deeply as possible on all sides. This must be done especially carefully in the area of ​​the chest and legs, i.e. in the thickest part of the carcass.

    After this, immerse the whole chicken in the marinade so that it is completely covered with it. If your chicken is small, perhaps 2 liters of marinade will be enough for you.

    Cover the pan with a lid and put it in the refrigerator during the warm season, and leave it at room temperature on the table during the cold season.

    The chicken should remain in this marinade from 10-12 hours to several days. Remember, the longer the chicken is in the marinade, the juicier it will be.

    If a chicken weighing 2 kg is in the marinade for 1 day, then it will absorb up to 400 ml of it. Can you imagine how juicy and tender it will turn out?!

    Now place the chicken on a wire rack set in a baking dish. We tuck the wings behind the back, and tie the legs with twine or chop with a wooden skewer. Lubricate the entire carcass with any oil and send it to the oven to bake.

    First, set the temperature to 160° and cook it in the “Bottom Heat, Convection and Grill” mode for 1 hour. Then, increase the temperature to 170° and bake for another 10-15 minutes until golden brown.

    Important! If your chicken was marinated in the refrigerator, then 2-3 hours before cooking it should be taken out so that it warms up to room temperature, and only then put in the oven.

    With this method of marinating, the chicken turns out so juicy that when cutting, the juice flows from under the knife, and the skin remains thick and crispy.

    Although this method of marinating chicken requires quite a long cooking time, once you taste this tender, juicy meat, you will want to cook it the same way again and again.

    I usually make this kind of chicken for the New Year and all my guests are always delighted with it.

    A very simple kefir marinade

    This marinade recipe can be used to prepare any part of the chicken. For such a simple sauce you need to take:

  • 175 ml kefir of any fat content.
  • A couple of tablespoons of chopped fresh basil. If dried, you only need two teaspoons.
  • A couple of tablespoons of odorless vegetable oil.
  • Two cloves of garlic.
  • A quarter teaspoon of salt and ground black pepper.
  • Peel the garlic and grate it on a fine grater. Its quantity can be adjusted to taste. Also, if you don’t have fresh garlic, you can use dried garlic. All ingredients are mixed. Pour the marinade over the chicken pieces, stir thoroughly so that everything is covered with the marinade, cover the container with cling film and leave for at least an hour. Afterwards it is prepared in any way.

    Chicken with honey in the oven - a very tasty honey marinade

    This honey chicken recipe has such a delicious marinade that once you try it, it will become your favorite! Moreover, it is suitable not only for chicken, but also for other birds. The meat in the oven turns out simply incomparable - it couldn’t be more tender!

    • 2 kg chicken wings;
    • 2 tbsp. l. honey;
    • 4 tbsp. l. soy sauce;
    • 4 tbsp. l. tomato paste or ketchup;
    • 1 tsp. granulated garlic;
    • 4 tbsp. l. vegetable oil;
    • 1 tbsp. l. chicken seasonings;
    • salt, rosemary, herbs to taste.

    We cut off the very tips of the prepared wings and cut them into 2 more parts along the joint. This makes them easier to eat, and they bake much better. We put all this in a bowl and add just a little salt there, pour in soy sauce, pour in vegetable oil, chicken seasoning, tomato paste and liquid honey.

    Now mix well, add a sprig of rosemary, cover the bowl with cling film and leave the chicken to marinate for 2 hours at room temperature. If it is very hot, it is better to put the meat in the refrigerator.

    Cover the baking sheet completely with foil and place the marinated wings on it. Nearby you can place potato wedges, sprinkled with seasoning and sprinkled with vegetable oil.

    Cover the top with a sheet of foil and bake under it for the first time so that the chicken and potatoes are well baked and do not burn.

  • three sprigs of fresh mint;

  • a glass of berries;
  • a couple of tablespoons of honey;
  • the same amount of vegetable oil;
  • a little salt and pepper.
  • Place all ingredients in a blender bowl and blend. Coat the chicken thickly and leave for a couple of hours. Then wrap the carcass in foil and bake until done. To ensure the chicken is golden brown, open the foil fifteen minutes before the end of cooking.

    Components used:

    • vegetable oil;
    • ketchup (ingredients for barbecue) - 60 g;
    • liquid honey - 40 g;
    • garlic cloves - from 5 pcs.;
    • chicken (whole carcass or parts thereof) - 1 kg;
    • tomato paste (sweet and sour) - 45 g;
    • freshly ground black pepper, salt.

    Cooking technology:

    1. We wash the cut chicken, dry it with napkins, and cut into large portions if desired.
    2. Place honey, tomato paste, ketchup, and chopped garlic into a bowl. Season the mixture with a selected amount of salt and pepper, mix everything, grease the pieces of meat with aromatic sauce. Half an hour is enough for the parts of the bird to be saturated with the resulting marinade.

  • half a glass of Narsharab sauce;
  • half a teaspoon of cumin;
  • a teaspoon of salt;
  • grated ginger - a couple of tablespoons;

  • one lemon;
  • three tablespoons of liquid honey;

    This version of the marinade for chicken with adjika is often used for wings. This makes a savory snack for foamy drinks.

    For this recipe you need the following ingredients:

  • 200 grams of mayonnaise;
  • dry adjika – half a teaspoon;
  • three cloves of garlic;
  • a little ground black pepper.
  • For the marinade, peel the garlic and finely chop it. All ingredients are mixed in a bowl. Carefully roll the prepared wings in the sauce and leave for two hours. Then you can bake the pieces on a baking sheet and serve with sauces.

  • two red bell peppers;
  • a couple of tablespoons of chili sauce;
  • the same amount of olive oil;
  • half a bunch of cilantro, mint, green onions;
  • two cloves of garlic;
  • one lime.
  • It is better to use breast meat for this recipe. The bell pepper is cut into cubes, and the chicken too. The onion is peeled and cut into rings. Everything is put in a bowl.
