Stir the minced meat first with a spoon and then with your hands to make it more sticky.

Using a small spoon, scoop the minced meat into small round meatballs. Dip each meatball in flour. Meatballs from this minced meat are very easy to make.

For the sauce, heat the vegetable oil in another frying pan and sauté the flour in it for about 2 minutes, stirring. Slowly pour in the broth and stir. Then add cream and simmer the sauce for about 2 minutes. We pour it over our preparations and simmer the chicken meatballs in a creamy sauce in a frying pan for about a quarter of an hour. With the onset of a new day, willy-nilly, the question “what to cook today?” came up again. After looking in the refrigerator and assessing the availability of food, it was decided to cook something from minced chicken, since both my children and I would never refuse such food. But I had one more product that had been waiting in the wings for a couple of days - homemade cream. Having put two and two together in my mind, I came up with chicken meatballs in creamy sauce. All that remained was to put the idea into practice.

I remember I already posted the recipe, but it was pork meatballs, and even in tomato sauce. The essence is the same, but the recipes are completely different. And today I will add to my collection of meatballs with this very interesting and tasty recipe. And it won’t be difficult for me to do this at all, because preparing chicken meatballs in creamy sauce is very simple. And the result of cooking is very impressive with its tenderness, pretty appearance and, of course, soft creamy taste.

In general, I really like recipes based on minced chicken or chicken fillet. By the way, the minced meat for making these chicken meatballs in creamy sauce is made from fillet. Of course, you can take ready-made minced chicken or cook it yourself from other parts of the chicken, but I still prefer this chicken fillet dish. As for the cream for making sauce for meatballs, its fat content should not exceed 20-22%, otherwise the sauce will be too heavy for the stomach. The simplest 15% cream will work great. For the recipe, I used homemade cream, but it was not overly fatty, very similar to 20% store-bought cream.

From minced fish

For lunch for the whole family, it’s good to cook fish meatballs in a creamy sauce in the oven.

To do this you need to stock up:

  • fish fillet – 700 g;
  • white bread or loaf – 60 g;
  • onions;
  • cream and milk - 250 ml each;
  • flour;
  • oil;
  • ground pepper and salt.

Peeled onions with fillets and bread soaked in milk are passed through a meat grinder. A little beaten yolk with white, butter and spices are added to the mixture. The products are thoroughly kneaded until smooth, after which they can be formed into rounds. To prevent the minced meat from sticking, grease your hands with vegetable fat or dip them in water.

Dip the pieces in flour, fry them in fat in a frying pan, place them on a baking sheet and pour cream and herbs over them. Simmer in an oven preheated to 190 degrees for 15 minutes.

Meatballs in mustard-cream sauce

Mustard-cream sauce will give the dish an unusual taste and aroma. For lovers of everything extraordinary, this recipe will come in handy. To prepare meatballs you will need:

  • pork, beef or veal in the amount of 0.5 kg;
  • two medium-sized onions;
  • a bunch of parsley;
  • black, red and paprika pepper according to your own preferences;
  • basil in the amount of half a teaspoon;
  • salt;
  • one chicken egg;
  • rice, pre-cooked in the amount of three tablespoons;
  • three tablespoons of vegetable oil.

To prepare the sauce you will need:

  • three tablespoons of vegetable oil;
  • two teaspoons of grainy French mustard;
  • one tablespoon of hot mustard;
  • sour cream in the amount of 150 grams;
  • water in the amount of 100 grams;
  • one teaspoon of flour;
  • salt;
  • black pepper.

Cooking time – 1 hour 10 minutes.

Calorie content – ​​304 kcal per 100 grams.

Step-by-step preparation of the dish:

  1. Rinse the meat well and dry. Peel the onion, wash and dry. Pass the meat and onions through a meat grinder;
  2. You can also add one clove of garlic to the minced meat;
  3. Separate the greens from tough branches and chop very finely. Add these greens to the minced meat, as well as all the necessary spices. Salt;
  4. Mix all ingredients thoroughly. To obtain greater homogeneity of the mixture, you can try to beat it a little;
  5. Add rice and chicken egg to the minced meat;
  6. Stir the mixture thoroughly and place in the refrigerator for a while;
  7. Take out the minced meat and start forming round meatballs;
  8. Heat a frying pan, grease with vegetable oil and lightly fry all the meat balls. Place in a container and cover with a lid;
  9. Next comes the preparation of the sauce. Heat vegetable oil in a metal bowl;
  10. Add sour cream and salt. Mix well with the oil to obtain a homogeneous mixture;
  11. Add French and regular mustard and pepper;
  12. Warm the sauce for 4 minutes;
  13. Add water, boil and remove from heat;
  14. To make the sauce thicker, you can add flour;
  15. Place all the meatballs in the sauce and place on low heat for 7-10 minutes.

Hedgehogs with rice, baked in the oven

The food is prepared within one hour, from:

  • minced meat – 340 g;
  • long grain rice – 120 g;
  • onions;
  • garlic;
  • cream or sour cream - 3 tbsp;
  • tomato paste – 30 ml;
  • salt and spices.

The rice is washed, boiled and, after cooling, mixed with minced meat (meat, onion and garlic). Spices are added to the mixture and everything is mixed. Hedgehog balls are formed from this base. Place them on a greased baking sheet and pour the sauce over them. It is prepared from cream, pasta and a small amount of boiled water. Bake at a temperature of 210 degrees for about 35 minutes (with the container closed with foil) and 12 minutes open.

Meatballs with cheese in the oven (with gravy)

Before you start cooking, there are a few things to note. For the meatballs you will need minced meat. It can be chicken (minced breast), beef, pork, or a mixture of both. To save time, it is better to take ready-made chilled minced meat (be sure to check for freshness), but if you wish, you can twist a whole piece of meat yourself.

The sauce (gravy) for the meatballs will consist of cream, milk and processed cheese. If desired, cream or cheese can be replaced with sour cream, then the result will no longer be creamy, but sour cream sauce.

Ingredients:

For the meatballs:

  • Minced meat – 800 g.
  • Onions – 2 pcs.
  • Chicken egg – 1 pc.
  • Cheese (hard) – 200 g.
  • A small loaf (or part of it);
  • Garlic – 2 cloves;
  • Ground coriander, black pepper and salt - add to taste;
  • Milk for bread;
  • Fresh parsley - optional;

For the gravy:

  • Liquid cream (any) – 250 ml.
  • Butter – 60 g.
  • Water – 250 ml.
  • Processed cheese – 100 g.
  • Flour (wheat) – about 30 g.
  • Oregano – 0.5 teaspoon;
  • Basil – 0.5 teaspoon;
  • Salt and black pepper - to taste;

How to cook

The first step is to divide a white unsweetened bun or some kind of loaf into pieces. 100-150 grams will be enough. Pour in milk and leave for a while until the bread softens. The volume of milk is at your discretion, you can limit it to 1-2 glasses.

Peel the bulbs, then place them in a blender bowl. Add a couple of cloves of garlic here. Lightly squeeze the bread and place it in a blender. And to these ingredients we will add a small bunch of fresh parsley. Grind well to a paste like this.

Place the resulting bread and onion mixture into a cup with minced meat. Beat in one chicken egg, add a mixture of peppers, ground coriander and 0.5 teaspoons of salt (or to taste). Mix thoroughly until smooth.

It is better to mix with your hands. For convenience, I recommend using gloves.

The minced meat has been stirred, and now it should be “beaten off”. Carefully take this whole mass with your hand, then slightly throw it over the cup so that the minced meat plops. We do this for a couple of minutes.

Chopping saturates the minced meat with air, making the meatballs more fluffy and soft.

The cheese should be cut into small cubes (100-150 grams, the rest for later). Both hard, semi-hard and softer varieties of cheese (Adyghe, for example) are suitable. It all depends on personal preference.

Now let's get back to the minced meat. Scoop a little with your hand, then carefully form and roll into a meat ball. We do the same with the remaining minced meat. As a result, you should get these identical, even meatballs. The size is not too small, but not too large either.

And now we will stuff them with cheese. Lightly crush the ball of meat with your hands, place a piece of cheese in the center, then crush the edges and re-form the meatball. The cheese must be completely hidden by the minced meat, otherwise it will leak out during the baking process.

Of course, you can immediately sculpt and add the filling, but then the meatballs may turn out to be different sizes. In this case, as you can see, everything looks perfect.

Cooking creamy cheese sauce for meatballs

Now all that's left to do is make the special creamy gravy. Yes, it doesn’t take a minute to prepare and doesn’t consist of 2-3 ingredients, but the result is worth it.

In a small saucepan with a thick bottom or in a saucepan, melt a piece of butter (60 g). If desired, you can use margarine or some kind of spread instead of butter.

Once the butter has completely melted, add the flour and stir thoroughly with a whisk until the lumps disappear.

After this, pour in about 250 ml in a stream. water. Bring to a boil, stirring constantly.

A minute after boiling, add liquid cream. Stir similarly with a whisk. Bring to a boil again over low heat. We are waiting for the sauce to become homogeneous and smooth. Like in the photo below.

Remove the saucepan from the stove. We put soft processed cheese there (which is spread on bread). Beat well until the cheese dissolves. Next, season with dried herbs, salt and pepper.

Filling and baking in the oven

After the final mixing, the filling can be distributed in the form with the meatballs. Gently pour hot sauce over each meatball until at least half covered.

We take the remaining piece of cheese, grate it on a fine or coarse grater, cover both the meatballs and the sauce with this cheese cap. Uniform layer.

Send to bake in an oven preheated to 170-180 degrees for 40-45 minutes, until fully cooked.

Time is up, the meatballs are browned on top. The sauce evaporated slightly, became a little thicker, and completely soaked the meat. The aroma of cheese, cream, and spices simply drives you crazy - it's time to try it!

This recipe will have boiled wide noodles as a side dish. As mentioned above, such meatballs go well with potatoes, buckwheat, rice, and anything else. When serving, you can additionally garnish with grated cheese and fresh chopped herbs (parsley and dill).

With garlic and herbs

For lovers of the spicy spice garlic, a simple and at the same time interesting recipe for meatballs is suitable.

The dish is prepared from simple ingredients:

  • minced beef – 600 g;
  • large onion;
  • a small stale bun soaked in milk;
  • salt, pepper, spices;
  • cumin;
  • heavy cream;
  • garlic;
  • hard cheese;
  • fresh greens.

In a food processor, all the products are combined one by one - minced meat, onions, spices, bread. When the mixture is slightly infused, meatballs are formed from it, laid out on a baking sheet and sent to the oven for 20 minutes (temperature - 190 degrees).

In a separate container, mix cream, chopped garlic with herbs and grated cheese product. The filling is sent to the meat balls, and the dish is cooked for another 30 minutes.

Meatballs in creamy tomato sauce

In order to prepare such a dish, you need to prepare the following ingredients:

  • minced meat in the amount of 0.5 kg;
  • three small onions;
  • one chicken egg;
  • medium fat sour cream in the amount of 250 grams;
  • tomato juice in the amount of 50 grams;
  • salt according to your own preferences.

Cooking time – 40 minutes.

Calorie content – ​​177 kcal per 100 grams.

Direct preparation of meatballs:

  1. Place the minced meat in a convenient container, add a chicken egg;
  2. Finely chop the onion and also add to the minced meat;
  3. Add salt, pepper and mix everything very thoroughly;
  4. Now you can start forming the meatballs. You should get small and neat balls that are laid out on a baking sheet;
  5. Next, move on to preparing the sauce. Chop one onion and fry in a frying pan greased with vegetable oil;
  6. Pour in sour cream and tomato juice, salt and pepper;
  7. Simmer for 10 minutes;
  8. Pour the prepared sauce over the meatballs, cover with baking foil and place in the preheated oven for 20 minutes.

Turkey in cream sauce

For children under one year old, toddlers and schoolchildren, the most tender turkey meatballs drenched in creamy gravy are ideal. The dish is good served with pasta or porridge - children eat it with pleasure and will definitely ask for more.

To prepare the food, you should stock up in advance:

  • minced turkey – 650 g;
  • rice – 100 g;
  • black pepper;
  • onions;
  • butter – 55 g;
  • salt;
  • carrots;
  • cream – 300 ml;
  • spices.

In a food processor you need to grind the poultry fillet, onion, add boiled cereal and spices to them. You need to mold small lumps from the mass and bake them in the oven.

Separately, onions and carrots are fried in a frying pan, then flour, butter and cream are added to them. After seasoning the sauce with spices, you can pour it over the slightly browned meat product and continue baking for 20 minutes. At the end of cooking, you can give the dish a beautiful golden hue by selecting the “grill” mode. Served warm.

Fish balls in cranberry cream sauce

To prepare you need to prepare:

  • minced fish in the amount of 0.5 kg;
  • two medium-sized onions;
  • two or three tablespoons of boiled rice;
  • spices to taste;
  • pepper and salt.

For the sauce:

  • low-fat cream in the amount of 150 ml;
  • vodka with a volume of 50 ml;
  • one tablespoon of cranberry jam;
  • one and a half tablespoons of cranberries.

Cooking time – 1 hour.

Calorie content – ​​288 kcal per 100 grams.

Step-by-step preparation of meatballs:

  1. To prepare the minced meat, combine all the necessary ingredients and mix well;
  2. Form small balls and fry in a frying pan until golden brown;
  3. Now the sauce. Pour the prepared cream into the frying pan over the meatballs. Heat for a few minutes;
  4. Add vodka and immediately cranberry jam and cranberries;
  5. You can’t stir, you can only shake the pan a little;
  6. Bring the sauce to a boil and simmer for five minutes;
  7. It turns out to be a very tasty and unusual dish.
