Preparation of compote with sterilization

Ingredients:

  • 1 cup sugar for a 2 liter jar;
  • whole peaches.

Preparation:

  1. Peaches, well washed with running water, must be placed in a jar, previously scalded with boiling water.
  2. Add a glass of sugar here. For people who prefer sweeter drinks, the amount of sugar can be increased to 1.5 cups.
  3. Prepare the pan for sterilization. To do this, pour in the amount of water necessary to cover 2/3 of the jar placed in the dish.
  4. The liquid should be brought to a boil, and then a soft cloth should be placed on the bottom of the pan (so that the heated bottom of the pan does not cause cracks to appear on the jar).
  5. A jar is placed on the fabric, into which boiling water should be added (up to the neck).
  6. The lid prepared for preservation is doused with boiling water and the jar standing in the pan is covered with it.
  7. Sterilization in boiling water takes place within 15 minutes, after which the jars need to be removed and rolled up using a preservation device.
  8. Cover the inverted jars with a cloth (blanket, towel) and leave in a warm place until the compote has cooled completely.

The rolled up jar must be shaken to check the seal of the lid. If drops of syrup appear on the surface, the lid must be tightened again.
