The good thing about cherries is that they can easily be combined with other fruits and berries. To add a new flavor to your compote, try adding some strawberries. The drink will be brighter and richer, and the variety of fruit notes will remind you of a warm and sunny summer!

Ingredients:

· Strawberries – 250 g.

· Sugar - to taste.

Cooking method:

Tip: Wormy fruits can be immersed in salt water for 40-45 minutes. Then the berries need to be washed again and placed in clean water again for another 10-15 minutes.

  • We also prepare glass containers in which the workpiece will be stored. We rinse the jars well in hot water along with soda. Let's start sterilization: put the containers in a cold oven and heat the cabinet to 100 C. Time 10-15 minutes for half-liter jars, 20-25 minutes for liter jars, and 30-35 minutes for three-liter jars.
  • Place cherries and strawberries at the bottom of dry jars. The container must be filled at least halfway. To make the compote richer, you can fill the jar to the very neck.
  • Fill the jars with purified cold water. When the required volume is known, pour the water into the pan, add granulated sugar and put the dishes on the fire. Bring the liquid to a boil.
  • Fill the jars again with the prepared hot syrup, cover with lids and place the future compote in a large container with hot water. Place a large basin or pan on low heat and sterilize the compote for 12-15 minutes.
  • At the end of cooking, tightly tighten the compote with boiled lids and leave it to cool at room temperature.

Composition and calorie content of cherries

The energy value of cherries is only 52–62 kcal per 100 g, depending on the variety. Moreover, it contains the most water (82-85.7 g) and carbohydrates - 10.6-16 g. The rest is proteins, fats (together - a little more than 1%) and a number of useful substances, which will be discussed below. In particular, cherries contain:

  1. Anthocyanins (250 mg per 100 g) are substances from the group of flavonoids. On the one hand, they are responsible for the red and purple color of the berries. Yellow cherries practically do not contain them. On the other hand, they have anti-inflammatory properties and are responsible for the intestinal barrier function, which helps prevent serious diseases.
  2. Coumarins are substances that have antispasmodic and antitumor effects.
  3. Carbohydrates – glucose, fructose. Moreover, 75% of carbohydrates are fructose, which is easily absorbed by the body without harmful consequences. Therefore, these berries can be consumed even by those who suffer from diabetes (of course, in small quantities). It has been proven that fructose improves the functioning of the pancreas.
  4. Pectins – normalize the digestion process and improve intestinal function.
  5. Vitamin C (15 mg) – responsible for blood circulation.
  6. Vitamin PP – good for vision.
  7. Tocopherol (or vitamin E - 0.3 mg) is an antioxidant.
  8. B vitamins – normalize the functioning of the nervous system and speed up metabolism.
  9. Iron (1.8 mg, or 10% of the daily value) - this element is necessary for the normal functioning of the hematopoietic system.
  10. Potassium (233 mg, this is more than 9% of the daily requirement) - needed to normalize blood pressure and strengthen the heart muscle.
  11. Calcium (33 mg) – necessary for strengthening blood vessels.
  12. Magnesium (24 mg) – has an antispasmodic effect.
  13. Phosphorus (28 mg) – necessary for normal metabolic processes, improves cognitive functions.

Thus, thanks to the vitamin composition, cherries will be useful for people suffering from iron deficiency anemia, pathologies of the musculoskeletal system, and dermatological diseases.

Strawberry and cherry compote for the winter

Juicy, aromatic strawberries go well with cherry fruits, so it is advisable to combine them in an assorted compote. The drink will contain 3 kilograms of cherries and only 500 grams of strawberries. The syrup will use not only 4 cups of sugar, but also 3 teaspoons of citric acid. For special connoisseurs of subtle taste, you can add a sprig of mint or a leaf of lemon balm.

Preparation:

  1. The considered compote of cherries with pits for the winter does not involve getting rid of their core, so the berries just need to be thoroughly washed. Rinse the strawberries well, keeping them in water for several tens of minutes. The leaves do not need to be removed.

  2. Immerse the prepared fruits in a jar, put mint leaves on top. Pour boiling water (1 liter) over the assortment and wait 15 minutes.

  3. From the drained aromatic water, cook a syrup consisting of sugar and citric acid. Pour it into a jar with fruit and berry harvest. Immediately seal with sterile lids, turn over and wrap in something warm.

  4. Bon appetit!

A simple recipe for cherry compote for the winter can also be supplemented with lemon or orange. To do this, in addition to cherry berries, you need to prepare citrus fruits by cutting them together with the peel into pieces of any shape. Combine the ingredients in a jar, add syrup and send for sterilization. The duration of this procedure depends on the volume of the jars. Standard 3-liter jars, which are most often used for storing compote, require 20 minutes of hot treatment. Delicious and healthy compote preparations for the winter!
