Georgian cuisine is famous for the rich taste and memorable aroma of its dishes. The finished chicken fillet has a delicate consistency and has a pleasant sharpness and piquancy.
Required ingredients:
- chicken breasts – 700 gr
- tomato – 350 ml
- sweet pepper – 1 piece
- white onion – 1 pc.
- carrots – 1 pc.
- adjika – 1 tbsp
- olive oil – 5 tbsp
- dry white wine – 50 ml
- chicken broth – 50 ml
- garlic - 8 cloves
- cilantro – 1 bunch
- Bay leaf
- salt
- ground pepper
Step-by-step instruction
- Cut the fillet into large pieces and fry in a frying pan in a small amount of oil. The heat must be strong so that the meat quickly forms a beautiful golden crust.
- Heat olive oil in a high-sided saucepan and add finely diced carrots, bell peppers, onions and garlic. Fry for 3 minutes.
- Then add the tomato, reduce the heat and leave to simmer for 5-6 minutes.
- To make the chicken in tomato more spicy and spicy, add bay leaf, adjika and a pinch of dried herbs.
- Pour white wine and chicken broth into the sauce, add salt and pepper and add pieces of fried fillet, cover and cook for 25-30 minutes.
- Serve with finely chopped fresh herbs.
Preparation
Chicken breast must be processed before cooking. To do this, you need to remove the skin from the chicken, remove fat deposits and veins. Remove seeds, if any. Rinse the fillets thoroughly under cold running water. Then dry with paper or waffle kitchen towels.
Cut the fillet into medium-sized pieces. Remove the peel from the onion and cut into small cubes.
Place a frying pan on the fire and heat the oil in it. Fry the onion in it until softened and barely golden in color, then add the chicken and fry together for 5 - 7 minutes until a light crust forms.
Stir tomato paste in a glass of water, add salt, pepper and other seasonings and herbs to the mixture. Pour in the liquid and leave on low heat. How long to stew the chicken depends on the amount of water. Usually 7-8 minutes on medium heat is enough. Don't forget to stir the dish because tomato sauce burns quickly.
Finely chop the garlic or pass it through a press and add to the meat. Stir with a wooden spatula, cover with a lid and turn off the heat. Let the chicken stewed in tomato sauce simmer for 5 minutes.

Required ingredients:
- chicken (thighs or legs) – 1 kg
- turmeric – 1 tsp
- salt – 1 tsp
- olive oil – 4 tbsp
- carnation – 2 flowers
- star anise – 1 star
- tomato paste – 4 tbsp
- red hot dried pepper – 3 pcs.
- sugar – 1 tsp
- shallots – 6 pcs.
- fresh ginger – 20 g
- garlic – 3 cloves
- coconut milk – 250 ml
- cinnamon – 1 stick
Step-by-step instruction
- Rinse the chicken pieces, dry with a paper towel, rub with a mixture of turmeric and salt and set aside for 15-20 minutes.
- Heat a frying pan well and fry the meat until crispy. Then reduce the heat and continue cooking the bird for another 20 minutes, turning the pieces regularly so that they do not burn.
- Soak dried red peppers in water for a few minutes and then remove the seeds.
- Grind the garlic, ginger, shallots and pepper in a blender. The ingredients should have the consistency of a soft paste.
- Heat 2 tablespoons of oil in a deep frying pan with a thick bottom, add chopped vegetables and spices, add cloves, star anise and cinnamon and fry over low heat for 3-4 minutes.
- Pour coconut milk and tomato paste into the frying pan, add sugar and, stirring, bring to a boil.
- Place pieces of finished fried chicken in the sauce, simmer for 5 minutes under the lid and serve immediately.

- chicken (broiler breed) 1 pc.;

- small onions 3 pcs.;

- tomato juice 1-2 tbsp.;

- flour (for breading) 2-3 tbsp;
- vegetable oil 4-5 tbsp. l.;
- salt 1 tsp;
- chicken spice mixture 1 tbsp;
- bay leaf 1 pc.;
- turmeric to taste;
- parsley, cilantro, red basil - optional.
How to cook chicken in a frying pan with tomato paste
At the preparatory stage, it is necessary to cut the medium chicken carcass into portioned pieces. To ensure that the chicken cooks quickly and is juicy, I recommend using broiler chicken. Cut off the wings first, then the legs. Cut the breasts into large pieces. After cutting, a skeletal body will remain; I do not use it in this dish. You can use the seeds to make broth for a small portion of soup. Sprinkle each piece of chicken with the spice mixture and turmeric.
Choose a wide, thick frying pan with high sides for cooking chicken in tomato sauce. Place the frying pan on the stove, heat it with the addition of a small amount of vegetable oil (3 tbsp. L). Roll the pieces of meat in flour and place in a hot frying pan. Fry until golden brown.
Grate one large carrot and chop the onion, send the vegetables to the chicken. Stir and they should fry together for about five minutes.
Now add salt to taste. Add the tomatoes cut into slices to the dish and cook for another 10 minutes.
Pour tomato juice into the pan and mix everything well, add bay leaf. Once the tomato sauce comes to a boil, reduce the heat to low and cover the pan with a lid.
Simmer the chicken in tomato sauce until done, about 20 minutes. If the sauce boils away quickly, add water or more tomato juice. Instead of juice, you can use more fresh tomatoes in this dish. To prevent tomato skins from interfering with the finished sauce, first immerse the tomatoes in boiling water for 2 minutes. Then remove the skin and chop the flesh. Since tomatoes give the finished dish a slightly sour taste, I recommend adding sugar to the sauce during cooking.
Chop fresh herbs; the more types there are, the more flavorful the chicken in the sauce will be. This time I used some green onions, red basil, parsley and cilantro. A few cloves of garlic can also be finely chopped and added along with the herbs.
Sprinkle the prepared herbs over the finished dish and stir. Cover the pan and let the chicken soak in the flavors for about 10 minutes. Serve the chicken in a deep dish with tomato sauce. If desired, make a side dish for this chicken in the form of buckwheat, rice or potatoes.
Chicken in sour cream and tomato sauce with garlic: recipe with photos

Chicken in tomato paste can also be cooked in the oven. To do this, we cut up the chicken carcass or take individual parts. Sprinkle chicken with your favorite spices and set aside to marinate.
For the sauce in which our chicken will be baked, mix 50 g. vegetable oil, 200 grams of sour cream or mayonnaise, 3-4 chopped garlic cloves, salt and 50 grams of tomato paste. Place chicken pieces marinated in spices on foil or in a sleeve, pour in the sauce and place in the oven. In an oven preheated to 200 degrees, the chicken will be ready in 35-40 minutes. - Then add salt, pepper, paprika and spices, mix thoroughly, reduce heat and cook for 15 minutes.
- Place the fried chicken in the sauce and simmer for 20 minutes.

Stewed chicken cooked in a slow cooker
Delicious stewed chicken in tomato sauce can be prepared in a slow cooker. The recipe is quite simple.
- about 1 kg of chicken (any parts or a whole carcass, divided into portions);
- 1 carrot;
- 2 cloves of garlic;
- 6 ripe tomatoes;
- 1 onion;
- 3 sprigs of thyme;
- 6 branches of cockerel;
- 6 sprigs of basil.
Wash the chicken pieces and dry. Rub the pieces with salt and sprinkle with pepper. Place the pieces in the multicooker bowl and turn on the “stew” program for 1.5 hours.
While the chicken is stewing, prepare the tomato sauce. To do this, peel the vegetables and chop the onions, carrots, garlic and tomatoes in a blender. You can grind it in a meat grinder or grate it on a fine grater. Lightly add some salt to our sauce. We collect herbs into a “bouquet” and tie it with thread.
