Cooking rules
- To make homemade canned food tasty, you need to choose and prepare the ingredients correctly. For canning in tomato juice, you should choose small, young, fresh cucumbers. If you only have large cucumbers, it is better to cut them into pieces first. Cucumbers can be cut into 1.5-2 cm thick circles or cubes.
- Before you start canning cucumbers, it is recommended to soak them in cold water, adding a little salt (literally, a pinch per liter).
- Next you need to prepare the second ingredient - tomato juice. You can buy ready-made juice, but you should choose an unsalted product or adjust the amount of salt in the recipe.
- The second option is to prepare a tomato filling. To do this, you can use a juicer, or pass the vegetables through a meat grinder and then grind through a sieve.
- The third way to prepare the filling is to dilute the tomato paste with water.
- You can cook cucumbers without sterilization. In this case, the method of two or three times filling is used. Cucumbers with spices placed in jars are poured with boiling water and allowed to stand for about 15 minutes. Then the water is drained and boiling water is poured in again and allowed to stand. The third time, the water is drained and boiling tomato juice is poured, to which salt and other seasonings have already been added.
- Vegetables, spices and herbs are used for flavor. You can put chopped garlic, bay leaves and allspice or black peppercorns in the jar.
Interesting facts: tomatoes contain citric, malic, and oxalic acids, so tomato juice has preservative properties and adding vinegar to the filling is not necessary.

Cucumbers pickled in tomato sauce for the winter without sterilization
This is a quick recipe that does not require sterilization. Interestingly, cucumbers retain their rich, fresh green color and have a loud crunch. If you like to crunch and gravitate toward healthy eating, I recommend this recipe, without sterilization.

- cucumbers - 2.5 kg
- water and tomato paste - 0.5 l
- table vinegar (9%) – 100 ml

- salt - 50 grams
- garlic - 3
- bay leaf and cloves - 6 - 9 sheets, peas
- parsley
Preparation:
- Cucumbers are prepared by cutting off their “tails.” Fill with water to the top for 3 – 4 hours. After soaking, the fruits are cut into several pieces.
- Banks are sterilized. Place parsley (a sprig), bay leaf, and cloves on the bottom of each.

- To prepare the marinade, take tomato paste, sugar, vinegar, salt, and water. You can pour clean water, or you can pour the water that was left after boiling in the pan. The marinade should boil, after which it should simmer for another quarter of an hour. Pour in cucumbers.
- The jars are rolled up and turned upside down until they cool completely. Store in a cool place, protected from light.
- The workpiece is stored very well, despite the fact that there was no sterilization. Taste and aroma are at the highest level. The spicy taste goes well with a slight sourness.

Cucumbers with tomatoes in tomato juice
You can prepare an assortment of cucumbers and tomatoes in tomato sauce.
Ingredients:
- small cucumbers - 1 kg
- cherry tomatoes or cream - 1 kg
- large tomatoes for juice - 2 kg
- garlic - 3-6 cloves
- salt and sugar to taste
- bay leaf and black pepper to taste
- vinegar (9%) - 1 tablespoon per 1 liter jar
Preparation:
- First soak the cucumbers in cold water, then wash them again and cut off the ends. If gherkins are used, leave them whole. We cut ordinary small cucumbers crosswise to make cylinders 1.5-2 cm high.
- Wash small tomatoes. We make several punctures at the stalk with a wooden toothpick. This is necessary so that the skin does not burst during heat treatment and the tomatoes look more attractive.
- Wash large tomatoes and cut into large pieces. Prepare the juice using a juicer or meat grinder. As a last resort, you can use a grater.
Advice! The resulting tomato mass can be additionally ground through a sieve to make it more homogeneous.
- Pour the tomato juice into a saucepan and put it on the stove, cook at low boil until the juice stops producing foam. As a rule, boiling for 5-7 minutes is enough. We do not add any seasonings to the juice yet.
- Place chopped garlic cloves in sterilized jars, add a bay leaf and a couple of black peppercorns. Then we lay the cucumbers and place the tomatoes on top. Pour boiling juice into the jars, cover with lids, which you remember to boil well.

Whole cucumbers in tomato sauce
The simplest option for preparing cucumbers in tomatoes, which everyone can always do. Simply place whole cucumbers in jars and fill with tomato juice. And although the recipe contains sterilization, it still remains easy to prepare. Further details and step-by-step photos.
Required Products:
- 1 kg of cucumbers, small ones are better, but how will it work out;
- 600 ml tomato juice;
- 5 cloves of garlic;
- 2 tablespoons granulated sugar;
- 1 level tablespoon of salt;
- 3 tablespoons vinegar 9%;
- peppercorns and bay leaf to taste.
Let's start cooking:
Let's prepare jars for preserving cucumbers in tomato sauce. I recommend using liter ones, as they are easier to handle, and you can eat an open piece faster, without tedious storage in the refrigerator under a nylon lid.
Wash the jars with dish soap or baking soda. Rinse first with hot running water, then with cold. You can further sterilize them with a little water in the microwave.
Rinse the cucumbers and soak for 15-20 minutes in ice water. Place in prepared jars without cutting off the ends. The laying of the cucumbers should be quite dense, but at the same time, do not forget to leave room for filling.
Peel the garlic, cut each clove in half. Place the spices - garlic, bay leaf and peppercorns - into the jars with the cucumbers, distributing them evenly.
Bring about 1 liter of water to boil (for the above quantities of ingredients). Fill all the jars with cucumbers with boiling water and leave for 15 minutes, covering with sterile lids, but without rolling up. Then drain the water and distribute the boiling tomato sauce into each jar.
The filling is prepared as follows: bring tomato juice to a boil, add salt, sugar, wait until the crystals dissolve, then remove from heat and pour in vinegar. You won't need as much vinegar as usual, because tomato juice also contains acid. Pour the marinade over the cucumbers, then sterilize the filled jars in boiling water for 10-15 minutes. Sterilization times are indicated for liter jars. Boil the lids that were removed from the jars after filling with water in a ladle for a minute. Roll up with re-sterilized lids, wrap in a warm towel and leave until completely cool. Then put it in the pantry or cellar until winter.
As you can see, it’s not at all difficult to roll up whole cucumbers in tomato juice for the winter. You can also use larger capacity jars: two or three liters. Increase the quantity of products and sterilization time accordingly. So, for a three-liter jar of cucumbers in tomatoes, the sterilization time will be 30-35 minutes. In addition to garlic and bay leaves, you can add dill umbrellas to containers with cucumbers, then the preparation will turn out more fragrant and appetizing.
You can also roll up whole cucumbers in ketchup. Any ketchup will do, and I will give you the proportions for turning it into tomato sauce in the next recipe.
