1How to choose the right pollock fillet?

The taste and beneficial qualities of the prepared dish are affected by the freshness and freezing conditions of the pollock. If you buy fish that has not been stored correctly, without following sanitary standards, you will not be able to prepare a tasty dish. When choosing fillets you should pay attention to:

  • transparency of the ice (if the ice is cloudy, this indicates that the fish has been defrosted 2 or more times);
  • the length of the carcass should exceed 20 cm (if the carcass is smaller, this means that the individual is still small and has practically no taste);
  • the color of the fillet must be white (it is not acceptable for the carcass to have yellow or pink spots);
  • pay attention to the temperature of the refrigerator (fish should be stored at a temperature of no more than -19°)
  • the smell of the carcass should not be sharp, but slightly noticeable (if you smell a characteristic fishy odor, it is strictly forbidden to buy such fillets);
  • the ice crust should not exceed the thickness of the fillet itself.

  4. In a hot frying pan, fry finely chopped onion until golden brown and combine with rice. Mix thoroughly until smooth.
  5. We begin to spread the resulting mass onto the fillet pieces on the side where the wider part is. We wrap them and fasten them with a toothpick or thread so that the filling does not come out.
  6. Place the rolls vertically in a baking dish, pour a little cream on top and put them in the oven, preheated to 180 degrees for half an hour.
