Step 1. The first thing you need to do is prepare the cereal. We sort the barley from pebbles and other debris, rinse it with water, then fill it with clean cold water and leave it for 8-10 hours. To save time, this is usually done in advance. We soak it from evening to night, and the next day you can immediately start preparing the dish.

Step 2. Cut the pork meat into small pieces. In cubes or cubes, slices - at your personal discretion.

Step 3. Clean and finely chop the onions. Also grate three large carrots. Well, you can immediately peel the seeds and finely chop the bell pepper.

Step 7. The meat changed color, the vegetables became softer and turned red in places. At this stage, add spices. Add turmeric, ground sweet paprika, salt to taste and add a teaspoon of garlic powder for additional flavor. Stir, fry for 2 minutes, and then turn off the heat.

If you don't like turmeric or any other spice on this list, you don't have to add it. In this case, use the spices that you like best. You can take a closer look at the ready-made mixtures, which have names: “for meat”, “for chicken”, “for pork”, etc.

Step 8. The pearl barley was infused in water in advance and noticeably swollen. Drain off the remaining water. Distribute the cereal along the bottom of the mold. Place the roasted vegetables and meat evenly on top.

Step 9. Carefully pour in about 600 milliliters of hot water. And spread out the pieces of butter.

The oil is here for the aroma and additional juiciness and richness of the pearl barley. As they say, you can't spoil porridge with butter. But if you don’t want to, you can bake it without oil, it will be less caloric.

Step 10. That's it, now cover the top tightly with foil and place in an oven preheated to 180 degrees for about 50-60 minutes. Everyone's oven is different, so be guided by your own conditions. But no less than 40 minutes for sure, because... pearl barley requires a long heat treatment compared to buckwheat.

Time is up, note that all the liquid has been absorbed into the cereal. Vegetables and meat are well steamed

Before serving, decorate with fresh chopped herbs, in this example we used green onions, but dill, parsley, basil, cilantro, etc. would also work.

  • 350 g pearl barley;
  • 1 carrot;
  • 1 onion;
  • 6 chicken thighs;
  • 3–4 cloves of garlic;
  • 1/2 tsp. salt for barley and 1/2 tsp. salts for marinating thighs;
  • 1/2 tsp. curry;
  • 1/2 tsp. sweet paprika powder;
  • 1/2 tsp. black pepper;
  • 4 tbsp. l. vegetable oil for marinade and 2 tbsp. l. for greasing the baking sheet.


  1. Soak pearl barley for 10 hours, and then rinse with warm water.

  4. Place chicken thighs on top of the cereal and vegetables and pour water onto the baking sheet.
    There should be enough water to cover the chicken pieces halfway. You can use the same amount of milk instead of water
  5. Bake barley with chicken at 200°C for 40–50 minutes.
    Then turn off the oven and let the dish stand in it for another 15 minutes. Pearl barley turns out very tender, and the thighs are spicy and juicy

If desired and for convenience, they can be cut into 2 parts. Another trick is to pour vegetable oil over the chicken, about 1-2 tablespoons, then the seasonings will be quickly and evenly distributed. But you don’t have to do this if you wish. Cut the onion into cubes, grate the carrots (or you can cut them into cubes).

3. In a heated frying pan with the addition of 3 tablespoons of oil, lightly fry the carrots. Drain the water from the pearl barley and add it to the pan with the carrots. Fry for a few more minutes until the cereal has a slight nutty smell.

4. Sprinkle everything with cumin, add tomato paste and stir.

5. I will cook the dish itself in an old duck roaster and all subsequent frying will take place in it. Pour the remaining oil into the duck pot and fry the onions. When it turns golden, add the garlic cloves, and after another minute, add the wings. Fry everything together for another 5 minutes.

6. Add barley to the duck pot, shake everything (so that the barley is evenly distributed), pour in hot water (or broth), bring to a boil, turn the heat to low and simmer under the lid for about 40-50 minutes until the cereal is ready.

7. After about half an hour, you need to look under the lid - if there is no liquid left at all, and the pearl barley is still a little hard, then add a little water. The specified amount of liquid was enough for me, and the barley was cooked in 45 minutes.

8. The aromatic dish of pearl barley with chicken wings is ready. Instead of chicken, you can use beef, it also turns out very tasty.
