  • boiled water - 110 ml;
  • ghee - 170 g;
  • granulated sugar - 150 g;

Time required: 1 hour 15 minutes.

Calories: 300 kcal.

  1. Mix milk and cocoa until smooth in a deep glass bowl. Pour all the granulated sugar into a saucepan and pour in the melted butter and water.
  2. Turn on the lowest heat and, stirring constantly, cook for 10 minutes. The sugar should completely dissolve.
  3. When the liquid part is ready, pour it in a thin stream into the bowl with the remaining ingredients. Mix everything carefully and very thoroughly so that you get one mass.
  4. Let it cool slightly and then put it in the refrigerator.
  5. Ideally, the dough should chill for 3-4 hours, but you can chill it for 30 minutes. The longer it sits in the refrigerator, the easier it will be to make some sweet figures.
  6. Pinch off small pieces from the ball of dough. Roll each piece into a flat cake and place hazelnuts in the center. Roll the cake into a ball so that the hazelnuts are not visible.
  7. Grind the walnuts in a coffee grinder until powdery. Roll each ball in walnut crumbs.
  8. You can also use cocoa for dusting.

Those fudges that remain are stored in the refrigerator in a closed container. Their shelf life is long (several weeks), but it is better to eat everything in the first 7 days and then cook fresh.

Preparation

1. Remove the butter from the refrigerator in advance to soften it. You should not put it in the microwave, as it will melt a lot and become liquid. In this recipe, it is not advisable to replace butter with margarine. Transfer the pieces to a deep container. Sift the powder through a strainer into a bowl with the oil. For whipping you will need a mixer. Beat on medium speed for 7-10 minutes until the oil mass becomes fluffy and the powder is completely dissolved. At this step, you can add a pinch of vanilla powder or ground cinnamon.

2. Sift the milk powder through a sieve to remove any lumps that have formed. Add in parts to the butter-sugar mixture. Mix immediately with a spatula. Continue until all the milk has been added.

3. The result is a plastic mass, similar in structure to plasticine. Pour in some milk and stir with a spatula.

4. Use a spoon to scoop out a little candy mixture and form a ball the size of a quail egg. From this amount of dough you get 18-20 candy blanks.

5. Pour sifted cocoa into a small deep container. Dip each ball into powder and roll on all sides. Repeat the breading procedure twice, since after the first rolling, the shell becomes wet under the influence of the incoming ingredients. Instead of cocoa powder, you can use coconut, waffle or biscuit crumbs for breading.

1. “Dream” balls - a fantastic no-bake dessert

It turns out much tastier than store-bought sweets!

Products:

  1. Vanilla crackers – 150 gr
  2. Milk – 100 ml
  3. Condensed milk - 3 tablespoons
  4. Cocoa - 2 tablespoons
  5. A pinch of vanilla
  6. Oil – 50 g
  7. Chopped nuts - optional
  8. Sugar - 2 tablespoons
  9. Liqueur - 1 tbsp (optional)

For the glaze:

  1. Chocolate – 100 gr
  2. Oil - 1 tbsp
  3. Sour cream - 1 tbsp

How to make dessert without baking:

  1. Grind the crackers with a blender and add cocoa, mix.
  2. Bring the milk to a boil and cool slightly, then add butter, sugar and vanilla.
  3. Stir the mixture until the sugar dissolves.
  4. Combine the milk mixture with the dry mixture, add condensed milk, liqueur and add nuts, mix well.
  5. Place the mixture in the refrigerator for 1 hour.
  6. After the allotted time, remove from the refrigerator and form small balls with a teaspoon.

2. Take a ladle, it is better if it is made of stainless steel than enameled. In a ladle, combine sour cream and sugar and a small piece of prepared butter. Place over medium heat and bring to a boil while stirring constantly. First, small bubbles will appear on the surface. You need to stir constantly and do not leave the stove.

3. After a while, the mixture will look like condensed milk. Continue stirring to prevent the mixture from burning on the bottom. Very soon our future toffees will change color and become thick. If you want a darker color, cook longer. Stirring will become more difficult, but you need to increase the intensity.

When you are happy with the color of the toffee, remove it from the heat and add the butter. The oil must be intensively mixed into the composition.

It should be this thick. dark mixture. It needs to be quickly poured into molds or poured onto a flat surface. You must first grease the molds and surface for hardening with butter.

You can use a silicone candy mold or a glass baking dish. You can use whatever utensils you have. If you pour the toffee not into molds, but onto a flat surface, then while the toffee mixture is still warm, make cuts with a wet knife to make it easier to cut into pieces later.

Now we need to leave the toffee for a while to harden. A little later we will free them from the molds and divide them into portions. From this amount of products you get 260 grams of ready-made toffees.

  1. Heat water in an iron saucepan over medium heat. Chop the butter into pieces and throw into boiling water. Wait until it completely dissolves. Pour in granulated sugar.
  2. It is worth considering that if dates are used as a filling, the resulting dish will be very sweet, so you can reduce the total amount of sugar.
  3. Once all the sugar has dissolved, pour the resulting syrup into a glass bowl. Allow to cool to room temperature.
  4. Fry the peeled peanuts with oil. If the nuts were in the peel, remove it after roasting.
  5. Grind the peanuts in a coffee grinder or blender.
  6. Divide the coconut pulp into 2 parts and fry one of them in a frying pan until golden brown.
  7. Pour boiling water over dried apricots and raisins and chop with a knife or in a blender.
  8. Sift the milk into the cooled syrup. Mix everything with a wooden spoon until a homogeneous mass is formed. The consistency of the mixture should be thick like sour cream.
  9. Add dried fruits, peanuts and unroasted half of the coconut to the dough. Place the bowl in the refrigerator for 15 minutes.
  10. Roll the cooled mixture into balls and roll each of them in fried chips. Serve with hot drinks.

This dish can be stored in the refrigerator for up to 30 days, just place it in a container with a lid.

Proper dilution of milk powder

To obtain a quality product, it must be properly diluted. So how do you dilute milk powder so that it tastes like natural milk?

The most important thing is to use only warm water during the dilution process. If you take boiling water, the milk will simply boil and form a lot of lumps. Cold water is also not recommended. In this case, the milk will not dissolve enough and will leave pieces of concentrate. The best solution is to take boiled water and cool it to room temperature.

Required proportions:

  • 200 ml liquid;
  • 5 teaspoons (25 grams) powder.

Cooking process:

  1. Take a deep bowl and add the required amount of milk powder.
  2. From all the water that we calculated according to the proportion, pour 50 ml. It is necessary to pour in a thin stream and stir constantly to avoid the formation of lumps. Then pour out the remaining water and mix our milk thoroughly.
  3. Once the mixture is ready, leave it on the table for 10-15 minutes. This must be done so that the protein defect completely swells. After this, our product is ready for use. Thus, we prepared milk with 2.5% fat content.
  4. If you want to change its fat content, simply vary the amount of dry powder up or down by the amount of water.

When using this milk to prepare dishes such as porridge, pancakes or buns, you do not need to dilute the milk with the full volume of liquid as described above. It will be enough to pour a little water into the powder, stir until the lumps dissolve, and add the rest of the liquid as needed for your future dish.

How to dilute it with water for human drinking and other purposes?

In addition to maintaining proportions, it is necessary to adhere to the technology of the milk recovery process :

  1. the required amount of product is determined and the volumes of components (water and powder) are calculated;
  2. water for recovery is heated to a temperature not higher than 60 °C (optimally - 40 °C);
  3. the powder is poured into a deep container;
  4. water is poured gradually, the composition is continuously stirred, but not too intensively;
  5. Stirring is carried out until the component is completely dissolved;
  6. the finished milk is left for ten minutes to infuse and finally dissolve the solid particles.

Pancakes

For example, to make pancakes, the powder does not even need to be diluted in water. It’s more convenient to add the necessary ingredients (salt, sugar, eggs) and mix everything well. Only then can you add warm water to the mixture.

You will need 2-3 eggs, a pinch of salt, a few tablespoons of sugar to taste and 5-7 tablespoons of milk powder. After stirring, pour in 300 ml of water. Again, add water to the mixture, but not the other way around. Gradual addition of water and parallel stirring results in a homogeneous mass without lumps.

Then add 1-2 cups of flour to the mixture and mix everything again until smooth. At the end, add more vegetable oil. The classic pancake recipe is ready. Each housewife has her own recipe, so parts of the components can be changed as desired.

Porridge

To prepare porridge with milk, when determining the proportions for dilution, you need to proceed from the final fat content of the finished product. It happens that girls do not have their own milk for feeding, or the mother simply decided to stop breastfeeding. Therefore, powdered milk helps solve the problem, because there is nothing harmful in it. And this is convenient in principle, since the powder can be stored for a long time.

  1. Let's prepare the necessary ingredients for dilution: milk powder and a glass of clean drinking water. If we want to get a larger amount of the finished product than one glass of milk, we increase the proportions for dilution accordingly. We pre-boil the water and cool it to a temperature of about 50 degrees.
