Salad No. 1. With sorrel, grilled peaches and feta.

You need (for 1 serving): 10g sorrel 50g peach pulp 50g feta or cheese 1 teaspoon liquid honey 1 teaspoon balsamic vinegar 2 tbsp. spoons of olive oil a pinch of freshly ground pepper Cooking time: 10 minutes.

This salad has a wonderful combination of sour greens, sweet peach and salty cheese, which is why I suggest not replacing anything. If you take a regular salad instead of sorrel, or cream cheese instead of salty cheese, it will turn out completely differently. You can add nuts if you like, so they won’t be superfluous.

The amount of greens is again in grams (I will always write this way, be guided by yourself - like more herbs in your salad, add more). In the picture above there is just 10g of sorrel, so I think you understand the size of the bunch.

Wash and dry the sorrel.

Remove the pit from the peach and cut the pulp into slices.

Fry in a dry frying pan on both sides, 30 seconds on each side. The fire is strong. If you are still afraid that the peach will burn, spray the frying pan a little with vegetable oil.

It is advisable to take liquid honey, but if you, like me, have a solid honey, then hold it a little over steam (in a water bath), it will melt. But you can’t heat honey too much, it loses its beneficial properties.

In a separate bowl, mix honey, balsamic vinegar and olive oil. This will be a gas station.

Place sorrel leaves on a plate, and slices of fried peach on top.

Crumble the cheese, pour over the dressing, add salt (I don’t add salt, there’s plenty of it in the cheese) and pepper.

What you need (for 1 serving): 10g sorrel 50g lightly salted salmon 50g radishes (2-3 pieces) 1 tbsp. spoon chopped green onions 1 tbsp. spoon of sour cream 1 tbsp. spoon of olive oil Cooking time: 10 minutes.

Cut radishes into slices, fish into thin slices.

Grind the green onions in a mortar and add a pinch of salt.

  7. We thoroughly rinse the sorrel under running water and cut off its stems; we won’t need them. We cut the sorrel leaves as desired. Sorrel strips will look very good in soup.
  8. Place the greens in the pan and cook for another 4-5 minutes.
  9. Meanwhile, crack all the eggs into a bowl and beat them well with a fork. You can also boil eggs and grate them.
  10. Mix all ingredients in a saucepan and add eggs.
  11. It's time to add salt and pepper to the almost finished dish. Don't be afraid to add some of your favorite seasonings or herbs to it.
  12. Bring the liquid in the pan to a boil, taste the potatoes to see if they are done, and remove the soup from the heat.
  13. This dish can be served either hot or cold - in any case, sorrel soup will be tasty and unique in its own way.

  • young green onion - 100 grams;
  • parsley and dill - 100 grams;
  • olive oil - 1 tablespoon;
  • sour cream - 3 large spoons;
  • vinegar - 1 small spoon;
  • spices.
  1. Wash the sorrel, dry it and cut it into strips.
  2. Dry the washed greens and onions and finely chop them.
  3. Mix greens and sorrel and sprinkle with vinegar.
  4. Mix sour cream with olive oil and add spices.
  5. Place the mixed sorrel and herbs on a plate.
  6. Pour the dressing over the top, mix gently and serve immediately.
  7. You can decorate with slices of olives or cucumber.
