Simple homemade buns with sugar - step-by-step recipe

Recipes for kefir buns with sugar

As you know, yeast or fermented milk products add fluffiness to baked goods. After all, as a result of activation, they form many bubbles and the dough literally “grows.” And if you combine yeast and kefir, the buns turn out doubly fluffy.

Ingredients:

  • A glass of warm kefir;
  • Half a glass of vegetable oil;
  • A pack of dry yeast;
  • Granulated sugar and salt to taste;
  • 3 cups flour.

Use measuring glasses of the same capacity, approximately 250 grams.

  • Chalked cinnamon to taste;
  • Sugar for sprinkling;
  • 3 tablespoons of milk.

Preparation:

1.Pour kefir into a bowl. Mix salt (about half a teaspoon), a tablespoon of granulated sugar (with top) and yeast. Pour in the oil and add the sifted flour. First, stir comfortably with a spatula. When this becomes impossible, switch to kneading with your hands.

2. The dough should be elastic, soft and pliable. Place it in a small bowl, cover with a lid and leave in a warm place for an hour.

3. Grease your hands with vegetable oil and knead the risen dough. Divide it into 16-18 equal pieces.

4. Roll each of them into a flagellum and “tie” it. Place the finished products on a greased baking sheet, loosely to each other.

5.Add about a teaspoon of sugar to the milk and completely dissolve it. Grease the buns. Separately, mix a teaspoon of cinnamon and 3 teaspoons of granulated sugar in a dry bowl.

6.Sprinkle the buns with the dry mixture. Turn on the oven to heat to 180 degrees. Meanwhile, the baking tray with the products will rest on the table. This will make the baked goods even more fluffy. Then place them in the oven for 15 minutes until browned.

Puff pastry buns with sugar

The preparation of already simple buns can be simplified by using store-bought puff pastry. After all, the lion's share of the time in this matter is taken by kneading the dough. And buying ready-made allows you to prepare buns even faster.

Ingredients:

  • A kilogram of yeast puff pastry;
  • A pinch of salt;
  • Granulated sugar to taste (about 150 grams);
  • 60 grams of butter (soft);
  • Ground cinnamon to taste (50 grams).

Preparation:

1. The dough, if it is frozen, must be completely defrosted and then rolled out into a thin layer, no more than 5 millimeters thick.

2.Lubricate the surface of the formation with soft oil. Sprinkle evenly with sugar and then cinnamon. Can be smoothed with a dry palm. Also sprinkle a little salt to add contrast to the taste.

3. Roll up a tight roll. Press it down a little with your hands, without deforming the roll, to release all possible air bubbles.

4.Cut it into pieces of the same size. You can move the top layers apart to create a beautiful rose.

Important!

The recipe for buns with sugar is standard, so if you have a desire, you can at this stage prepare to add some interesting twist to the dough. First of all, we are talking about citrus zest or nut dust - grate the first on a fine grater, make the second using a coffee grinder.

Dough

Did you know? The time for proofing the dough can be reduced by turning on the oven, opening the door of the device and placing a bowl of your dough on it. Of course, it is better not to carry out such a procedure in the summer, but in winter - please. Just try to make sure that the dough does not “overstand”; doubling the original volume will be enough for you.

Assembly

Important!

It would be worth mentioning that the figures you make can be either simple, unpretentious shapes or complex ones made using special tools - this is how “roses” are formed from a blank.

I myself recommend using your imagination

during this fascinating process, and also try to make double sweet buns with a layer of jam, condensed milk or jam - after all, you don’t have to make all the buns the same!

Bakery

Made,

The simplest sugar buns are ready to satisfy your slight hunger in the evening and provide a good boost in the afternoon. For those who are not satisfied with decoration in the form of powder, I can recommend a delicate protein glaze, which should be applied to the items while they are still warm.

Take one protein, pour it into a cup and add two tablespoons of granulated sugar. Then manually grind this mass until white, without using a blender, as it will beat the glaze too fluffy. Cover your buns with sugar with this mixture and wait until the glaze hardens, and you can safely serve the delicious treats with tea or coffee!

Cooking buns

For this recipe for sugar buns, regular yeast dough is kneaded - there is no difficulty in this. First, mix the yeast and a tablespoon of sugar. Add the heated milk there, stir a little and leave so that the yeast dissolves and begins to ferment a little - this will be noticeable by the foam that appears. Then in a separate bowl mix the remaining sugar, vanillin, salt, two eggs and melted, well-cooled butter. Mix everything well with a whisk.

We add the yeast that has already risen to this mass, and then pour it all together into the pre-sifted flour. We begin to mix the dough, adding a little flour if necessary. When the dough stops sticking to your hands, form it into a bun and cover with a napkin. Leave in a warm place for an hour for it to rise. The dough needs to be kneaded, formed into a rope and divided into equal parts.

Roll each piece into an oval shape. Brush the top of the dough with butter and sprinkle with sugar. Pinch the edges of the long side and then roll it up. Make a deep cut in the center with a knife. Open its edges to make a heart. Form all the buns in this way. These buns need to be placed on a baking sheet.

When baking, it is not advisable to use parchment paper, since the leaked sugar will stick to it, and the finished products will be difficult to clean from it. Place the formed but not yet baked buns on a greased baking sheet, cover with a cloth napkin and leave for about half an hour until they rise. After this, place the baking sheet in the oven and bake at 180 degrees for about half an hour. The finished buns can be lightly greased with melted butter.

The secret of cooking

Crumble the yeast a little and put it in a bowl to prepare the dough. Add heated water and melted butter, an egg and mix everything well. Add sugar (one tablespoon), half a teaspoon of salt and stir again. Add flour in two steps. After the first fall asleep, you can mix with a spoon, but after the second you will have to switch to using your hands.

Knead the dough well to release as much gluten as possible from the flour. When it stops sticking to your hands, form a ball and place it back into the bowl. Cover with a towel and place in a warm place. When it more than doubles in size, you can begin to form buns. Divide it into two parts, roll it out to about 5 mm thick. Grease the surface with oil and sprinkle with sugar. Form the flatbread into a roll and cut it into equal pieces.

Cut each part lengthwise, without reaching the end, and spread it apart like an open book. Place the buns on a baking sheet and leave for a while to rise. Then brush them with beaten egg and milk and bake until golden brown. Sugar buns made from yeast dough are ready.

Buns in the form of hearts

It's no secret that homemade buns with sugar from yeast dough can be made in different shapes. Most often, buns are shaped like a heart. To do this, each part of the dough must be rolled out into a flat cake with the diameter of a plate (22-24 cm in diameter). Grease the resulting cakes with vegetable oil, and generously sprinkle a mixture of ground sugar and cinnamon on top. There is usually a tablespoon of filling per bun. But its quantity can be changed. It all depends on your taste preferences. The bun should be sweet, so don't skimp on the filling. If you don't like cinnamon, you can omit it. The filling can be lightly pressed into the surface of the dough with a rolling pin. This will prevent sugar from spilling out of the bun when cutting.

Each piece with filling is rolled into a roll. To get a beautiful heart, you need to fold the dough tube in half and squeeze the edge with your fingers. Next, place the resulting loop on the side surface and cut (not all the way through) lengthwise with a knife. Next, turn the dough out and form a heart-shaped bun. Now all you have to do is bake delicious buns with sugar from yeast dough.

Heart buns with poppy seeds and sugar

Those who love baking with poppy seeds should try making poppy seed buns. You can use any yeast dough, rich or not. You can make it with kefir - it will be very fluffy and tender. The most important thing is to prepare the poppy seed filling correctly. To do this, dry poppy seeds are soaked for several hours in cold (boiled) water. Then you need to drain the water well, grind the grains, then add sugar and grind again. It turns out a very tasty sweet poppy seed filling.

So, we divide the ready-made (or purchased) yeast dough into equal pieces approximately the size of a fist.

Roll out on a board, grease the dough with butter or vegetable oil, and put one or two tablespoons of poppy seeds grated with sugar on top. Then you can roll the workpiece into a roll. Wrap the roll in half again so that one part covers the other, make a cut and open it. You will get a bun in the shape of a heart. Fill a baking tray greased with vegetable oil with buns, hold for a while so that the buns rise, then put in the oven and bake for about half an hour at 170 degrees. Let the finished products cool slightly and serve with milk, coffee or tea.
