Cherry jam with cocoa and chocolate. Cherry jam in chocolate

    When planning to store the preparation until winter, select only good-quality cherries - rot, worms, and mold will speed up the fermentation process and homemade jam will soon spoil. Before heat treatment, we carry out a traditional “rite”: we calibrate, wash in cold water, pick off the stalks, additionally rinse and dry, laying them out on a woven or paper towel.

    If desired, remove the bones and find a convenient device for this simple manipulation. There are often recipes for cherry jam with pits - whole berries in rich chocolate syrup are no less tasty, do what you think is right. At least the second method is the simplest and most universal.

    The next step is a recommendation. If you have difficulty making caramel, use the traditional method with cherries: sprinkle clean berries with granulated sugar and leave for 2-4 hours at room temperature until maximum juice releases. I suggest enhancing the aroma with caramel, which imbues the delicacy with dried notes - perhaps you have ever tried sun-dried cherries? In southern villages, fresh stone fruits (plums, apricots, cherries) are laid out in direct sunlight, sometimes right on the roof, and kept for a week or longer until they become shriveled and dehydrated. Dried cherries and other fruits are stored for a long time, have a concentrated aroma and are good in baking. Well, this cherry jam takes on a similar taste. First, pour into sugar, partially heat until brown and liquid consistency. We turn it over and do not allow it to burn (otherwise an unpleasant bitterness will appear). Everything takes about 3-4 minutes.

    Add pitted cherries (or with pits, as you decide). Sometimes the caramel parts harden, don’t worry, the cherry juice will dissolve everything during further cooking. Mix.

    Boil, reduce heat and, stirring from time to time with a wooden spoon/spatula, boil for the first 10-15 minutes. Set aside and cool. We repeat the action 4-5 times - that is, boil, cook for 10-15 minutes, cool and boil again... This principle is necessary so that the cherries do not boil in the puree, become thoroughly saturated with sweet syrup and become “glassy”.

    When cooking various berry and fruit jams, sticky foam often forms on the surface; it is removed. In my example, the seething foam disappeared and there was nothing to remove. So, after five approaches with cooking and cooling, the composition is dark dark brown, almost black, the smell is already fragrant, and the consistency is thick and viscous.

    Since Cherry jam in chocolate, in addition to cherries, implies the presence, taste, and aroma of chocolate, we add the last components. Throw in a portion of high-quality cocoa powder. The dosage is adjusted to taste, but at least 1 tbsp is required. l with a slide so that the chocolate “background” is felt.

    Next we lower the dark chocolate (the higher the percentage of cocoa beans, the better). You can also dissolve large pieces of chocolate bars/bars, but by pressing shavings through a grater, the time will be reduced to a few minutes. Stir thoroughly, remove from the sides of the container, bring to an active boil for the last time and, after boiling for 5 minutes, remove from heat.

    Fill sterile jars, seal tightly and cool. Then we transfer it to a cool room.

  • Dark chocolate - 100 grams.

How to make Cherry in Chocolate jam? very simple:

Cherry in chocolate jam with cognac - step-by-step recipe

“Drunk” cherries with a coffee taste will evoke a whole range of feelings in you. Perhaps not everyone will like it, but this delicacy will not leave anyone indifferent. This recipe has taken root in my family, and now I try to make more of this dessert. We ourselves enjoy it with tea, and I also like to put the jam in beautiful jars and then give it to friends with great pleasure.

We will need:

  • cherry – 1 kg
  • sugar - 500 gr.
  • orange - 1 pc.
  • rum or cognac - 50 ml
  • cocoa - 1 tbsp. l.
  • dark chocolate - 100 gr.
  • pectin - 20 gr.
  • cinnamon - a pinch

Cooking step by step:

Step 1.

We will need pitted cherries. Therefore, you will have to work hard. We wash the berries, dry them a little and remove the seeds. There are special devices for this. But if this does not happen, the most convenient way, in my opinion, is an ordinary hairpin. We deftly insert the rounded end into the berry, pry up the seed and violently pull it out of the pulp. Place all the cherries in a deep saucepan.

Step 2.

Cut the orange in half and squeeze out the juice. Mix orange juice with sugar, cognac or rum.

I intentionally use half as much sugar as berries, since chocolate will add the desired sweetness to the jam.

Step 3.

Pour orange syrup over cherries in a saucepan. We leave all the contents alone for 5-6 hours, or even better, overnight. Let the berry give up its juice.

Step 4.

During this time, the sugar will not completely dissolve. Therefore, put the pan on low heat and heat it slowly, stirring, until the sugar grains completely disappear. Bring the contents to a boil and cook over low heat for another 10 minutes.

Step 5.

Now let's begin the magic of giving our delicacy a chocolate taste. Dark chocolate is best. We grate it on a fine grater, add a little cocoa powder, cinnamon and mix with cherries. Cook for 5 minutes, stirring continuously so that all ingredients are thoroughly mixed and the syrup becomes viscous and homogeneous. A delicious aroma immediately spreads throughout the kitchen.

Step 6.

Before finishing cooking, add pectin to thicken. You can do without it if you don’t like thick jam. Stir everything well and cook for a couple more minutes.

Step 7

We put our drunken cherries into prepared sterilized jars and close them with lids.

I am sure that you will not be able to resist the temptation to try this amazing delicacy right away. The jam keeps well all winter, unless, of course, it miraculously evaporates before the start of winter.

Candies with cognac

Chocolate covered cherries go well with the taste of this noble drink. That's why we offer you a simple recipe for a sweet treat. Stock up on the following products for him:

  • Dried cherries - 15 grams.
  • Cognac - 50 ml.
  • Cocoa - one tablespoon.
  • Dark chocolate - 150 grams.

If you want to make these sweets for children, then replace the cognac with juice. So, how to make “Cherry in Chocolate” candies?

  • Pour the alcoholic drink over the berries and place them in the refrigerator for a day.
  • When the specified time has passed, pour the cognac into a separate bowl.
  • Break the chocolate into pieces and melt in a water bath. You can also use a microwave oven for this purpose.
  • Prepare small silicone molds and then fill them halfway with melted chocolate.
  • Place the berries in them, pressing each one inward.
  • Fill the molds completely with the remaining chocolate.
  • Place the candies in the refrigerator for half an hour.
  • Lubricate the finished treats with cognac and let them dry.

Place the candies on a plate and sprinkle generously with cocoa powder.

World Chocolate Cherry Day

World Chocolate Cherry Day is celebrated annually on January 3rd. The United States of America is known for its “tasty” holidays - in this country there are many official and not so holiday days dedicated to different dishes and products. World Chocolate Cherry Day came to us from there. The USA is the founder of this international gastronomic holiday.

It is not known exactly who first proposed celebrating World Chocolate Cherry Day, but mention of this holiday is on the official website of the National Association of Confectionery Manufacturers, so you can be sure that at least sweets manufacturers support this holiday.

The New York factory Cella's Confections was the first to mass produce chocolate-covered cherries in 1929. In 1985, the company was bought by Tootsie Roll Industries, but Cella chocolate-covered cherries are still sold in the United States.

Two types of candies are produced - with dark and with milk chocolate. The filling in Cella candies is liquid, although many other manufacturers of this type of candy offer candies with a dense filling. You can make chocolate covered cherries at home. To do this, the cherries are dipped in powdered sugar and then in a ganache of cream and chocolate, after which they are placed in the refrigerator overnight.

The history of the chocolate-covered cherry dessert

Chocolate-covered cherries are a dessert that absolutely every sweet tooth has tried and loved. The sweet and sour taste of cherries is offset by the sweet dark chocolate glaze, and the alcohol fills the mouth and pleasantly tingles the tongue. “Cherry in Chocolate” candies give an unforgettable experience, affecting all senses.

Such sweets are also useful due to various organic acids, macroelements, microelements and vitamins contained in cherries. Chocolate promotes the production of endorphin - the “happiness hormone”, which gives positive emotions. Chocolate covered cherries can be an excellent gift for loved ones, friends or colleagues.

It is generally accepted that the appearance of sweets is associated with Belgium, but they appeared back in 1839 in Germany. They were created by a man named Stolwerk, who was a baker. He was the first to use molds in the form of various figures to cast chocolate bars.

In 1912, in Belgium, they first began to fill the chocolate base with praline filling. This invention belongs to the manufacturer Jean Neuhaus. At first, the whole process was manual, but after a few years they came up with a mechanism that was supposed to fill chocolate with filling. This made the work process significantly easier. Soon people liked this delicacy, and confectioners began to come up with new fillings, and, as a result, new types of candies began to appear. Including “Cherry in Chocolate” candies.

Description

Cherry jam with chocolate will rightfully take its place in your favorites, especially if everything is prepared correctly. And to ensure the cooking is successful, we have prepared a visual recipe with step-by-step photos and detailed instructions. Thanks to this recipe, you will be able to prepare very tasty and unusual jam for the winter. For cooking we will use pitted cherries, so you should take care of purchasing them in advance. Of course, it is best to buy fresh cherries and pit them yourself, but already prepared ones will also work. As for chocolate, don’t skimp and buy good chocolate with a high cocoa content: the future taste of the jam depends entirely on this. Participation in the preparation of liqueur will be no less important. By the way, cognac is also often used instead. The cooking process itself is very simple and absolutely everyone can do it at home. The most delicate taste of the finished jam is worth the time and effort spent on it. Let's start creating jam from cherries and chocolate for the winter.

Ingredients

How to make cherry jam with cocoa

We sort out the cherries from spoiled and wormy berries, and then rinse them well under cool running water.

Using special tools, remove the pits from the cherries. In the absence of such a tool, an ordinary paper clip or pin will come to our aid.

Place the cherries in a thick-bottomed pan in which the jam will be cooked. Pour the prepared berries with sugar and shake the pan a little so that the sugar is evenly distributed throughout the cherries. Leave the berries in sugar for several hours or overnight so that they have time to produce juice.

When the cherries float in the sugar syrup, place the pan on low heat. Stirring gently, bring the syrup to a boil and remove from the stove. We put the jam in a cool place so that it cools and the berries are even more saturated with syrup.

Place the cooled berries in a sieve or colander. Place the syrup on the stove again and bring to a boil. Cook for about 7 minutes and then remove from the stove. Place the sieve with the cherries in the sweet syrup and let it brew until the syrup cools. We repeat the procedure from the moment the syrup boils without the berries several more times until the jam thickens and the berries become saturated and juicy.

Then add a cinnamon stick and cocoa to the syrup, stirring constantly, and bring to a boil.

After this, carefully add the cherries and boil for another 5 minutes.

Pour the still hot jam into sterilized jars and close with lids. From this amount of berries you get two half-liter jars of chocolate jam. This jam can be stored at room temperature for a long time, since we removed the seeds.

Cherry jam with chocolate - recipe

Let's prepare all the ingredients necessary for making jam, as in the photo.

We thoroughly wash the cherries and remove the seeds in any convenient way. Place the prepared ingredient in a saucepan and add the specified amount of sugar. Leave the cherries until they release their juice. Place the pan over medium heat, bring to a boil and let cook for 5-6 minutes. Remove the foam during cooking with a spoon.

Let the jam cool completely, then return it to the heat and bring to a boil. Cook for the same amount as the first time, after which we leave the cherries to steep overnight.

The next day, pour liqueur or suitable cognac into a saucepan with cherries and sugar. Mix the ingredients thoroughly, bring to a boil and cook for 10-12 minutes.

Break the prepared chocolate into small pieces, pour it into the pan and mix. We wait until the chocolate is completely dissolved and only then remove the pan from the heat. We sterilize jars with lids in any way known and convenient to you.

He will share with you interesting recipes for chocolate-covered cherries that you can prepare at home to please your loved ones and surprise your friends.

A wonderful gift, also made with your own hands, will not leave anyone indifferent. And if it is also an edible gift, for example, chocolates made with love and soul, it will definitely melt even the most persistent heart.

The first recipe. Drunken cherry in white chocolate.

To make sweets according to this recipe we
will need
:

  • pitted cherries – quantity at your discretion;
  • amaretto;
  • white chocolate bar.

It is best to take large, selected and, most importantly, tasty cherries for these sweets. Using a knife, make small cuts on each cherry. Place the berries in a hermetically sealed container and pour in amaretto, then put in the refrigerator. It's best for a couple of days, but if you don't have much time and you want to prepare everything the next day, then make sure that it's at least 12 hours.

Then drain the cherries and wipe each one dry.

Melt white chocolate in a double boiler, stirring thoroughly.

Carefully prick the cherry onto a skewer and dip it into the chocolate, then place on a plate until it cools completely. Then refrigerate for 15-30 minutes.

While the candies are cooling, you can give the chocolate any shape that your imagination and the skill of a novice sculptor are capable of.

And the candies are ready.

Recipe two: Cherries in dark chocolate with marzipan.

For this recipe, you can use either fresh cherries or cocktail cherries. This is what you like. If you prefer fresh, then before starting it is worth soaking it for several days in liqueur or amaretto.

So, we will need:

  • cherry;
  • marzipan;
  • black chocolate;
  • cream;

The cherries must be dried so that the berries are completely dry.

Then roll out the soft marzipan very thin. We wrap the marzipan pieces around the cherry and give the product a round shape; if you want and can show originality, you can even make a heart. Show some imagination!

Melt the chocolate, add cream, mix everything well until smooth. By the way, when using cream, you can melt the chocolate not in a water bath, but directly in a saucepan. The main thing is to make sure it doesn’t burn. Carefully place marzipan balls, pinned on a long skewer, into the prepared chocolate mass.

Then carefully fix the other end of the skewer into foam or another stand (an apple or orange is good for this case) so that the chocolate hardens and the ball remains round or the other shape that you gave it is preserved.

When the chocolate has hardened, place the candies in the refrigerator for a few minutes. Then remove from the skewers and place beautifully on a platter or pack in a box. A beautiful, delicious gift, prepared with soul, is ready!

Jars of cherry jam with the addition of cocoa and chocolate, just like with any other cherry jam, should be turned upside down and covered with a blanket or blanket. Securely wrapped jars are left in a warm place until they cool completely and are thoroughly sterilized.

As soon as the “Cherry in Chocolate” jam has cooled, it should be taken to a cool place.

That's all, as you can see, the process of cooking this delicious cherry jam is not at all complicated. Now you will have a delicious cherry treat in winter. Enjoy your tea and good luck preparing for the winter.

I also want to note that using this recipe you can make cherry jam with cognac and chocolate . Just add 50 ml to the jam. cognac

I also recommend making cherry jam.
