Before heat treatment, we carry out a traditional “rite”: we calibrate, wash in cold water, pick off the stalks, additionally rinse and dry, laying them out on a woven or paper towel.

Dried cherries and other fruits are stored for a long time, have a concentrated aroma and are good in baking. Well, this cherry jam takes on a similar taste. First, pour into sugar, partially heat until brown and liquid consistency. We turn it over and do not allow it to burn (otherwise an unpleasant bitterness will appear). Everything takes about 3-4 minutes.
Add pitted cherries (or with pits, as you decide). Sometimes the caramel parts harden, don’t worry, the cherry juice will dissolve everything during further cooking. Mix.
Boil, reduce heat and, stirring from time to time with a wooden spoon/spatula, boil for the first 10-15 minutes. Set aside and cool. We repeat the action 4-5 times - that is, boil, cook for 10-15 minutes, cool and boil again... This principle is necessary so that the cherries do not boil in the puree, become thoroughly saturated with sweet syrup and become “glassy”.
When cooking various berry and fruit jams, sticky foam often forms on the surface; it is removed. In my example, the seething foam disappeared and there was nothing to remove. So, after five approaches with cooking and cooling, the composition is dark dark brown, almost black, the smell is already fragrant, and the consistency is thick and viscous.

We will need:
- cherry – 1 kg
- sugar - 500 gr.
- orange - 1 pc.
- rum or cognac - 50 ml
- cocoa - 1 tbsp. l.
- dark chocolate - 100 gr.
- pectin - 20 gr.

Cooking step by step:
Step 1.
We will need pitted cherries. Therefore, you will have to work hard. We wash the berries, dry them a little and remove the seeds. There are special devices for this. But if this does not happen, the most convenient way, in my opinion, is an ordinary hairpin. We deftly insert the rounded end into the berry, pry up the seed and violently pull it out of the pulp. Place all the cherries in a deep saucepan.
Step 2.
Cut the orange in half and squeeze out the juice. Mix orange juice with sugar, cognac or rum.
I intentionally use half as much sugar as berries, since chocolate will add the desired sweetness to the jam.
Step 3.
Pour orange syrup over cherries in a saucepan. We leave all the contents alone for 5-6 hours, or even better, overnight. Let the berry give up its juice.
Step 4.
During this time, the sugar will not completely dissolve. Therefore, put the pan on low heat and heat it slowly, stirring, until the sugar grains completely disappear. Bring the contents to a boil and cook over low heat for another 10 minutes.
Step 5.
Now let's begin the magic of giving our delicacy a chocolate taste. Dark chocolate is best. We grate it on a fine grater, add a little cocoa powder, cinnamon and mix with cherries. Cook for 5 minutes, stirring continuously so that all ingredients are thoroughly mixed and the syrup becomes viscous and homogeneous. A delicious aroma immediately spreads throughout the kitchen.
Step 6.
Before finishing cooking, add pectin to thicken. You can do without it if you don’t like thick jam. Stir everything well and cook for a couple more minutes.
Step 7
We put our drunken cherries into prepared sterilized jars and close them with lids.

How to make cherry jam with cocoa
We sort out the cherries from spoiled and wormy berries, and then rinse them well under cool running water.
Using special tools, remove the pits from the cherries. In the absence of such a tool, an ordinary paper clip or pin will come to our aid.
Place the cherries in a thick-bottomed pan in which the jam will be cooked. Pour the prepared berries with sugar and shake the pan a little so that the sugar is evenly distributed throughout the cherries. Leave the berries in sugar for several hours or overnight so that they have time to produce juice.
When the cherries float in the sugar syrup, place the pan on low heat. Stirring gently, bring the syrup to a boil and remove from the stove. We put the jam in a cool place so that it cools and the berries are even more saturated with syrup.
Place the cooled berries in a sieve or colander. Place the syrup on the stove again and bring to a boil. Cook for about 7 minutes and then remove from the stove. Place the sieve with the cherries in the sweet syrup and let it brew until the syrup cools. We repeat the procedure from the moment the syrup boils without the berries several more times until the jam thickens and the berries become saturated and juicy.

We thoroughly wash the cherries and remove the seeds in any convenient way. Place the prepared ingredient in a saucepan and add the specified amount of sugar. Melt white chocolate in a double boiler, stirring thoroughly.
Carefully prick the cherry onto a skewer and dip it into the chocolate, then place on a plate until it cools completely. Then refrigerate for 15-30 minutes.

For this recipe, you can use either fresh cherries or cocktail cherries. This is what you like. If you prefer fresh, then before starting it is worth soaking it for several days in liqueur or amaretto.
So, we will need:
- cherry;
- marzipan;
- black chocolate;
- cream;
The cherries must be dried so that the berries are completely dry.
Then roll out the soft marzipan very thin. We wrap the marzipan pieces around the cherry and give the product a round shape; if you want and can show originality, you can even make a heart. Show some imagination!
Melt the chocolate, add cream, mix everything well until smooth. By the way, when using cream, you can melt the chocolate not in a water bath, but directly in a saucepan. The main thing is to make sure it doesn’t burn. Carefully place marzipan balls, pinned on a long skewer, into the prepared chocolate mass.

- During the last cooking, the syrup should already become quite thick. If it is still liquid, you need to remove the berries with a slotted spoon and boil the syrup until the drop holds its shape. Then return the berries to the syrup, boil the mixture for another 1-2 minutes after boiling and remove from heat.
- Pour the finished jam into sterile jars, roll up the lids, turn over, wrap and cool.
Hermetically sealed preparations can be stored at room temperature for several years.
