How to cook
- Remove the walnuts from the shell and pass the kernels through a blender or meat grinder (you can use a rolling pin to roll out the dough). Add honey, granulated sugar, cinnamon (cardamom) to the mixture and mix.
- Melt the butter and whisk until fluffy. Put sour cream in it and add half a portion of flour. Knead the dough with the gradual addition of the remaining flour until it takes on a dense, homogeneous structure.
- Cut the dough into small pieces and roll out into strips that widen on one side. Grease the strips with the remaining butter and place the filling on them. Next, starting from the wide part, carefully roll into tubes.
- Place the tubes on a baking sheet greased or lined with parchment paper; to add shine, the products can be coated with beaten yolk and cooked for 20-30 minutes in a preheated oven.

How to make straws with nuts, with photos
To knead the dough, prepare a deep bowl, place softened margarine in it and knead it with a fork.
Pour sour cream over it and stir well. The result is an air mass.
Gradually sift the flour through a sieve and knead the dough. After flouring the table, transfer the dough onto it to continue kneading.
To make the filling, you need to grind the nuts through a meat grinder (grind in a blender), grind them with sugar and mix with honey.
The dough will be soft, elastic and slightly sticky to your hands. Therefore, during the rolling process, you will need to periodically sprinkle the table with flour.
Cut off a little dough, roll it out thinly, and then cut it into 8 triangular pieces.
Place the nut filling on each of the triangles, roll them into a tube and lightly pinch the edges.
Now place the tubes on a baking sheet (don’t forget to grease it with oil). Lightly beat the egg in a bowl and coat all the products with it.
We send them to the oven (we focus on 180 degrees) for 30 minutes.
I immediately roll the finished tubes in powdered sugar and, after putting the dessert in a bowl, I keep a vigilant eye on it so that the quantity does not decrease, since some are already trying to encroach on them, despite the upcoming close acquaintance with them!
Autumn is the time to collect walnuts. You don't have to wait until winter to enjoy their sweet-tart taste. Walnuts are stored for a long time, but the most vitamins will be in the recently harvested crop.
Shelled walnuts are consumed as a separate product or as an ingredient for sweet dishes. Walnut rolls, the recipe for which we offer you, are a good option for a simple, flavorful and nutritious dessert.

Now you will get acquainted with the recipe for nut tubes (photos of the products can be seen in the article).
So, based on 20 servings we will need:
- 200 ml vegetable oil (preferably odorless);
- 200 ml of plain boiled water;
- 200 grams of nuts;
- 200 grams of granulated sugar;
- 450 grams of sifted wheat flour.
Recipe for nut rolls in action
First, you need to pour vegetable oil and boiled water into a small saucepan, bring the mixture to a boil and set aside to cool.
Then we begin to pour wheat flour into the warm mixture and knead an elastic and smooth dough. Here you need to pay attention to the following: you may need less flour than indicated in the recipe for nut rolls: the dough should not turn out too tight.
You can use any nuts for the filling, and the most delicious filling will come from a mixture of different varieties.
Peel the nuts and grind them using a rolling pin or blender to the desired degree. Add granulated sugar to the nuts. If desired, you can replace it with honey. This way, the filling will not crumble too much, and it will be easier to wrap it in the dough.
Roll out the dough as thin as possible (about 3 mm thick) and cut into equal rectangles in a ratio of 10:5 (cm).
Now you need to put the nut filling on the edge of the rectangle and roll the dough into a tube. We place the resulting tubes on a baking sheet: they need to be laid out at a short distance from each other.
Then bake the tubes in the oven for 30 minutes at 200 degrees. When serving, sprinkle the nut tubes with powdered sugar (optional).
Cooking steps
Combine sour cream and soda (you can use any sour cream, I had a jar of homemade one).
Melt the butter, cool slightly. Add to sour cream.
Add flour, knead soft dough.
Roll the dough into a ball, wrap in film and refrigerate for 1 hour.
Roll out the dough thinly and cut into rectangles, approximately 8x10 cm. Place the filling on one end of the dough, fold and pinch the edges (you can use any filling. I used half the cookies with blueberry jam, the other half with coconut flakes and condensed milk.)
Roll the tubes in sugar.
Place the tubes on a baking sheet lined with baking paper. Bake in a preheated oven for 20-25 minutes at 180 degrees.

Preparing honey and nut dessert
Place softened butter in a bowl and beat until fluffy. While stirring, add sour cream and small portions of flour (only half), knead the dough. Place the prepared dough on a floured table, add the rest of the flour to it, continue kneading for about 8-10 minutes until a homogeneous mass is obtained.
At the same time, prepare the nut filling. To do this, pass the peeled walnuts through a meat grinder, add granulated sugar, crushed cinnamon (cardamom), honey and mix everything thoroughly.
Divide the finished dough into several pieces. Roll out each piece into a strip so that it is wider at one end.
Grease the surface of the dough with oil. Place the filling on the strips and roll them into a tube, starting from the wide end. Place the prepared tubes on a greased baking sheet, cover them with egg yolk and bake for about 30 minutes in a preheated oven. Sprinkle the finished tubes with powdered sugar and vanilla if desired.

How to make Mutaki nut rolls from shortcrust pastry using a simple recipe
Fry the nuts for the mutaki tubes in a dry frying pan until the husks begin to separate.
Roasted nuts
Cool the nuts and rub them in your palms, trying to remove the husks as much as possible. For shortbread dough, combine sour cream with yolk, stir, add baking powder, sugar and vodka (I used cognac, but it doesn’t matter, any strong alcohol will do). Stir well.
Sour cream with yolk and sugar Butter with flour
Crumble the butter into the flour with a knife, grate it on a coarse grater or grind it in a blender until crumbly.
Oil-flour crumbs
Combine the butter and flour crumbs with the sour cream and egg mixture and quickly knead the dough. The shortbread dough for mutaki nut tubes is ready.
Shortbread dough
Divide the dough for the mutaki nut rolls into 8 balls. I have trouble with my eye, so I divide with the help of scales, each bun turns out to be 100-115 grams.
Divide into 8 parts
Cover the buns with cling film and place in the refrigerator for at least an hour. It is convenient to prepare the shortbread dough for nut rolls in advance, the day before. The better it cools, the more crumbly the sand tubes with nut filling will be. Grind the roasted nuts into fine crumbs in a blender.
Separately, lightly beat the egg whites with a whisk.
Mix protein with sugar and nuts. The nut filling for the mutaki tubes is ready.
Nut filling for sand tubes
Remove one kolobok from the refrigerator at a time. Roll each bun quite thinly into a round cake the size of a small plate.
Roll out the dough
Divide the circle into 8 triangles. Place a teaspoon of nut filling in the wide part of each triangle.
Distribute the filling
Roll into tubes. Carefully pinch the edges, otherwise the filling will leak and burn.
Roll up the tubes
Line a baking tray with baking paper, grease with vegetable oil and place the tubes with the mutaki nut filling, tail down. In total you will get 64 pieces of these tubes.
Finished tube
Place in an oven preheated to 200 degrees and bake the mutaki nut tubes until golden brown for 15-20 minutes.
Sand tubes with nut filling
Sand nut tubes can be placed close to each other, they hardly increase in volume. From the last kolobok I will make coffee straws. The coffee aroma is very subtle, the taste of the filling is slightly bitter. This addition is a pure gag; it is not included in the classic recipe for mutaki nut tubes, but try it, maybe you will like it too. Add a teaspoon of ground insoluble coffee to the last part of the filling and stir.
This recipe for tubes with nut filling (I planned them just in advance) will primarily be appreciated by lovers of sweets. They will be especially pleased with the quick and simple process of preparing this dessert with walnuts and honey. Thanks to sour cream and margarine, the dough for the tubes is very tender. And powdered sugar will not only decorate homemade baked goods, but also sweeten them. You can prudently make more of the filling itself, because once you try it even a little, it will be difficult to stop!
