How to make Mazurka pie with nuts and raisins

Sort the raisins, remove the bad fruits and stalks, place them in a saucepan and cover with hot water, let stand for 10 minutes, then drain the water and dry the raisins.

Portions:

  • 1 cup raisins
  • 1 cup chopped walnuts
  • 1 cup flour
  • 1 cup of sugar
  • 2-3 eggs
  • 1.5 teaspoons baking powder
  • a pinch of salt
  • 1 teaspoon vanilla sugar

Step-by-step preparation:

1. Before preparing the dough, you need to prepare the raisins. It needs to be filled with hot water and left for 20 minutes, then drained in a colander and dried with a towel.

2. Beat two large or three medium eggs with sugar, salt and vanilla sugar until white.

Walnut cake “Mazurka” with boiled condensed milk

  • Walnuts (shelled) - 1 cup.
  • Raisins – 150 g
  • Chicken egg - 3 pcs
  • Sugar - 200 g
  • Wheat flour / Flour - 200 g
  • Soda (slaked with lemon juice or vinegar) - 2/3 tsp.
  • Boiled condensed milk - 1 can.

Recipe:

Grind the nuts through a meat grinder (you can, of course, grind them, but the crust will fall apart)

Rinse the raisins. If we are cooking for adults only, add 2 tablespoons of red wine to the raisins.

First turn on the oven and prepare the pan (grease with oil and sprinkle with flour or semolina). Beat eggs with sugar until thick sour cream, about 5 minutes

  • half a glass of sour cream;
  • a glass of sugar;
  • a glass of flour;

  • half a teaspoon of soda;
  • a pinch of nutmeg.
  • Cooking steps:

    1. First of all, you need to soak raisins, prunes and dried apricots for 20 minutes. The water should be warm. If the dried fruits are soft, you don't have to do this.
    2. Cut dried apricots and prunes into pieces.
    3. Separate the yolk from the egg (no white is used), combine it with sugar and sour cream, mix well.
    4. Quench the soda with vinegar and add to the prepared mixture.
    5. Add flour and stir to form a smooth dough. Add raisins, dried apricots, walnuts, prunes and mix again.
    6. Grease a baking tray with oil and place the dough on it. Distribute it evenly throughout the pan. The thickness should be approximately 1 cm.
    7. Heat the oven to 200°C, place a baking sheet with the dough in it and bake until golden brown. The approximate cooking time for the Mazurka pie with raisins, nuts, dried apricots and prunes is 20 minutes. Readiness is checked as usual with a wooden stick. If it is dry and nothing is stuck to it, then the cake is ready.

    Cool the baked goods in the oven, then remove and divide into portions. The pie can be eaten both hot and cold.

    Mazurka with chocolate

    Ingredients

    • Flour – 1 kg.
    • Butter – 600 gr.
    • Egg yolks – 3 pcs.
    • Whole egg – 1 pc.
    • Vanilla sugar – 10 gr.
    • Fresh yeast – 40 gr.
    • Sour cream – 250 gr.
    • Granulated sugar – 400 gr.
    • Cocoa – 40 gr.
    • Dark chocolate – 100 gr.

    Preparation

    1. Grind the yeast with flour.
    2. Then mix the yeast mass with soft butter, yolks, egg, and vanilla sugar.
    3. Knead the dough. Wrap it in a bag and put it in a cool place for two hours.
    4. Line a baking sheet with strips of foil. We lay out the dough in the form of four rectangles no higher than half a centimeter in height.
    5. Grease the edges of the cookies with egg white and place strips of dough on top.
    6. Bake until golden brown at 220 degrees.
    7. Now let's start preparing the filling. In a saucepan, mix sour cream with regular and vanilla granulated sugar.
    8. We put the future cream on the fire and wait until it boils. Cook for 12 minutes, always stirring.
    9. Cool the finished cream in a cold water bath. To do this, take cold water into a large bowl and place a saucepan with cream in it. Stir until cool. If necessary, replace the water with cold water.
    10. Mix half the buttercream with cocoa.
    11. Pour warm cream over the cooled cookies and decorate with grated chocolate.

    If the edges of the cookies begin to burn during baking, cover them with foil or damp paper.

    It is recommended to remove the mazurka from the mold while it is hot. And only pour cream over cold ones.

    With poppy seeds

    Another very quick pie “Mazurka” with nuts, raisins, poppy seeds.

    What you will need:

  • a glass of sugar;
  • a glass of peeled walnuts;
  • a glass of flour;
  • 130 g each of poppy seeds and light raisins;
  • four eggs;
  • a tablespoon of cognac;
  • 5 g baking powder.
  • Cooking steps:

    1. Grind the walnuts, wash and dry the raisins thoroughly.
    2. Beat eggs with sugar until fluffy foam forms. The mixture should increase in volume by 2-3 times.
    3. Sift the flour, add baking powder and mix.

    Ingredients

    • Sugar – 150 gr.
    • Flour – 150 gr.
    • Eggs – 3 pcs.
    • Baking powder – 3 gr.
    • Walnuts – 150 gr.
    • Dried grapes – 150 gr.
    • Candied fruits – 150 gr.

    Preparation

    1. We wash the raisins under running water.
    2. We peel the nuts from the shell and turn them into small crumbs.
    3. Beat eggs with sugar until white foam.
    4. Add baking powder and flour to the egg mixture.
    5. Mix the dough with raisins, nuts, candied fruits and mix well.
    6. Grease a baking tray with margarine and lay out the dough.
    7. Bake for 45 minutes.
    8. When it cools, cut into pieces.

    Mazurka cookies can be spooned onto a baking sheet. The distance between each piece of cookie should be at least three centimeters. This delicacy will be crispy and very tasty.

    With almonds and orange zest

    What you will need:

  • 200 g flour;
  • 100 g butter;
  • 100 g sugar;
  • a teaspoon of baking powder;
  • six yolks;
  • a tablespoon of sour cream;
  • a glass of small raisins;
  • half a glass of crushed almonds;
  • zest of 1 orange.
  • Cooking steps:

    1. Pour the baking powder into the flour, then sift it through a sieve.
    2. Combine it with butter and sugar, grind to form crumbs.
    3. Add five yolks to it and mix.
    4. Place grated orange zest into the resulting dough, then sour cream.
    5. Add pre-prepared raisins, chopped almonds, mix.
    6. Place the dough in a pan lined with parchment and smooth it out with a silicone spatula or your fingers. It should be no more than 1 cm thick.

    What you will need:

  • 350 g flour;
  • 350 g sugar;
  • 350 g butter;
  • 100 g almonds;
  • 1 lemon;
  • 350 g apricot marmalade;
  • eight tablespoons of water;
  • six eggs;
  • 300 g lemon glaze.
  • Cooking steps:

    1. Pass almonds through a meat grinder.
    2. Melt the butter.
    3. Mix granulated sugar with eggs, place in a water bath and beat until a thick mass is formed. Before finishing beating, pour boiling water acidified with lemon juice into the egg mixture in a thin stream. Remove from the water bath and stir until cool.
    4. Pour flour, ground almonds into the cooled egg-sugar mixture, pour in melted butter and stir.
    5. Place the resulting dough on a parchment-lined baking sheet, smooth it out, and place in a well-heated oven for 40 minutes.
    6. Take out the finished baked goods. When it has cooled, remove from the baking sheet and cut into two halves lengthwise. Coat the cakes with apricot jam. Fill the top of the cake with lemon glaze.

    Mazurka with walnuts

    Ingredients

    • Granulated sugar – 120 gr.
    • Flour – 120 gr.
    • Egg – 2 pcs.
    • Nuts – 130 gr.
    • Raisins – 120 gr.
    • Soda – 4 gr.
    • Vanillin – 2 gr.

    Preparation

    1. Grind sugar with eggs.
    2. Nuts need to be crushed using a rolling pin.
    3. Add nuts and raisins to the crushed sugar.
    4. We extinguish the soda with vinegar or lemon juice.
    5. Add flour and vanilla to the dough. Mix.
    6. Place the future cookies in a baking dish.
    7. Bake cookies in the oven at 190 degrees.
    8. Cut the hot mazurka into pieces and place on a dish using a metal spatula.

    Mazurka turns out very tasty with walnuts.

    How to peel a walnut

    Now you can buy shelled nuts without any problems. But if you have walnuts in the shell, you can crack them yourself. The easiest way is to take a hammer or heavy object, break the hard shell and remove the nut. The main thing in this case is not to crush the cannonball, so it is important to calculate the force of the impact. Before breaking the nut, wrap it in a piece of cloth or a towel and place it on a flat surface. Usually a few hits are enough. There is no need to crush the nut into flour. If the shell is cracked, it is easy enough to open it with a knife and remove the intact kernel.

    The most convenient way is to use a nut cracker or special tongs that are commercially available.

    In addition to a hammer for cracking nuts at home, they use:

  • large pliers (hold the nut between the claws and apply pressure);
  • nippers (break off the shell in small pieces);
  • door (just place the nut in the gap between the jamb and the door leaf and close the structure).
  • How to make raisins at home

    If you look at how much raisins cost in markets or stores (from 250 to 450 rubles per kilogram), it turns out that it is more profitable to make them yourself. Of course, to do this you need to grow your own grapes.

    How to make raisins at home? There are four ways to prepare it:

  • in an electric dryer;
  • in the oven;
  • in the sun;
  • in the shadow.
  • Let's consider the method in an electric dryer. Drying in a special device is the most convenient option. Buying a good electric dryer is not a problem, and the savings in labor and time are obvious.

    It is better to use seedless grapes for making raisins, with fleshy berries and thick skin, all of the same size.

    Cooking steps:

    1. Blanch in a soda solution (1 tablespoon per 1 liter of water), then cool in cold water. To do this, pour boiling water into a saucepan and dilute soda in it. Then lower the colander with the grapes into the container for 3 seconds, after which they immediately transfer them to a bucket of cold water. Then rinse the berries.
    2. Dry the grapes on a towel to remove excess liquid.
    3. Take ripe, undamaged berries and place them in one layer on special trays.
    4. Place them in an electric dryer and turn on the berry drying mode for 4 hours.
    5. After the time has elapsed, turn off the device for 2 hours, then continue drying, turning off the device every four hours for 2 hours.
    6. After about 10 hours, swap the upper and lower trays. This way the grapes will dry evenly.
    7. Remove the finished raisins from the trays, place them in a jar, and store them in a dry place.

    The berries should be dried, sticky to the touch, but not hard.

    The cooking time for raisins is on average 20 to 25 hours. It depends on the size of the berries, variety, and consistency of the pulp.

    From 4 kg of grapes, approximately 1.5–1.7 kg of raisins are obtained.
