Preparation:

To prepare steamed dumplings, you can prepare the simplest kefir dough.

Sift the flour and mix with salt, soda and sugar (if the dumplings will be with berries). Not necessary, but you can add 2 tbsp. spoons of vegetable oil, this will prevent the dough from drying out quickly. Then add kefir (you can replace 1/3 of it with warm water) and knead a soft dough. If the dough is too soft, add flour. Cover the kneaded dough and leave to rest for 20-30 minutes.

Separate a small piece from the dough, knead a little, roll into a rope and cut into small pieces.

The dough for steamed dumplings, especially with berries, should not be rolled out thinly, 0.6-1 cm. Such circles are easier to mold, they will not fall apart when cooked and will be very fluffy.

Roll out the prepared piece of dough, put in a few small berries or one large one, sprinkle with sugar and carefully form a dumpling. Dumplings need to be made quickly and immediately sent to cook. The berries release juice; if the dumplings are made in advance, the sweet juice may cause the dough to fall apart and make it impossible to make.

To steam dumplings, you can use a double boiler, you can use a metal sieve of a suitable size, or you can, like our grandmothers, use a clean piece of thick gauze. Take a wide pan and select a suitable piece of gauze according to its size. Pour 1/3 of warm water into the pan, tie the gauze tightly around the pan, cover with a lid and bring the water to a boil.

When the water starts to boil, quickly make dumplings (after all, it’s better not to make dumplings with berries in advance). When the water is boiling over medium heat, place the dumplings on cheesecloth and cover the dumplings with a large lid.

Steam the dumplings for 7-10 minutes. The dumplings will approximately double in size. You can check when the dumplings have increased and cook for another 5 minutes.

My grandmother removed the dumplings onto a clean, dry linen towel and covered the dumplings with the same towel. The finished dumplings turn out dry, you can remove them onto a plate, you just need to cover them, they quickly become airy. Now reduce the heat and make the next batch of dumplings.

If your dumplings are steamed with cherries, strawberries or other berries, you need to wait a little while the berries in the dumplings cool down. Serve with sweet sour cream. For my strawberry dumplings, I made a pink sauce in a blender from sour cream, sugar and strawberries.

For those who are eating steamed dumplings with berries for the first time, there is a small warning: you need to bite into the dumplings carefully, as juice may splash or simply leak out. To reduce the amount of juice released from the berries, you can sprinkle them with starch. But for those who have such dumplings “from childhood”, berry juice is the most delicious, and the more of it, the tastier.

For the test

How to cook homemade steamed dumplings:

    Sift the flour onto a clean table. From the total quantity, select 2 tbsp. flour and pour into a deep plate. Make a hole in the flour, put salt, sugar in it and beat in the egg. The dumplings will be more fluffy if you first separate the white from the yolk, beat it, and then pour it into the flour.

    Pour kefir or sour milk into a separate bowl, add soda. Stir the flour with the egg, salt and sugar with a spoon, gradually adding kefir. Place the dough from the plate onto the table in the flour and continue kneading it with your hands. You need to add flour until you get a fairly dense dough. You need to knead for at least 10 minutes. Then put the dough in the refrigerator for half an hour.

    Prepare the berries. Rinse and dry the cherries. Remove the seeds. It is convenient to do this with a special device or a regular hairpin. The seed is removed as follows: pinch the ends of the pin with your hand, and use a loop to press the part of the berry where the stalk was, and carefully pry up the seed.

    Take a rolling pin, lightly sprinkle the dough with flour and roll it out into a layer 5-7 mm thick. Using a glass or small cup, make circles of dough. Shape the remaining dough and roll it out again. You can form the dough into a “sausage”, cut it into small pieces and knead each one with your hands. However, using the first method, the dumplings will be the same in shape and more even.

    Place a pot of water on the fire. You need to secure the gauze on top with an elastic band. The gauze should not sag. Instead, you can use a metal colander or a steamer for pans, greased with vegetable oil. Bring the water to a boil.

    Make the dumplings: place 2-3 cherries and 1 tsp in the center of the dough circle. sugar, bring the edges of the dumpling together. When the water in the pan boils, place the dumplings on cheesecloth so that they do not touch each other, and cover them with a lid on top. The water should be boiling.

    Cook the dumplings for 5-7 minutes, then place them on a plate and brush with butter or sprinkle with sour cream. The dish is served hot.

Steamed dumplings can also be prepared with other fillings: cottage cheese, potatoes, mushrooms, cabbage, eggs, fruits. You can use both fresh and frozen berries, which need to be thawed before cooking.

  2. To make the dough more airy, you need to use only sifted fresh flour;
  3. Steamed dumplings can be made in a pressure cooker, slow cooker, or double boiler, but they will not turn out so fluffy.

Lush steamed dumplings are a cult dish of Ukrainian cuisine. They are not just inimitably tasty, the main advantage of these wonderful products is that they are much healthier and easier for digestion than dumplings prepared in the generally accepted way. Even the need to steam the products should not stop you from preparing such dumplings, since you can do without a steamer or multicooker to implement the recipe.

How to cook dumplings with steamed potatoes

How to prepare the dough

  1. First, pour hot water into the kefir and mix thoroughly.
  2. Sift 450 g of flour through a fine sieve into a separate large bowl.
  3. Then add salt, soda and granulated sugar, mix everything well.
  4. Now make a small hole in the flour and pour the kefir mixture into it.
  5. Using gentle and slow movements, we begin kneading the dough, achieving its homogeneity.
  6. Cover the resulting dough with plastic wrap and set aside to “rest” for 10 minutes.
  7. After the specified time, lightly sprinkle the table with a small amount of flour, lay out the dough and continue kneading by hand.
  8. Add flour little by little, knead the dough until it stops sticking to your hands - the mass should be very cool and tight.
  9. Cover the finished dough again with plastic wrap and set it aside for at least an hour.

What components are suitable for the filling, what can be used to make the dough. Here are a few recommendations that will simplify the task and help you prepare steamed dumplings:

  1. Just sifted flour. Before preparing the dough, you need to sift the flour several times. This will help make the dough loose and airy.
  2. Prepare the filling. Before adding the filling, it also needs to be processed. Fry the mushrooms - otherwise they will boil. Cabbage will not have time to cook inside, and you should always remove the seeds from cherries right away so as not to damage your teeth while eating.
  3. What products are suitable for the filling? These can be sweet ingredients, such as fruits, berries, cottage cheese with sugar. Or salty filling: meat, mushroom, cottage cheese with herbs, spinach, hard cheese, vegetables.
  4. What should I use to cook the dish? Most often, dumplings are prepared in a double boiler or slow cooker. But if you don’t have these devices at home, don’t worry. You can simply build a steam bath from a pan of water and a colander with a lid.
  5. What sauce can be served with dumplings? Traditionally, it’s just sour cream for both salty and sweet dumplings. But, depending on the filling, you can add to the sour cream: spices, garlic, chopped pickled cucumber. Dough for steamed dumplings

The dough for steamed dumplings is usually made from white flour and kefir. Also, the base may be water, whey or yogurt. We chose the classic version with kefir. This basic dough recipe can be used for different fillings:

You need 650 ml of kefir with an average percentage of fat content, 1 kg of flour, 1 tsp each of salt and soda, 1 tbsp of sugar. If these are salty dumplings, then instead of a spoon of sugar, add only a pinch.

How to prepare: Sift the flour several times, mix it with soda and salt, sugar. Gradually add kefir, stirring the dough with a spoon. Then, mix the dough with your hands for 5-10 minutes. Sprinkle with flour and divide into 2-3 parts. Flatten a piece of dough into a thin layer, divide it into portions with a knife or an inverted glass. Next comes the filling.

If you want the dough to be completely fluffy, like for buns, then you should add 1 egg and yeast to the recipe. Mix the egg while preparing the dough with kefir. Grind the yeast with sugar, 2 tablespoons of flour and a small amount of warm water. Let them rise and mix with the dough. Leave the dough in a warm place for 30 minutes and only then start preparing the dumplings.

Recipe No. 1: Steamed dumplings in a slow cooker

Steamed dumplings in a slow cooker are prepared quickly and easily, and we already have a recipe for the dough. Prepare the dough that we wrote about above and leave it to rest for 20-30 minutes. In the meantime, prepare the filling.

Dumplings with spicy vegetables and tofu:

Take 300 g of tofu, 200 g of champignons, 1 carrot and 150 g of Chinese cabbage. Also, 50 ml of soy sauce, vegetable oil, a little honey. Salt, red pepper, roasted sesame.

Mix soy sauce, vegetable oil, honey and spices. Heat a frying pan with vegetable oil. Separately, fry the tofu on it, then the mushrooms. Add grated carrots and chopped cabbage to them.

Pour the sauce over everything and cook for another 5-7 minutes over low heat. Sprinkle with toasted sesame seeds and let cool slightly. Roll out the dough, cut it into portions and make dumplings with this filling.

Sprinkle them with a little flour.

How and for how long to steam dumplings? Pour half a bowl of water into the multicooker, set the “Steam” mode for 25 minutes. Cover the steaming basket with a small amount of vegetable oil. Place dumplings in it so that there is a distance of 1-2 centimeters between them. When the water boils, place the basket in the multicooker and cook the dish for 7-8 minutes.

These dumplings are served with soy or spicy tomato sauce. You can also first pour a little butter on them and then soy sauce.

Recipe No. 2: Dumplings in a steamer

We suggest trying another unusual filling for dumplings: pumpkin and poppy seeds. For it you need: 300 g of pumpkin, 150 g of poppy seeds and 150 g of sugar, a pinch of salt and butter.

Prepare the dough with kefir, leave it to steep for 30 minutes. Meanwhile, start preparing the filling. Pour boiling water over the poppy seed and wait until it steams. Peel the pumpkin, grate it on a coarse grater and mix with oil. Place it in a saucepan over low heat.

Drain excess water from the poppy seeds, add sugar and grind it thoroughly. Add poppy seeds to the pumpkin and cook for another 5-7 minutes until excess liquid has drained from the filling. Let the pumpkin mixture cool and begin rolling out the dough. Cut the dough and make large dumplings with pumpkin filling.

Dumplings are prepared in a double boiler in almost the same way as in a slow cooker. Just choose the temperature setting, set the timer and wait for the dish to cook. You can serve with sour cream or honey.

Recipe No. 3: Steamed dumplings with cherries

Usually, cherries are simply pitted, mixed with sugar and wrapped in dough. But we have prepared a more original recipe with these berries.

We need: 450 g of pitted cherries (you can take canned ones), 150 g of sugar and 10 g of vanilla sugar, 50 ml of cognac and 30 g of cocoa. Also, a pinch of salt, cinnamon, nutmeg.

While the dough sits, prepare the filling. The cherries need to be placed in a saucepan, covered with sugar and poured with cognac. Melt the filling over low heat. The cherries will release juice, which will mix with cognac and sugar. All this forms a viscous syrup. You can also add a little lemon juice if the berries are too sweet.

Add all other ingredients to the saucepan, mix thoroughly and remove from heat. Let the filling cool, roll out the dough and make dumplings.

This time, we’ll tell you how to cook them in a water bath. Take a large saucepan, a metal colander and a lid. Coat a colander with a little oil and place dumplings in it. Boil water in a saucepan, place a dish on it, and cover with a lid. These dumplings take about 20 minutes to prepare. Can be served with honey or sour cream whipped with cottage cheese.

Recipe No. 4: Steamed dumplings with cottage cheese

Steamed dumplings with cottage cheese can be prepared salty or sweet, so we offer two filling options at once. Both options involve the use of a basic kefir dough.

Option #1: Sweet filling

For 350 g of cottage cheese, take 50 ml of cream, 50 g of powdered sugar and 10 g of vanilla sugar.

Grind the cottage cheese through a sieve or beat with a mixer until the graininess disappears. Mix it with cream, powdered sugar and vanilla sugar, beat everything thoroughly again.

Option #2: Salty filling

Take 350 g of cottage cheese, 150 g of sun-dried tomatoes and 100 g of red sweet pepper. Also, dried garlic, Provençal herbs and other herbs to taste, salt.

The cottage cheese needs to be rubbed through a sieve. Cut the tomatoes and peppers into small cubes and add to the curd mass. Season everything with herbs and spices and mix again.

When the chosen filling is ready, mold the dumplings and cook in any convenient way: in special kitchen appliances or in a regular water bath.

First, while the dough is very sticky, mix with a spoon.

As you add flour, the dough becomes less sticky - continue kneading with your hands. There is no need to knead for a long time: all the flour has been mixed in, and that’s enough. Since the finished dough remains slightly sticky, you should not add flour in excess to preserve the tenderness of the dough and the fluffiness of the finished dumplings. So put the dough in the refrigerator for 1 hour. You can wrap it in film to prevent it from airing.

While the dough is infusing in the cold, prepare the fillings and “technique”. Pour about half of the water into a wide pan, and tie 2 layers of gauze on top, tying it tightly to the handles - so that when boiling, the water does not touch the gauze, and the fabric does not sag too much - otherwise the dumplings will roll towards the center and stick together.

Wash and pit the cherries; if the berries are frozen, defrost them and let the juice drain.

We will prepare poppy seed filling from poppy seeds, more details in a separate article at the link. It needs to be boiled for 5 minutes in 1 glass of water, then left for 15 minutes under the lid, strained, squeezed and, preferably, ground in a mortar. We do not add sugar yet so that the filling does not become too wet, this is just before filling the dumplings.

It's time to take out the dough. We put the pan on the fire while we make the dumplings, the water will just boil. Sprinkle the board with flour, and it is better to lightly grease your hands with vegetable oil so that the dough does not stick. But do not grease too much so that the dough does not become smeared with fat, then the dumplings will be difficult to seal.

Separate pieces from the dough slightly larger than a ping pong ball and flatten them, forming flat cakes up to 1 cm thick, approximately 7-10 mm.

Place 4-5 berries in the middle of the flatbread, add half a teaspoon of sugar and quickly and carefully seal the edges so that the cherry juice does not wet them and the dumplings do not open.

Has the water in the pan boiled? Great! We place several dumplings on cheesecloth, at a distance of 3-4 cm from each other, since they will increase during the cooking process.

We cover the structure with a capacious lid - not a flat one, but such that the dumplings have a spacious “roof”.

Steam the dumplings for about 10-12 minutes, boiling over medium heat. I couldn’t find any exact instructions to turn steam dumplings over or not; I tried to turn mine over, but they didn’t want to, they reluctantly came away from the fabric, and when I tried to pry them with a fork, they began to roll around in the gauze and stick to each other... so I cooked them on one side. Cooking time in a double boiler may vary, Irene indicates 25 minutes. You can check by taking out one dumpling, when they have noticeably increased, becoming large, fluffy, like pies - like this:

And cut one to see if the dough has steamed enough.

Carefully remove the finished dumplings from the gauze and place them on a clean linen towel to cool. If you put them directly on a plate, they will “sweat”, and the towel has a hygroscopic and delicate surface that will absorb steam and gently dry the dumplings.

We make the next batch with poppy seeds: add sugar to the poppy seeds, stir, put 2 teaspoons of filling in the middle of the flatbread and seal it. Making poppy seeds turned out to be more difficult than making berries, but with practice you can get the hang of it.

I decided to cook these in parallel - in a second pan, only not on gauze, but in a colander.

Serve the dumplings when they have cooled slightly and become a little warm. Firstly, you shouldn’t eat hot dough; it’s hard on the stomach and unhealthy. So we eat it cold and little by little, especially if the pancreas requires careful handling. Secondly, if there are berries inside, they cool slowly, so you should wait so as not to get burned by the filling. And one more thing - bite carefully, the cherry juice may splash.

Generously pour cool sour cream over the dumplings and serve!
