- Chicken or vegetable raw materials - 4 cups

- Minced chicken – 700 g
- Egg yolk – 1 pc.
- Fresh Italian leaf parsley - 1 tbsp.
- Dried oregano – 1/2 tsp.
- Garlic powder – 1/4 tsp.
- Salt – 1/4 tsp.
- Italian breadcrumbs - 1/4 cup
- Parmesan cheese, finely grated – 1/2 cup
- Cream – 2 tbsp.
Preparation:
Quickly caramelize onions: Heat olive oil in a large Dutch oven or sauce pot over medium heat. Add the onion and cook, stirring occasionally, until it begins to soften, about 3 minutes. Season with salt and pepper. Turn the heat to low, cover and simmer for another 15 minutes, stirring once or twice, until the onions are soft and beginning to release some moisture. Reduce heat to medium and simmer for another 5-10 minutes until the onions are golden brown and most of the liquid has evaporated. Stir regularly and turn off the heat if the onions start to burn. Transfer to a large mixing bowl and let cool to room temperature.
Preheat the oven to 220 degrees. Meanwhile, form meatballs: Add chicken to cooled caramelized onions and stir to combine. Stir in egg yolk.
In a separate bowl, stir together the herbs, spices, breadcrumbs and cheese. Add to the chicken mixture, then to the cream, and use your fingers to gently stir until evenly combined. Wash your hands, pour in a little olive oil, then roll the chicken into small balls (slightly smaller than golf balls).
