Preparation:


Fry onions, leeks, carrots in vegetable oil. Combine minced meat, rice, fried vegetables - salt, pepper, add soy sauce. Pour boiling water over the Chinese cabbage leaves and leave for 3 minutes. Carefully cut off the hard thickening with a knife. Place about 1 tbsp on each cabbage leaf. l. with a hill of minced meat. Wrap it up. Place the cabbage rolls in a fireproof dish.   • minced meat – 500 g;

Some components of this recipe require pre-cooking. This is rice (you need to cook a sticky rice porridge), cabbage leaves (they should be lightly boiled) and carrots and onions (their stewed mixture will make an excellent “pillow” for cabbage rolls).

You can immediately place the rice in a saucepan, fill it with water (1:3) and put it on low heat so that the rice part of the filling slowly cooks. Place a frying pan with vegetable oil on the adjacent burner, and while it is heating up, cut the peeled onion into cubes. Place the onion pieces in the pan and fry until translucent, stirring occasionally.

While the onion is frying, grate the peeled carrots on a coarse grater and place in the frying pan with the onions.

Stir these vegetables, add salt and, stirring occasionally, fry until half cooked over medium heat.

Take a baking dish with high sides and cover its entire bottom with stewed carrots and onions. During cooking, the vegetables will give off their flavor to the cabbage rolls, and after baking they will become part of the gravy, which will go into plates as an addition to the cabbage rolls.

Place the rice porridge, which has already been cooked and has cooled slightly, into a large bowl.

Add minced meat and salt to the rice (at least one level teaspoon) and stir the stuffing for cabbage rolls.

“Strip” the Chinese cabbage - carefully remove the wide leaves from it. You don’t have to use the middle of the head of cabbage: the leaves there are not wide enough to wrap minced meat in. Wash the cut cabbage leaves, trim 2cm off each leaf at the base (the thickest part) and place the leaves in a large saucepan. Fill them with water, put the pan on the fire and cook for 5-7 minutes in boiling water.

This technique is necessary to soften the cabbage leaves: they will become more pliable and will not crack during the formation of cabbage rolls.

Drain all the water from the boiled cabbage leaves and let them cool. Then lay the cabbage leaf vertically in front of you. At its base, perpendicular to the leaf itself, place a spoonful of minced meat and, starting from the base, wrap the cabbage leaf towards its tip.

Place the formed cabbage rolls directly on the carrot “pillow”.

In a separate container, dilute the tomato paste with water, stir until smooth. Lightly salt and pour tomato sauce over the future cabbage rolls in a baking dish.

Place the pan in an oven preheated to 200 degrees and simmer for an hour. Then turn the cabbage rolls over (by this time there will be noticeably less liquid) and bake for another half hour.
