Walnut cake with boiled condensed milk is my signature!
This nut cake is probably not new to many people. Perhaps just some nuances. But he is dear to me: a lot of things in my life are connected with him.
I first tried this cake in 1975. Then it seemed to me that I had eaten nothing tastier! He is still my favorite. I immediately asked for the recipe, and since then the nut cake according to this recipe has been my signature for all my friends and acquaintances!
It has now become customary to celebrate holidays with your team in a restaurant. Large organizations even order entire restaurants for corporate events.
And then we didn’t even know the word: corporate party! We celebrated in a narrow circle of our small working team: a laboratory or department. Women prepared all sorts of delicacies for the table at home, and men bought things that did not need to be cooked.
That's when I was asked to make my signature walnut cake (and it started with the fact that I brought it one day for my birthday).
Then my best friend, a big fan of cooking, begged me for this recipe, so together she and I experimented with the ingredients when it was not possible to buy something.
Ingredients for making walnut cake:
For the test:
- 3 eggs
- 1 cup sour cream
- 1.5 cups sugar
- 1.5 cups flour
- 0.5 cups crushed breadcrumbs
- 1 teaspoon baking soda
- 1 cup chopped walnuts (300 g)
- cocoa - to taste and desire
For cream:
- 1 can of condensed milk
- 250 g butter
For decoration:
- chocolate (if possible and desired)
- walnuts (the quantity depends only on you)
How to make walnut cake:
- Mix the ingredients for the dough and divide into 2 equal parts. You can add cocoa to one part (or both). The dough turns out pourable, but still not completely liquid.
- Grease a cake pan or frying pan with vertical sides with oil (both the bottom and sides) and sprinkle with semolina (or breadcrumbs; but it is with semolina that the cakes are best kept away from the sides and bottom).
- Pour one part of the dough into the mold and bake in an oven preheated to 180 degrees for 30-40 minutes.
The exact baking time depends on your oven. Check readiness with a wooden toothpick. - Take the finished cake out of the oven, remove it from the mold (just tip it out of the frying pan onto a flat plate), let it cool a little and cut it into 2 cakes.
- If you like moist cakes, then you need to slightly moisten the cakes before assembling.
For this, regular sweet water or jam syrup diluted with water is suitable. You can also use semi-dry or semi-sweet wine. - For the cream, you need to boil a can of condensed milk in advance (cook in a saucepan with water for 2 hours), cool and then mix with butter into a homogeneous mass.
- If cocoa was added to one part of the dough, then you need to form the cake, alternating dark and light layers. I usually put a light layer on top to contrast with the brown cream.
- Place the cakes one on top of the other, sandwiching them with cream. We also cover the top and sides with cream (on the sides, at least we align the joints of the cakes for beauty).
- Place chocolate on top of the cake or spread with chocolate fudge - as desired and sprinkle with chopped walnuts (densely or sparsely, in patterns or whatever your heart desires...).
- I usually leave it to sit for a while for soaking, and then put it in the refrigerator until ready to use (since I prepare the cake the evening before the holiday, it turns out to be overnight and for some part of the day).
Notes:
Over my long life, the recipe for this cake has undergone various changes, depending on the ability to buy some ingredients. Opportunity refers to both financial and physical (availability of goods in stores).
The first change affected sour cream. Instead, we started using full-fat kefir. This did not affect the taste.
When there were no nuts, I put dried and ground orange and tangerine peels into the cake instead of them and crackers. They imparted a specific taste and aroma, which, of course, was not present in the original. But we liked him anyway.
Additional soaking of the cakes and adding cocoa to half the dough are also our improvements, although not as dramatic.
The only thing that has never changed about this cake is the cream. Even in the most scarce times, my mother supplied me with condensed milk (for some reason it was much easier to buy it in my home village). Knowing my great love for this delicacy (I just ate it in jars!), she stocked up on a number of jars for my visits.
Well, we somehow managed to buy butter. I don’t remember exactly, it probably wasn’t in short supply. These are no longer notes, but a whole lyrical digression.
And one last thing. Naturally, you can make as many cakes as you want, making them thicker or thinner, changing the amount of ingredients as necessary.

Preparation:
We will need boiled condensed milk for the cake. Therefore, you need to buy just such a ready-made one or cook it yourself. To do this, you need to place the whole closed jar in a three-liter saucepan with water and put it on fire. When the water boils, turn the fire down and continue cooking the condensed milk for about two hours. You can cool the boiled condensed milk under cold running water. You can only open a completely cooled can of boiled condensed milk.
So, the boiled condensed milk is ready, so you can start making the cake. To prepare the dough, grind the eggs with granulated sugar and honey, and then add softened margarine and mix everything well. Place this mixture in a water bath, add baking soda and heat, whisking until the volume of the mixture doubles. At the same time, the mass should bubble - this is the soda reacting with honey.
Now remove it all from the water bath, cool the mass slightly and add sifted wheat flour to it. Knead the dough and leave it for an hour in a warm place. Fifteen minutes before baking, turn on the oven and preheat it to 200 degrees. Divide the dough into four parts and bake four cakes, rolling them into thin layers, trimming the edges and placing them on a baking sheet. We also put the trimmings in the oven - we will need them for sprinkling the cake. Honey cakes are ready when they acquire a reddish tint.
We take them out of the oven and leave to cool. Meanwhile, chop the nuts and beat the butter with boiled condensed milk. Assemble the cake by stacking the cake layers, covering them with cream and sprinkling them with crushed nuts. Coat the top and sides of the cake with cream and bread with crumbled cake scraps.

- Place the finished cream for the cake from boiled condensed milk in the refrigerator for 3 hours.
- Take a suitable dish (preferably with edges at least 1 cm high, as the cream will drain).
- Place the first cake layer, thickly grease it with cream and cover it with the second one. We do the same with the rest.
- Grind the baked dough into crumbs, grease the sides and top of the cake with cream and sprinkle with the resulting crumbs.

If you don’t have time for baking, but want to please your loved ones with a pleasant treat, it’s easier to prepare a waffle cake with boiled condensed milk. To do this you just need the following ingredients:
- waffle cakes – 6 pcs. (1 package);
- sl. butter – 150 g (100 g for cream, 50 g for glaze);
- boiled condensed milk – 1 can;
- nut kernels (to taste) – 50 g;
- sugar – 50 g;
- milk – 40 ml;
- cocoa – 45 g.
Let's start preparing the cake. For this:
- Preparing the cream. Soften the butter and carefully, in small portions (about 70 ml), add condensed milk into it, continuously whisking with a mixer until a homogeneous mass is obtained.
- Assembling the cake. Place the cake on the dish, thickly grease it with cream, cover it with the next one, spread it again, and so on with all the layers except the last one.

Once prepared according to the following recipe, chocolate cake will become a favorite dessert in the family. To bake it you will need the following ingredients:
- eggs – 4 pcs.;
- sugar – 750 g;
- kefir – ½ l;
- soda – 16 g;
- salt – 4 g;
- vinegar – 10 ml;
- cocoa powder – 50 g;
- flour – 500 g.
For cream:
- sl. butter – 500 g;
- boiled condensed milk – 350 g.
Baking chocolate cakes:
- Beat eggs with sugar and salt until white.
- Add soda dissolved in vinegar to kefir and pour in the egg mixture.
- Mix the flour with cocoa and carefully combine with the prepared kefir mass.
- Knead the dough, divide into 3 parts, place one in a baking dish and place in an oven preheated to 170 degrees for 15 minutes. We bake the remaining 2 cakes in the same way.
Beat the softened butter with condensed milk, coat the cakes with the resulting cream, placing them on top of each other. Decorate the cake with nuts, grated chocolate or fruit.

Any housewife can prepare a sponge cake according to the following recipe. This will require no more than 1.5 hours and simple ingredients. We take the following products:
- flour – 150 g;
- sugar – 250 g;
- baking powder – 8 g;
- eggs – 4 pcs.;
- cream (30%) – 250 ml;
- boiled condensed milk - 1 can.
Cooking steps:
- Beat the egg whites until foamy, add the yolks and continue beating until smooth.
