Vegetable stew with minced meat (with potatoes, with vegetables)
Traditional vegetable stews at home are prepared with meat - pieces, ribs, even meatballs. Today we will look at options with minced meat. Depending on preference - chicken, pork or a mixture of different ones. The finished dish may turn out soupy, so don’t forget to prepare deep plates. Next - step by step. Three recipes with photos.
What we need for the stew:
- chicken fillet – 350 g;
- carrots – 1 pc. (65);
- bell pepper – 1 pc. (65);
- onions – 1 pc. (100 g);
- pureed tomatoes in their own juice – 300 g.
; - potatoes – 4-5 (450 g);
- salt, pepper - to taste;
- garlic – 1-2 cloves;
- bay leaf – 1 pc.;
- water – 150-300 ml;
- vegetable oil – 2-3 tbsp. l.
Quantity: 4 servings
Preparation time: 5 min.
Cooking time: 40 min.
How to cook stew with minced meat, vegetables and potatoes
- Finely chop the onion and throw it into a saucepan with a thick bottom, adding 2-3 tbsp. vegetable oil. Passerate.
- Make minced meat from the fillet and add to the onion, fry for 5 minutes while stirring. Meat lumps must be broken up as small as possible so that there are no large ones.
- Chop the carrots into cubes, bell pepper into strips.
I had frozen already chopped peppers. Simmer the vegetable mixture covered for 5 minutes. - Add tomatoes and bay leaves. Simmer a little under the lid.
- Cut the potatoes into large cubes and add to the stew. Add salt and water. All that remains is to simmer everything until done (guide by the softness of the potatoes).
Serve in a deep bowl with liquid - it's delicious!

- steamed rice – 120 g;
- minced pork (pork and beef) – 300 g;
- vegetable oil – 2 tbsp;
- bell pepper – 1-2 pcs.;
- onion – 1 pc.
; - garlic – 2-3 cloves;
- fresh or canned tomatoes in their own juice – 300 g;
- fresh parsley – 0.5 bunch;
- salt, ground pepper, spices to taste.
Quantity: 4 servings
Cooking time – 30 minutes.
How to prepare stew with vegetables, minced meat and rice
- We will wash and peel the vegetables. Cut the onion into cubes and the pepper into large strips.
- Fry the minced meat and onions in hot oil for about 10 minutes.
- During frying, constantly knead the minced meat with a wooden spatula so that large lumps do not form. The heat should be a little higher than average, but not too high.
- Add the chopped sweet pepper and cook for another 5 minutes.
- Boil the rice in salted water until tender.
- Grate fresh tomatoes on a fine grater and add to the pan with minced meat.
If you use canned tomatoes, you must first rub them through a metal sieve or colander. As a last resort, you can use tomato paste diluted with water. Simmer the vegetable mixture with minced meat for another 3-4 minutes. - Add chopped parsley and garlic.
- Add boiled rice and mix the contents until smooth.
Salt and pepper to taste. Now is the time to season the minced meat stew with your favorite herbs or spices as desired. Stirring, simmer over medium heat for 1-2 minutes and remove the pan from the stove.
Vegetable stew with minced meat and rice is ready.

Mushroom stew
It is known that zucchini goes very well with mushrooms. Here is a recipe for one such dish. To make it, take three servings:
- Small zucchini;
- A medium-sized tomato (it can be replaced with a spoon of ketchup or tomato paste);
- Carrot;
- Half a glass of rice;
- Four large champignons;
- Half an onion;
- Three garlic cloves;
- Sunflower oil, herbs, salt.
We will prepare this dish with mushrooms in this way:
- Sauté chopped garlic and onion in oil, add salt, add rice to the pan and, filling it with water, boil for five minutes.
- Cut the peeled carrots and zucchini into cubes.
- Pour the carrots and mushrooms into the frying pan, after five minutes add the chopped zucchini.
- Simmer the contents of the pan over low heat, stirring constantly, until the rice with vegetables and mushrooms becomes soft.
- Add tomatoes, salt, add chopped herbs and after two minutes remove from heat.
Thanks to the large amount of butter, the calorie content of this dish is quite high.
