Candied apples at home for the winter

Tuesday, January 6, 2020

For the most part, housewives are seduced by simple and tasty recipes for simple desserts, aren’t they? Candied apples are just such a sweet homemade treat that children and their parents will enjoy. In addition, unlike purchased overseas candied apples, apples are no less tasty and without harmful additives.

So, we are writing down a recipe for a homemade dessert (and a delicious preparation for the winter, in addition), but first, get to know some of the secrets of making candied apples. First of all, how to prepare almost any candied fruit: as a rule, fruits or vegetables need to be cut into pieces or slices, and then repeatedly boiled in sugar syrup so that the fruits are saturated with it.

Candied apples are dried in the oven, in a special dryer, or in the fresh air (optionally, at room temperature) indoors. In any case, when finished, high-quality candied fruits are elastic - they are not wet, and at the same time they should not break, but bend perfectly.

Cooking step by step:

To make candied apples, we need the apples themselves (of course, homemade ones are best), water, granulated sugar and a little citric acid (lemon juice is possible and even better - 2 tablespoons).

Fresh apples need to be washed and cut into pieces. You can make round washers or thin slices. It is not necessary to peel off the skin, but you need to get rid of the seed pods.

Pour cold water into a suitable saucepan and add sugar with citric acid or lemon juice. You need to prepare sugar syrup, which is boiled for about 5 minutes from the moment it boils. After this, place apple slices and pucks into the hot syrup and cook them over low heat for five minutes. Leave everything to cool completely for 3-4 hours. This procedure (cooking-cooling) must be repeated 4-5 times.

When such manipulations are completed, the apple slices will become transparent, but will retain their elasticity - they will not fall apart like apples in compote.

Place the apple pieces in a sieve or colander and let the syrup drain as much as possible - about 1-2 hours.

Then we move on to the last stage of preparing candied apples - drying the fruit. This can be done in an oven at 50°C (this will take about 4-5 hours) or in a special dryer (as I did). But you need to make sure that the apples do not dry out, much less burn. So, for example, they should not boil and bubble (I'm talking about syrup), but only dry slowly. At room temperature, candied apples will dry for several days, but this is subject to low humidity.

Now our candied apples are ready - they bend well, do not crumble, and at the same time, the liquid content in the finished product is minimal. In total, from the proposed number of apples, I got three such pallets of ready-made candied fruits.

If you want, you can sprinkle the candied apples with sugar or powdered sugar, but I want to say that with proper drying they should not stick together.

In addition to candied fruits, I can also offer you a simple recipe for preparations for the winter - aromatic and tasty apple jam, which can be prepared in... a bread maker.

Candied fruits are an incredibly tasty delicacy that is boiled in sweet syrup and then dried. There are several simple recipes for candied apples at home that even an inexperienced cook can make, just know the ingredients and sequence of steps. In addition, such sweet preparations can be consumed by diabetics and people who are trying to get rid of extra pounds.

Classic version

To prepare apple dessert you will need:

  • hard apples - 1 kg;
  • granulated sugar - 0.5 kg;
  • distilled water - 2 glasses;
  • citric acid - ¼ small spoon.

At the very beginning, you need to prepare fresh fruit. To do this, the prepared apples are thoroughly washed and cut into small slices. Recipe with spices

There is another quick recipe for candied apples. Before cooking, you need to prepare all the ingredients that you will need to prepare a delicious dessert.

To prepare candied apples you need to stock up:

  • ripe apples - 1 kg;
  • granulated sugar - 800 g;
  • lemon - 1 piece;
  • cinnamon - 1 small spoon;
  • cloves - 3 buds;
  • powdered sugar for sprinkling prepared candied fruits.

The cooking process begins with preparing the fruit: they are thoroughly washed and cut into several slices, and the core must be removed. Then the syrup is prepared separately. To do this, mix three glasses of water and exactly half of the granulated sugar. Place everything in a saucepan, set the container on the fire and wait for the sugar to completely melt.

Then add the chopped fruits to the saucepan and leave them to cook in the syrup. In this case, it is necessary to constantly stir the fruit. After the apple slices become transparent, add the remaining half of the sugar to the syrup. Grate the lemon zest and add it to the saucepan with the apples. The remaining ingredients are added there: cloves and cinnamon, and the syrup is allowed to cook for another 5 minutes. After the mixture thickens, you can remove the saucepan from the heat.

Place fruit on a wide baking sheet covered with parchment paper and greased with butter. Now you need to dry the apple slices in an oven heated to 50 degrees. Dry for two hours, keeping the door slightly open. After a day, dry them again in the oven.

After the slices are ready, they need to be sprinkled with powder and placed in special glass containers, where they will be stored.

Candied fruits with orange zest

Candied fruits can be prepared according to another recipe. Moreover, the taste of this sweet is somewhat different from classic candied fruits. To prepare this fruit treat you will need:

  • medium-sized apples - 15 pieces;
  • sugar - 500 g;
  • water - 0.5 l;
  • powdered sugar;
  • cinnamon stick;
  • dried zest of 1 orange.

Before cooking, all prepared fruits are thoroughly washed, peeled, and cut into four equal parts. The core of the fruit must be removed. After this, you need to stuff the slices with orange zest .

Then mix granulated sugar and water in a separate container and place on low heat. After the sugar mixture boils, you need to add chopped apple slices into it. The cooking process lasts exactly until the fruit acquires transparency and a beautiful golden brown crust. Immediately after this, you need to remove the fruits from the syrup, sprinkle them with a thin layer of powdered sugar and crushed cinnamon and cloves. And again send the apple slices into the syrup.

Moreover, all the time while the fruits are boiling, they must be mixed, but do this carefully so that they do not break. Cooking continues until the sugar syrup has completely evaporated .

After cooking is completed, the fruit slices are placed on a baking sheet, which is placed in the oven, where drying will take place. Moreover, you need to put parchment on the baking sheet so that the apples do not stick, and sprinkle the slices themselves with powdered sugar again. Place a baking sheet in the oven preheated to maximum and turn off the heat. The drying process lasts exactly as long as the oven cools down.

Candied apples “Favorites”

Let's try to remember the traditions and prepare delicious candied fruits, using apples as a basis. These fruits are the most accessible, quite inexpensive, and also very healthy, rich in pectin, iron and many other minerals. Just be prepared for the fact that preparing candied apples will take a little longer than making jam. The entire process may take up to 7 days. But the taste will be divine!

  • 1 kg apples;
  • 1 liter of apple syrup (for 1 liter of pure apple juice - 700 g of sugar and 1/2 teaspoon of ground cinnamon);
  • 2 tbsp. spoons of lemon juice or a little citric acid;
  • Water.

Preparation

Proportions: for 1 liter of water – 1 kg 200 g of granulated sugar. Bring the syrup to a boil.

Place the apple slices in a colander. Bring the remaining syrup in the pan to a boil again, stirring, and skim off any foam that has formed. Then immerse the apple pieces in it again, cook them for 5 minutes, then remove the pan from the heat. Place the hot apples in a colander and wait for the syrup to drain.

Transfer the finished candied fruits into jars. Cut a circle from parchment to the diameter of the neck of the jar, lightly moisten it with alcohol. Cover the jars with such circles, wrap them on top with cellophane or cling film, tie them with an elastic band around the edges or tie them with a beautiful ribbon. Store jars of candied apples in a cool, dark place. Bon appetit!

Candied apples “Kiss” in the dryer

Preparing natural candied fruits at home is much easier if you have an electric dryer. True, you will still have to tinker with pre-treatment and cooking in syrup, but drying will not take much time.

If you prepare the delicacy correctly, then candied apples in the dryer will retain maximum of their beneficial properties, and they will also turn out tastier than store-bought analogues. They are rich in fiber, vitamins and microelements, look beautiful and are stored for a long time.

Ingredients and equipment for making candied apples:

  • 500-600 g apples;
  • 300 ml fresh or candied honey;
  • 100 ml water;
  • Electric dryer for fruits or vegetables.

Preparation

  • First prepare the fruit. For candied fruits, medium-sized, firm, slightly unripe fruits are best suited. Wash the apples thoroughly, peel, remove the core and grains, cut into 4 or 6 pieces.
  • Now prepare the syrup. For candied fruits you can use different syrups, in this case we offer you honey syrup. It will give fruit slices an incomparable aroma and additional benefits. If the honey is candied, then it must first be melted in a water bath at a temperature no higher than 40 degrees (otherwise the honey may lose its beneficial properties). Then heat drinking water to the same temperature (approximately 40 degrees), add honey to it and stir until smooth.
  • Ratio: one part water – three parts liquid honey. Leave some honey, it will be useful later.
  • Place the chopped apples in a large saucepan, pour in the syrup, and stir well. It is advisable that the honey syrup completely covers the fruit. Then place the pan with the apple slices in a warm place for 12 hours. During this time, the fruits will infuse, release juice and soak in syrup.
  • Remove the prepared apples from the pan with a slotted spoon and evenly place them in a special container of the electric dryer so that the juice does not flow down to the lower tiers. Place a drop of the remaining honey in the middle of each slice. Set the temperature to 40 degrees and dry for 12 to 16 hours.
  • Place the prepared candied apples for storage in glass jars, tightly closing them with lids. To make the tasty slices better stored and not stick together, sprinkle them with powdered sugar. I recommend using the remaining honey syrup for the next portion of candied fruits or for preparing a delicious and very healthy drink. Bon appetit!

Candied fruits stewed in apple syrup

Components:

  • Fresh apples from home garden.
  • Apple concentrated syrup.

A quick recipe for candied apples consists of 2 processes - boiling the fruit and drying it.

Preparing concentrated apple juice is not difficult. Twist the washed apples in a juicer, or grate the fruit on a coarse grater and squeeze the juice from the resulting pulp.

The next stage is preparing the apples. We clean the fruit from peels, seeds and tails, and cut out damaged areas. Peeled apples should be immediately placed in a bowl with clean spring water, to which a little vinegar has been added. In this way, it will be possible to protect the apples from darkening, and the candied fruits will turn out to be a beautiful amber color.

Next you will need warmed apple syrup. Pour the juice into an enamel bowl and bring it to a boil. Add apples, cut into rings or slices, no more than 1 centimeter thick, into the resulting hot liquid. If the juice tastes sour, you can add sugar.

Boil the apples in the syrup for 5 minutes and remove the dishes from the heat. Now the mixture should be given time to cool completely and thicken. About 5-6 hours will be enough.

We take out the wrinkled rings or slices, and bring the syrup again to a boiling point. After removing the foam, add apples to the syrup again and let the mixture simmer for no more than 5 minutes. We take out the hot fruit and place it in a colander to drain the thick liquid from the glass slices. Now the fruit can be laid out to dry.

It is best to dry candied fruits on a baking sheet lined with parchment, in a place exposed to sunlight.

Every day for 5 days you should change the parchment and turn the fruit over.

During this period, drops of liquid will finally evaporate from the fruit, and the dry apple jam in the oven is ready! The finished product can be eaten or stored in jars until winter.

Whole candied paradise apples

Fragrant paradise apples, or ranetki, are perfect for preparing candied fruits. Due to their small size and dense pulp, they are not capricious in preparation, are evenly soaked in syrup and then look very presentable - like small pieces of the sun. Whole candied paradise apples are truly a heavenly dessert!

  • 1 kg of paradise apples;
  • 1 kg of sugar (if the apples are not particularly sweet, increase the amount of sugar to 1.2 kg);
  • 250 ml water;
  • Lemon slices - to taste.

Preparation

Store prepared candied paradise apples in any hermetically sealed container. You can sprinkle them with powdered sugar to prevent them from sticking together, add a little cinnamon. Choose any recipe, prepare candied apples at home and enjoy their taste and aroma. Bon appetit!
