The most popular berry from our dachas and plots is strawberries. It is one of the very first berries and one of the most beloved. Children love the berry; we make jams, compotes, and various desserts from it.

Today we present to your attention a master class on making the perfect combination of chocolate and strawberries - namely, chocolate-covered strawberries. Everyone associates this dessert with luxury, champagne and a rich lifestyle. But this dessert does not require super expensive ingredients or multi-day courses in molecular gastronomy. The dessert ingredients are simple – strawberries and chocolate. And that's it - you don't need anything else.

Nowadays, strawberries are extremely easy to get, and the choice of chocolate is huge. Chocolate covered strawberries are a simple and delicious pleasure.

Chocolate-covered strawberries can be made into a dietary dessert - simply by using real dark chocolate.

Preparing strawberries

In the summer, a huge amount of strawberries are sold in the markets, but are they all suitable for our dessert?

  • Tip one : when choosing before purchasing, pay attention to the appearance: we need a beautiful, whole, large, ripe and unwrinkled berry.
  • Tip two: Wash already purchased strawberries only before cooking, so as not to mash them again. Carefully wash each strawberry separately, using only cold water, thoroughly removing any dirt.
  • Tip three : The stalks (tails) must be left and washed along with the berries.
  • Tip three : Place the washed berries on paper towels until completely dry. The strawberry needs to be completely dry - then the chocolate will stick evenly.

You can add additional flavor shades to the finished dessert - use a syringe to inject alcohol into the berry - rum, liqueur, cognac.

Preparing the chocolate glaze

  • Glaze for berries - any chocolate bar. Important – chocolate must be of high quality, without additives and nuts, with a high content of cocoa beans. We do not recommend using cheap chocolate from grocery chains of the same name - the cocoa bean content there tends to zero.

Aerated chocolate is also not recommended - it will not melt in a water bath.

  • You need to melt the chocolate either in a water (steam) bath or in a microwave oven.

If in a steam bath .

The chocolate bar should be broken into squares and placed in a bowl. During the heating process, it is necessary to mix the chocolate mass. When the glaze becomes a homogeneous liquid mass, remove the dishes from the stove.

If in the microwave . For microwave preparation, we recommend using heat-resistant glass containers. Chocolate is also broken into pieces. Place in the microwave for 30-45 seconds, take it out and stir the resulting chocolate mass with a spoon. If the chocolate has not melted completely, repeat until completely dissolved. It is important to prevent the mass from overheating.

In both methods, do not allow water to get into the chocolate mass! Otherwise, the frosting will be grainy and flaky, and the dessert won't be right.

Well, now we come to the recipes for this delicious dessert.

Read in full In your quotation book or community!

Good afternoon everyone!

I continue the strawberry theme. I really like it, so I want to enjoy it to the fullest. By the way, just recently I learned that those small grains that cover strawberries are nuts. The juicy, red pulp itself is just an overgrown receptacle. And in general, these are not strawberries at all, but garden strawberries. These are the quirks of nature and the new rules in botany.

But, as they say, call it a pot, just don’t put it in the oven. It doesn’t matter whether it’s strawberries or wild strawberries, but it’s still delicious. And if it’s also with chocolate... Then it’s simply delicious! And then I came across a recipe for strawberry jam with chocolate - a sweet tooth’s dream! Without thinking twice, I decided to take a risk and try to make such an unusual dessert. Looking ahead, I will say that the result was rated a solid four by a picky jury of four people. One point was deducted for the resulting sediment, like in cocoa.

Ingredients:

• 500 g strawberries;

• 300 g sugar;

• 200 g dark chocolate.

Wash the strawberries, or, if you prefer, garden strawberries. To prevent the berries from getting crushed, you need to place them not under running water, but under the shower.

Then they should be separated from the tails and sorted out at the same time. All bruised and frankly spoiled berries must be mercilessly discarded so that after a few weeks you do not throw away the fermented jam.

These are the smooth, beautiful strawberries I have collected. I specifically chose small ones. They seem more natural and fragrant to me. There should be 500 g of peeled berries.

Fill them with sugar and shake lightly so that the grains stick to the strawberries on all sides.

After 6 hours, juice can be seen at the bottom of the container. It's time to start cooking. Place the bowl of strawberries on low heat and, stirring slightly, watch as the amount of liquid increases. By the time it boils, all the berries are already floating freely in the syrup.

Stir until the sugar is completely dissolved. Then increase the heat and collect the foam.

Cook for another 15 minutes. Then add chocolate.

Reduce the heat again and stir the jam until the chocolate is completely dissolved. It turns out an incredibly aromatic mass. The smell of hot chocolate attracts those with a sweet tooth like a magnet. We firmly resist their onslaught and boil for another 10 minutes.

Then pour into sterile dry jars. Makes 300–350 ml of jam (depending on the type of strawberry).

Screw on the lids and let the workpiece cool. There is no need to wrap it up or turn it over. You can store strawberry jam with chocolate in the kitchen cabinet. I haven’t tried adding it to tea, but I advise everyone to make soft drinks from it. Another kind of jam, you can punch it with a blender and it will turn out to be jam, or rather almost syrup, suitable for soaking cakes. Bon appetit!

Strawberries dipped in dark chocolate

Dessert ingredients

  • fresh strawberries – 500 g
  • Dark chocolate bar – 1 piece (200g)
  • Vanillin and cinnamon - optional;
  • Walnut crumbs - for decoration (optional)

Cooking tools: water bath, parchment (paper)

Preparation:

  1. We wash the strawberries and dry them on paper towels (we wrote above about how to choose and wash strawberries)
  2. Melt a dark chocolate bar using one of the methods described above.
  3. Add cinnamon and vanilla to the melted chocolate and mix the resulting mixture thoroughly.
  4. We wait a little until the mass cools down a little, and proceed to “bathing” the strawberries: We take the berry by the tail and immerse it in the chocolate mass. The berry should be covered 2/3 with glaze.
  5. If desired, we decorate the finished dessert with nut crumbs - immediately after the berries have been bathed in glaze - we put the berries in the nuts.
  6. Place the finished chocolate strawberries on parchment or a mesh wire rack.
  7. We transfer the tray with the berries to the refrigerator to completely harden the chocolate glaze.
  8. You can also cool it at room temperature, but in this case the chocolate on the strawberries will not be crunchy, but will be soft.

This recipe can be adapted to make strawberries dipped in white or milk chocolate. The technology is the same, but the methods of decoration and decoration are different.

Strawberries in white and dark chocolate

  • strawberries - 350 gr.
  • white chocolate (not fluffy) - 120 gr.
  • dark chocolate (preferably in the form of chips) - 200 gr.
  1. Wash each berry under running cool water, do not remove the sepals. Dry the fruits, leaving them to drain on a cotton towel.
  2. Line a baking sheet with parchment. If you are using a chocolate bar for cooking, break it into cubes. In the case of drop-chips, pour the component into a deep glass bowl.
  3. Melt two types of dipping base. Use a microwave or water bath. Now dip the dried and prepared strawberries alternately first in white and then in dark chocolate.
  4. Place the finished treat on a baking sheet lined with parchment paper. Leave at room temperature for 25-30 minutes, then transfer to the refrigerator for final cooking.

Strawberry dessert in pink chocolate

Dessert ingredients:

  • Fresh strawberries – 500 g;
  • Dark chocolate – 120 g;
  • White chocolate – 150 g;
  • Pink food coloring (loose or liquid)

Cooking tools: steam bath, pastry bag, parchment, wooden skewers.

  1. We prepare the fruits as in the previous method - wash them under cold water, let them dry, stick a wooden skewer into each strawberry (for ease of decorating).
  2. Melt white chocolate using the methods described above. Next, melt a bar of dark chocolate .
  3. Divide the liquid white chocolate into two equal parts into separate bowls.
  4. Add pink food coloring to one of the bowls with melted white chocolate. Mix the pink dye thoroughly until an even shade is obtained.

So, we end up with three bowls of different colored chocolate icing.

The creative process of preparing dessert is included.

  • Dip each strawberry into the chocolate mixture. You can combine colors by immersing the fruits first in one color, then in another. Between “bathing” in different colors, it is necessary to maintain a certain time for the glaze to set slightly so that the chocolate color does not smudge.
  • After “immersing” the strawberries, place them on parchment paper and place them in the refrigerator to cool for 30 minutes.
  • If the chocolate glaze in the bowls cools down during this time, melt it again in a water bath.
  • After all the manipulations, put the chocolate glaze into three pastry bags and decorate the strawberries. Apply different colors using a bag onto the glazed strawberries.
  • Place in the refrigerator again until completely frozen.

Afterwards, remove the skewer from the strawberries and serve the finished dessert.

How to make beautiful chocolate covered strawberries for a bouquet with your own hands

A berry bouquet is an original and tasty gift that can be presented for any occasion. Strawberries can be covered with chocolate, decorated with confectionery sprinkles, coconut, and chocolate patterns. This will make it not just an appetizing, but a beautiful treat. Strawberry bouquets are usually made in the summer, during the berry season; their creation does not require a lot of time, effort or expensive materials.

How to make chocolate-covered strawberries for a bouquet - a classic recipe

To prepare a sweet berry gift you need to take:

  • ripe large berries of neat shape and equal size;
  • any quality chocolate - black, milk, white;
  • confectionery topping, chopped nuts, coconut or chocolate chips;
  • long bamboo skewers;
  • pastry bag;
  • scotch;
  • decorative wrapping paper;
  • satin ribbon.

The fruits should be sorted out, and the juiciest, highest quality fruits should be selected, which have no signs of rot or insect damage. The number of berries is selected based on the size of the expected bouquet. Strawberries are placed in a bowl.

Step-by-step preparation of a bouquet of strawberries in chocolate:

  1. The chocolate is placed on low heat and melted in a steam bath. If chocolate bars of different colors are used, they are melted in separate containers. The bowl is kept on top of the pan so that the containers do not touch the bottom. The mass is constantly stirred so that the melting process is uniform. The bowl is not covered with a lid.
  2. The melted product is removed from the stove.
  3. Each berry is pierced with a bamboo stick, but not through. The strawberries should be well secured and not wobble on the skewer.
  4. The pierced strawberries are carefully dipped into the melted chocolate. Then place the stick with the preparation in a glass so that the chocolate glaze on the berry hardens. Do not place the strawberries on any surface, otherwise the frosting will not harden properly and will remain misshapen, with a dent on one side.
  5. If you want to decorate the product with bright sprinkles, coconut, chopped nuts or chocolate chips, you should do this before the glaze hardens. Confectionery decor simply will not stick to a frozen sweet crust.
  6. If you want to decorate the delicacy with patterns, this can be done both before and after the crust hardens. In the first case, the patterns will be smooth, blurry, merging with the glaze, in the second - convex. To create the decor, use a pastry bag. Melted chocolate, different in color from the glaze, is poured into it. If you don't have a bag, you can cut a narrow hole in the plastic bag, just large enough to create a thin, neat line. Using a bag, various lines are applied to the surface of the glazed strawberry: curls, straight and wavy stripes, mesh, hearts, stars, etc.
  7. The bouquet begins to be collected after the delicacy has hardened.

Strawberries in pink chocolate

To please your beloved woman, you can make a delicate bouquet of strawberries in pink chocolate. To create it, prepare the following ingredients:

  • berries;
  • black and white chocolate;
  • pink food coloring in any form - liquid or powder;
  • pastry bag;
  • long bamboo skewers.

Step-by-step instructions for making pink chocolate covered strawberries:

  1. Washed and dried berries are pierced with a stick to the middle of the pulp. Check that the fruit is holding well.
  2. A bar of white chocolate is melted in a steam bath. Melt dark chocolate in a separate bowl. You need less of it than white.
  3. After melting, half of the white mass is poured into another container. Pink dye is also added there. The more substance, the brighter the finished product will be. The chocolate mass with the dye is thoroughly stirred so that the color becomes even.
  4. As a result, you get three bowls with multi-colored blanks: dark, white, pink.
  5. Each strawberry on a stick is carefully dipped into the pink mixture. Then place it in a glass so that the glaze hardens evenly.
  6. The prepared delicacy can be left on the table, or it can be sent to the refrigerator, where it will harden faster, in 15 minutes.
  7. Next, the glazed strawberries begin to be decorated with dark and white chocolate patterns, contrasting with the pink glaze. A pastry bag is used for this. Apply any lines and drawings. You can also dip the berry halfway into the chocolate mixture. The strawberry will be pink at the bottom, light or dark at the top. If the chocolate has hardened and is difficult to work with, it should be melted again in a steam bath.
  8. The finished treat for the future bouquet is placed in a cold place to harden.

Making a bouquet

When the crust on the berries has hardened, you can begin to form a bouquet. To do this, the sticks are collected into a composition and wrapped in tape.

At the final stage, packaging is prepared. Use corrugated or other decorative paper. You can wrap strawberry flowers in it in any way, but it is best to use the classic one: the bouquet turns out beautiful and simple. Cut a square from a piece of paper and roll it into a ball so that the ends of the skewers do not stick out from below. The gift envelope is decorated with a satin bow.

Adviсe

The following recommendations will help improve and diversify the bouquet arrangement:

  1. The berries are taken red, ripe, but not overripe. The latter will release juice when cooked, and the present will be ruined. For the same reason, do not use cracked, damaged fruits.
  2. The chocolate bar for coating can be melted in the microwave. But this is more difficult than using a steam bath: you need to continuously monitor the process so that the product in the oven does not boil over.
  3. If strawberry halves are used to create a bouquet, then the berries are cut just before dipping into the chocolate mixture.
  4. You can add chocolate strawberries to real flowers. You can also add other chocolate-covered fruits and berries to the bouquet: banana, kiwi, citruses, pineapple.
  5. Instead of making a bouquet, you can insert strawberry sticks into a gift box and decorate it with ribbons and beads.

There are many recipes for making chocolate strawberries on the Internet, but you can use your imagination and experiment with ingredients and decor. A sweet bouquet will be an excellent gift for both adults and children.

  • white chocolate – 20 g;

The chocolate masses are ready - we are ready to start “bathing” the strawberries.

  • Place chocolate-covered strawberries on parchment paper in the refrigerator until completely hardened

DIY chocolate covered strawberries: 5 step-by-step recipes with photos

Most people associate chocolate-covered strawberries with an elegant, sophisticated, expensive and even luxurious lifestyle. But actually it is not. The ingredients for cooking are incredibly simple - strawberries and chocolate - nothing else is needed.

In the summer, it is extremely easy to get these ingredients, and there are no problems with preparation either. Chocolate covered strawberries are an affordable and tasty treat.

In addition, the dessert can be made dietary and healthy if you use real dark chocolate.

Preparing the berries

Choose only the ripest, freshest, largest, whole berries. Strawberries need to be washed. It's best to do this shortly before cooking to avoid bruising and maintain maximum freshness. Each berry must be washed separately under running cold water.

Wash carefully, do not rub or crush the berries. Let the fruit dry completely on a paper towel. Chocolate holds better on dry berries and covers them more evenly. Do not remove the tails.

Before coating with glaze, you can use a syringe to inject a little liqueur or brandy into each berry, this makes the dessert more aromatic.

Dipping berries

Before covering the berries with chocolate, prepare a baking sheet or flat dish with parchment.

Carefully take the berry by the stem and dip it on all sides into the melted mixture. If you want full coverage, lift the leaves with your fingers.

It is best to prick strawberries on a kebab skewer; a toothpick does not work well, since it is thin and the berry does not hold well on it and slides off. You need to wait until the excess chocolate drips off the berries.

Place the glazed strawberries on a baking sheet, spaced some distance apart.

Decoration

To make the treat more flavorful, you can sprinkle it with cognac or liqueur before sprinkling it. But you can do it differently. To add flavor, you can also sprinkle the berries with liqueur, brandy or something else, then wait an hour for the berries to soak in the liqueur and dry.

For topping, use coconut flakes, multi-colored poppy seeds, grated nuts, finely chopped mint leaves, citrus zest, colored sugar, etc. You can decorate with streaks of chocolate in a contrasting color. To do this, scoop the melted chocolate into a spoon and, lifting it higher, apply stripes to the berries in a thin stream. You can also use a pastry syringe.

Using food coloring can result in colored stripes or strawberries. Fill a confectionery syringe with a contrasting color of chocolate and, squeezing out liquid chocolate in a thin stream, apply stripes to the berries.

How to make strawberries in chocolate: a classic recipe

For this simple treat, choose large, ripe berries. And be sure to use your culinary imagination!

Ingredients:

  • 0.5 kg of large ripe strawberries (preferably with long stems);
  • 200 g chopped chocolate or chocolate drops;
  • 125 g white chocolate (optional);
  • 1 cup chopped almonds or pecans (optional)
  1. Rinse the berries well and dry them (make sure they are completely dry, without drops of water). Line a baking tray with baking paper or food foil.
  2. Melt the chocolate. If you are using both dark and white chocolate, you will need to melt them separately. Chocolate melts better under the influence of “indirect” heat. If you don't have a double boiler, boil a large saucepan of water, then place a heatproof bowl in the water and melt the chocolate in the bowl.
  3. Alternatively, you can microwave at 50% power for 2 minutes (or until the chocolate is melted). At the end of cooking, stir the chocolate. If it doesn't melt, continue microwaving in 15 second increments until you get the results you want.
  4. Once your chocolate has melted, you should immediately start decorating your strawberries.
  5. Dip the berries one by one into the melted mixture, covering 1/2 to ¾ of their surface. Lift and twist the strawberries as you remove them from the chocolate, allowing the excess chocolate mixture to drip back into the bowl.
  6. If you don't plan to dip the strawberries in the nuts, place them on parchment paper. Do not move the berry or touch it, so as not to spoil the hardening chocolate shell.
  7. If you are going to use nuts, gently swirl the berries in a bowl with the nut crumbs, and then place them on paper.
  8. If you want white chocolate decor, pour the melted white chocolate into the corner of a ziploc bag. Cut off the appropriate end of the bag and begin your confectionery creativity. Gently pipe the white chocolate through the hole in the corner, covering the set chocolate on the strawberries in thin lines.

You can serve the chocolate strawberries chilled or at room temperature. The first will pleasantly crunch with a chocolate “capsule”, and the second will give a soft combination of chocolate and strawberry flavors. It is not a shame to give such strawberries for a holiday (for example, on the Eighth of March). Place the berries in a beautiful fabric-lined box and decorate with a bow.

There are many options for decorating strawberries. You can dip it, for example, in colored Easter cake sprinkles - and you will have elegant treats for a child's birthday party.

Pregnant women can offer homemade chocolate covered strawberries with a few grains of sea salt for a combination of sweet and salty effects. Such a duet will delight most women in an interesting position.

In all these variations, only one thing is important: use high-quality chocolate so as not to spoil the taste of the strawberries.

  2. Place a tablespoon of Nutella in a piping bag (or a Ziploc bag with a corner cut off, as in the previous recipe) and pipe the paste into each strawberry.
  3. Sprinkle the berries with nuts and garnish with (optional) whipped cream before serving.
