Stewed cabbage is one of the most famous dishes of Russian cuisine, rightly gaining its popularity due to its ease of preparation and the availability of many recipes and ingredients. In Russia, cabbage is stewed with meat, chicken, sausages, mushrooms and other ingredients, and both fresh cabbage and sauerkraut are used.

To stew cabbage, you need a fairly spacious frying pan with high walls, a wok or even a cauldron. According to the classic recipe, stewed cabbage is prepared from a minimum number of ingredients: one medium head of cabbage, 1 onion, a little pepper and salt to taste. But as far as your imagination goes, the number of recipes for this popular dish will be just as diverse. Now I will present to you the most delicious recipes for stewed cabbage, which can be cooked in a frying pan (with meat, sausages or chicken).

How to choose cabbage for stewing?

Fresh white cabbage is best suited for stewing, but you can also stew red cabbage or even sauerkraut. The main thing when choosing is that the head of cabbage is dense, without rotten leaves, without cracks in the stalk. The requirement for the density of the head of cabbage applies to both white and red cabbage - it (the head of cabbage, or also called the fork) should not be deformed when pressed with your fingers. You also choose onions and carrots for preparing stewed cabbage in a frying pan so that they are dense and whole.

You can choose the meat for stewing cabbage to your taste; some prefer leaner beef, some fatter pork, some poultry, and some even cook cabbage with sausages or minced meat. I have collected several delicious recipes for stewed cabbage for you and now I will describe step by step how to cook it so that it turns out delicious!

Classic recipe for stewed cabbage in a frying pan

For a classic recipe for stewed cabbage in a frying pan, a minimal set of ingredients is enough; I use pork for cooking, but you can replace it with beef, for example, or lamb.

The whole process of preparing stewed cabbage according to the classic recipe takes me no more than 50 minutes.

Ingredients:

  • white cabbage - 1 small fork (depending on the size of your frying pan);
  • pork (brisket) - 250-300 grams;
  • onion - 1 piece;
  • mixture of peppers - to taste;
  • garlic - 2-3 cloves;
  • salt - to taste;
  • water - 1 glass.

Prepare stewed cabbage according to the classic recipe as follows:

Step 1. Wash a piece of pork belly and cut it into pieces 1 cm thick and 5 m long (depending on the fat content of the purchased meat).

Step 2. Place a large frying pan over medium heat, heat it up and pour the pork pieces into it. There is no need for additional oil or fat since the breast is already fatty, but if you bought leaner pork, you can add a little butter or sunflower oil. Fry the meat over medium heat, stirring occasionally, for 5-6 minutes.

Step 3. While the pork is frying in a frying pan, peel and cut the onion (one medium-sized onion is enough) into thin strips. Then we peel 2-3 cloves of garlic and finely chop them (if you don’t like the garlic taste, you don’t have to add it, the recipe won’t suffer from it). After this, pour the chopped garlic and onion into the pan with the pork.

Step 4. Reduce the heat and continue to fry the meat with onions and garlic, stirring regularly so that the onions do not burn. 5-7 minutes on low heat is enough for the onion in the frying pan to become soft. Meanwhile, we start cutting cabbage! If you have time to cut the cabbage and stir the meat being fried with onions and garlic at the same time, then great, but if not, then you can turn off the heat while cutting the cabbage. And so, cut the cabbage into thin long strips, pour it into a large bowl, add salt, mix and mash.

Step 5. Pour finely chopped cabbage into the frying pan on top of the meat, cover with a lid and turn up the heat to medium. After 5-7 minutes, open the lid and mix the contents of the pan well. After another 10 minutes of stewing the cabbage, stir it again and pour in one glass of water.

Step 6. After 10 minutes of stewing the cabbage with the lid closed, open the frying pan, stir again and simmer over medium heat, stirring until the color of the cabbage turns golden. This usually takes another 5-10 minutes.

At this time, you can add pepper and, if necessary, add salt to the cabbage to taste.

Stewed cabbage with pork goes well with mashed potatoes, although other side dishes also go well with this dish.

Cabbage with mushrooms in a slow cooker

Owners of multicookers will be interested in learning how to deliciously stew cabbage with mushrooms. To work you will need:

  • 2 onions;
  • 300 grams of mushrooms (preferably champignons);
  • 2 carrots;
  • 2 tomatoes;
  • greenery;
  • 35 grams of sunflower oil;
  • seasonings

The technology of this process is simple:

  1. Sort the mushrooms, rinse and carefully cut into thin slices.
  2. Place them in a multicooker bowl, adding a little oil first. Set the panel to “frying” mode. Cook the mushrooms until all the moisture has evaporated from the bowl.
  3. Peel the onion and carrots, wash and chop finely.
  4. Do the same with cabbage.
  5. As soon as the mushrooms are slightly fried, add chopped onion.
  6. After 5-6 minutes add carrots.
  7. Lightly salt the cabbage and mash it with your hands. Then it must also be sent to the slow cooker. Set the “stewing” mode and cook for about half an hour under the lid.
  8. Grate tomatoes into puree. The remaining peel can be discarded.
  9. After the timer signal, add the tomatoes along with the seasonings to the bowl and simmer the vegetables for another 20 minutes.
  10. Now only the final “touches” remain. 10 minutes before the end of the stewing process, add chopped herbs and finely chopped garlic to the stew.
