  • Buckwheat will be tasty only if high-quality minced meat was used for it. It is best to make it yourself, in this case you can be sure that it does not include low-grade meat products. When buying ready-made minced meat in a store, you can hardly be sure of its excellent quality.
  • Buckwheat for buckwheat must be boiled in advance until ready. If you have buckwheat left over from the side dish, you can use it - the buckwheat won’t get any worse, and you will gain the reputation of being an economical housewife.
  • The fastening element of the minced meat when preparing buckwheat is the egg. If your cutlets are falling apart, add another egg, even if the recipe calls for less.
  • The buckwheat can be completely fried in a frying pan, like regular cutlets, or you can just brown it and then bring it to readiness by simmering it in sauce. In this case, they will be more tender and healthier. Another option for preparing buckwheat is baking in the oven. You can bake them with or without sauce.

  • tomato paste – 100 ml;
  • water – 0.25 l;
  • flour for breading - how much will be needed;
  • salt, seasonings - to taste.

Cooking method:

  • Sort the buckwheat and rinse. Fill with water and boil until tender, not forgetting to salt it.
  • Wash the meat, dry with paper napkins. Cut into pieces and grind through a meat grinder, alternating pork and beef.
  • Add eggs, salt and spices to the minced meat. Mix thoroughly.
  • Peel the onion and cut into small pieces. Fry them in vegetable oil until golden brown.
  • Mix the minced meat with buckwheat and form it into small cutlets, shaped like meatballs, only slightly flatter.
  • Heat the oil in a clean frying pan and fry the cutlets in it until they are golden brown on both sides.
  • Dilute the tomato paste with water and pour the resulting mixture over the buckwheat.
  • Cover the pan with a lid and reduce the heat underneath. Cook the buckwheat for another 15 minutes.

When serving the buckwheat, you can pour the sauce in which they were stewed and sprinkle with chopped herbs.

Classic recipe for buckwheat with minced meat

In the authentic Ukrainian version, grechaniky are prepared from minced pork or pork-beef. This choice makes the dish nourishing, dense, juicy. Cooking method: frying in vegetable oil.

Required Ingredients

To prepare four servings:

  • a glass of dry cereal;
  • 500 g minced meat;
  • 200 ml water;
  • bulb;
  • 2 eggs;
  • pepper, salt - to taste;
  • flour for breading - 5 tbsp. l.;

  1. Coarsely chop the onion and fry in oil until golden brown.

  3. Add eggs, salt and pepper to the minced meat to taste. Mix.

  4. Combine with buckwheat porridge, stir and beat the cutlet mince.

  5. By scooping about a tablespoon of minced meat into your palm, you form the buckwheat. Trim the top and sides, placing it on a cutting board.

  • Place the onion in the meat, add salt and spices, and stir.
  • Beat the eggs into the minced meat one at a time.
  • Boil washed and well-sorted buckwheat in salted water until soft. Mix buckwheat porridge with minced meat.
  • Form small cutlets from the resulting mixture, roll them in breadcrumbs and fry on both sides until golden brown.
  • Reduce heat and simmer covered for another 5-10 minutes.

You can serve chicken buckwheat with sweet and sour sauce, curry, sour cream or mushroom sauce.

  • Minced chicken - 400 g
  • Buckwheat – 100 g

Boil buckwheat in lightly salted water until tender. Peel the onion, finely chop and fry in vegetable oil.

Beat a raw egg into the minced chicken, add fried onions and cooled buckwheat. Salt, pepper and add spices to taste. To stir thoroughly.

  • Wash and dry the champignons with napkins. Cut them into small pieces.
  • Heat oil in a frying pan, add onion to it.
  • After 3 minutes, add the champignons to the onions. Fry the mushrooms until the juice released from them has completely evaporated from the pan.
  • Cool the mushrooms and buckwheat a little, mix them and add eggs, salt and spices.
  • Form small oblong cutlets from the resulting mass, bread them in flour and fry in a clean frying pan in boiling oil.

Buckwheat with mushrooms is prepared without meat from almost completely finished products. Therefore, they do not need to be stewed and fried for a long time; it is enough to brown them well on all sides so that the eggs in the minced meat have time to fry and the buckwheat mushrooms have time to look appetizing. Mushroom sauce will be the best addition to the dish prepared according to this recipe. This sauce can be made from 50 g of champignons, a small onion, a spoon of butter and the same amount of flour, a glass of sour cream. Prepare mushrooms and onions in the same way as for buckwheat.   • Flour - 2 tbsp;

  • cottage cheese – 0.2 kg;
  • sugar – 50 g;
  • walnut kernels - 50 g;
  • apples – 0.4 kg;
  • chicken egg – 2 pcs.;
  • wheat flour - how much will be needed;
  • vegetable oil - how much will be needed.

Cooking method:

  • After sorting and washing the buckwheat, fill it with water and boil until soft. There is no need to salt the water.
  • Rub the cottage cheese through a sieve, mix with sugar and milk.
  • Mix cottage cheese with buckwheat, add two eggs to this mixture and stir until the consistency is homogeneous.
  • Wash the apples. Cut out the cores. Clean. Grate on a coarse grater and mix with the rest of the ingredients.
  • Crush the nuts, add to the rest of the products, mix.
  • If the mixture is too liquid, thicken it with flour. But keep in mind that the workpiece should not be too dense.

2. You can use any minced meat for buckwheat. It is better, of course, if the minced meat is homemade and not purchased. Add to it a head of onion ground in a meat grinder (we leave the second one for the sauce), cooled buckwheat, egg, salt and pepper and a chopped clove of garlic. Stir until smooth.

3. From the resulting mass we form buckwheat balls, each of which is thoroughly breaded in flour.

4. Fry the buckwheat until golden brown.

5. Cut the second onion into thin half rings, chop the sweet pepper into short strips, and chop the garlic (a couple of cloves) very finely.

  1. Wash the cereal thoroughly and place it in a saucepan. Pour in water (the liquid should be 2 times more than buckwheat), bring to a boil, then turn the heat to low and cover the pan with a lid. Cook the cereal until the liquid has completely evaporated. The weight of the finished buckwheat will increase by about 2.5 times.
  2. Mix the minced meat with half a finely chopped onion and garlic passed through a press. Beat in the egg and mix thoroughly.
  3. Add buckwheat porridge to the minced meat. Knead the mixture very carefully so that the cereal and meat are distributed evenly. Salt and add spices to taste.
  4. From the resulting mixture of minced meat and buckwheat, we form small oblong cutlets, roll each piece in flour on all sides.

Heat a saucepan or deep frying pan with oil, lay out our semi-finished products and fry over medium heat on all sides. Transfer the almost finished buckwheat into another bowl. Place the frying pan on the stove. Pour in vegetable oil and heat. Wet your hands with water or vegetable oil, whichever is more convenient for you. I look at the culinary certificate and what do I see? Grechaniki are not cutlets, but yeast sausages made from buckwheat flour with milk and eggs. One can only wonder at the past chefs. With what ease they managed to turn a flour dish into such an appetizing hot dish.

Today we are preparing a second course for lunch – oven-baked buckwheat in tomato sauce. We will use boiled buckwheat and minced beef in almost equal proportions. Let's form the minced meat into cutlets, which turn out very juicy and tender in tomato sauce. You can choose a side dish for our Greeks according to your wishes.

Let's prepare the products according to the list. Buckwheat must be boiled in advance. Meat ingredient: beef. You will also need onions, garlic, a chicken egg and salt, breadcrumbs for coating the cutlets, and vegetable oil for greasing the pan for the buckwheat cakes. For the sauce, take tomato paste.

We pass the beef through a meat grinder. For convenience, you can freeze it slightly and then chop it into small pieces. Stir in buckwheat porridge, onions and garlic.

Break a chicken egg into a bowl with minced meat. Add salt to taste.

Mix the minced meat until smooth. Lightly beat with your hands.

With wet hands, form mini-patties. Grechaniki should be slightly elongated, but not as large as classic cutlets.

The recipe for buckwheat with minced meat in tomato sauce consists of the following ingredients:

  • buckwheat – 1 glass;
  • 700 g minced meat;
  • 1 egg;
  • 2 onions;
  • carrot;
  • pasta or tomato sauce - 1 cup;
  • spices and herbs;
  • vegetable oil in which we will fry the buckwheat.

Prepare buckwheat in the usual way. Finely chop one onion and pour it into a bowl, add the egg, minced meat, salt, season with spices and mix. Pour buckwheat (cooled) into the minced meat. Mix everything well. We make cutlets and fry them in a greased frying pan. For tomato sauce, cut the second onion a little larger, maybe into half rings, and chop the carrots on a grater. We achieve transparency of the onion, add tomato paste. Add a little water, simmer for a couple of minutes. Place the finished cutlets in the gravy and leave for a quarter of an hour under a closed lid over low heat. When serving, it is recommended to sprinkle the buckwheat with herbs.

Cooking sequence

Making tomato sauce

  1. Peel one onion, wash and cut into small cubes.
  2. Pour vegetable oil into a frying pan and after heating it, add chopped onion.
  3. Fry the onion until golden brown and turn off.
  4. We dilute tomato paste with water or take ready-made sauce.

Cooking buckwheat

  1. Let the buckwheat groats cook.
  2. Turn on the oven at 180 degrees Celsius.
  3. Add the eggs to the minced meat, beating them a little before doing so.

  4. We peel one onion, grind it in a meat grinder, or grate it on a fine grater and also add it to the minced meat.
  5. Add salt, spices and mix well.

  6. When the buckwheat is cooked, add it to the minced meat and mix everything thoroughly again.

  7. We form cutlets from our mixture and place them in a baking dish.

  8. Place fried onion on each cutlet and pour tomato sauce over it.

  9. Place the baking dish in the preheated oven, after covering it with foil.
  10. Cook our buckwheat for 40-50 minutes and serve garnished with herbs.

Prepare buckwheat with minced meat using chicken fillet. The minced chicken, while tender and juicy, may be a little runny. Then you will need more buckwheat or flour.

Required Products:

  • buckwheat porridge – 200 g;
  • chicken fillet – 0.2 kg;
  • breadcrumbs;
  • 1 onion;
  • vegetable oil – 0.5 cups;
  • 1 egg;
  • 1 clove of garlic;
  • spices to your taste.

The fillet should be washed and minced in a meat grinder. Process garlic and onions in the same way. Mix everything with the addition of eggs, buckwheat, salt and season with spices. Mix well. We form cutlets, roll them in breadcrumbs and place them in a heated frying pan with oil to fry until a crust forms.

The usual but tasty dish of Greek mushrooms can be varied by replacing the meat with mushrooms.

  • buckwheat – 100 g;
  • 0.2 kg – fresh champignons;
  • 250 ml water;
  • 1 onion;
  • salt, spices;
  • a bunch of greenery;
  • 0.5 cups flour.

Sauté the chopped onion until golden brown. Mushrooms should be cut into strips or plastics. Place in a frying pan with onions, salt and pepper 2 minutes before readiness. Place the chopped greens in a blender and grind together with the already cooled mushrooms. Add the mushroom mixture to the prepared buckwheat and mix well. Form cutlets and roll in flour to form a crispy crust. You need to fry in a heated frying pan greased with vegetable oil.

Buckwheat with turkey

Buckwheat cutlets combined with poultry are tasty, satisfying and easy to prepare.

  • 0.3 kg turkey fillet;
  • onion – 2 units;
  • tomato paste – 200 gr;
  • a little flour;

The turkey meat needs to be chopped together with the onion using a meat grinder. Add spices, eggs, salt, pepper to the minced meat. Mix well. Add buckwheat and mix again. We make cutlets, roll in flour and fry in a heated frying pan. For the sauce, you need to sauté the second onion, cut into half rings. Add tomato paste to the onion.   • minced meat – 1 kg;
  • buckwheat – 0.6 kg;
  • serving of white loaf – 100 g;
  • 2 eggs;
  • 2 medium sized onions;
  • 0.5 heads of garlic (4-5 cloves);
  • sour cream – 2 tablespoons;
  • 1 tbsp. spoon of salt;
  • granulated sugar – 1 teaspoon;
  • 1 tsp. – ground pepper (black);
  • water (broth) – 300 ml;
  • spice “Khmeli-suneli” - 1 teaspoon. spoon;
  • 4 tbsp. spoons of mayonnaise.

It is better to choose minced meat from different types of meat - beef plus pork, for example. The minced meat is mixed with the eggs. Grind the loaf in a blender (no need to soak). We also chop the garlic and onion. Add the resulting mixture to the minced meat. Add half the salt, mayonnaise, and all the pepper. We use unsalted buckwheat, since we add salt to the sauce and minced meat. Pour the cooled buckwheat into the minced meat. Mix everything well until smooth. We make small cutlets and place them on a baking sheet, previously greased with oil. For the sauce, dilute the remaining salt, Khmeli-Suneli, sugar, 2 tbsp in water (broth). spoons of mayonnaise, sour cream. Pour the resulting sauce over the products and place them in a preheated oven for 40-45 minutes. Buckwheat baked well in the oven, it turns out nourishing and aromatic.

Sweet buckwheat with cottage cheese

This dish will appeal to every child who refuses to eat such a healthy product as cottage cheese.

Ingredients you will need:

  • ready buckwheat – 200 g;
  • 200 g cottage cheese;
  • dried fruits, candied fruits;
  • 2 eggs;
  • raisin;
  • date fruit;
  • sour cream;
  • sugar;

For sweet products, it is recommended to cook buckwheat in water or milk. Raisins should be soaked to swell. Finely chop the date. Place all the ingredients in one bowl, mix and add a tablespoon of sugar. Fill the greased muffin pan with the resulting mixture and place it in the oven for 20 minutes at 200 C.   • 2 eggs;
  • 500 grams of minced meat;
  • onion – 1-2 heads;
  • a couple of spoons post. oils;
  • salt, pepper, herbs, spices.

Buckwheat can also be cooked in a slow cooker. While the porridge is cooking, let's make the minced meat. Mix all the products - minced meat, pepper, eggs, onions, salt, herbs. When the buckwheat has cooled, add it to the minced meat. Place the formed cutlets on the bottom of the multicooker bowl, previously greased with oil. Select the “Frying” program and set the cooking time to 15 minutes. After this time, the products must be turned over and the program repeated. Different types of devices have their own characteristics, so you need to monitor the preparation.

Lenten buckwheat recipe

Let's try to cook them:

  • potatoes – 3 units;
  • buckwheat – 1 glass;
  • carrots – 1 unit;
  • 1 onion;
  • water – 2 glasses.

Prepare buckwheat in the standard way, add a little salt. Three raw potatoes on a fine grater. Remove excess moisture, add salt, spices, pepper, cooled buckwheat - mix everything well. This minced meat produces dense products, which we place on a heated frying pan. The onion should be cut into half rings, and the carrots should be grated and fried separately. Place the prepared buckwheat into a saucepan in layers with vegetables and fill with water. Simmer for 20 minutes over low heat with the lid closed.
