I remember the school cafeteria. The worst thing they cooked in it was pea soup. I hated him to the core even then. And imagine my surprise when a friend treated me to such soup - it turned out to be unusually aromatic and tasty!
I liked her soup so much that I even asked for the recipe. I made it at home and the whole family was delighted! And now I will share with you information on how to prepare pea soup with smoked meats (pork ribs) according to the classic recipe of my beloved friend.
Pea soup with smoked meats
Kitchen utensils: two saucepans (one for broth, the other for peas); a colander and a container into which you can conveniently strain the broth; cutting board and sharp knife; three plates for chopped vegetables; saucer for spices; frying pan and spatula; mortar for grinding spices; scoop.

When all purchases are made, you can begin the simple algorithm for preparing our pea soup.
Preparation
- Fill a saucepan with 2 liters of water, cover with a lid and place on the fire until the water boils.
- While the water is boiling, peel and wash 100 grams of onions, 75 grams of carrots and 50 grams of celery. You can chop the vegetables, but it is much more convenient to leave them whole.
- Place 600 grams of smoked pork ribs, peeled onions, carrots and celery into boiling water. Cover the pan with a lid and leave the broth to simmer over low heat for an hour and a half.
- Wash 300 grams of yellow split peas and place them in a saucepan. Then pour 3 liters of cold water, cover the pan with a lid and place on low heat.
- The peas should be cooked over low heat until completely softened. It took me the same amount of time as cooking the broth - an hour and a half.
Step-by-step preparation
When the broth and peas are almost ready, you can start preparing the delicious soup:
- Peel and wash all remaining vegetables.
- Chop 100 grams of onion.
- Cut 75 grams of carrots into cubes.
- Cut 300 grams of potatoes.
- Place a frying pan on the stove and pour 20 grams of vegetable oil into it. While the pan is heating up, chop 20 grams of garlic with a knife.
- Place the chopped carrots in a heated frying pan and let them fry a little, literally 2-3 minutes.
- Add chopped onion to the carrots, stir and leave to fry for another 3-4 minutes, stirring regularly.
- Peel and finely chop 30 grams of ginger. Then add it to the onions and carrots, stir, and leave to fry for another couple of minutes. Then remove the pan from the heat.
- Take 10 peas of black hot pepper, 4-5 peas of allspice and grind them a little in a mortar with a little salt. Place the crushed spices on a plate. After this, grind 3 grams of fenugreek in the same mortar, pour it onto a saucer with spices, add 1 gram of chili pepper.
- The broth is already ready by this time, remove the ribs from it and leave them to cool. Strain the broth itself through a sieve, return it to the original pan, and put it on the fire. Add chopped potatoes to the broth and let them cook until half cooked, about 10 minutes. After this, you can add a little salt to the soup.
- Take care of the ribs. Separate the meat from the bones and cut into small cubes.
- When the peas are cooked, you need to pour 500 ml of “pea” water from the pan and add it to the “soup” pan.
- After this, add the roast, garlic and chopped meat to the soup.
- Now you need to put the peas on a sieve.
- After this, it also needs to be sent to the soup, stirred, add 4 bay leaves and spices. Be sure to taste the soup for salt and add more salt if necessary. Time it for 3-4 minutes and the soup is ready!

A good onion has a beautiful golden brown color, the inside is white with green, the husk should fit tightly to the vegetable, there should be no sprouts or dark spots. If the onion was stored correctly, it will be firm to the touch, without dark spots - take it that way.
- Buy carrots of medium size, small in diameter - this way you are guaranteed that the core is not spoiled. A good vegetable has a pleasant, bright orange color, there are no rotten areas or black spots, there are no sprouts, and it feels firm to the touch.
- It is better to choose packaged peas - they contain less waste. High-quality split peas are always “halved”. Color varies from yellow to orange. Buy in transparent packaging - this way you will immediately see whether it is good or not. If you see too many greenish halves in the bag, the peas are no good. Check the integrity of the package itself and the shelf life.
- Take medium potatoes. Large tubers grow only in forage varieties. There is nothing terrible about this, but these potatoes are tasteless. Good potatoes are firm, without eyes, dark or greenish spots. Root vegetables with yellow or pink skin are considered especially tasty.
