Lentil soup
This recipe contains both garlic and hot pepper. This version of the first course perfectly warms you up in the cold. If you want a less spicy dish, you can remove pepper from the recipe, or reduce its amount. What do you need to make soup according to this recipe? The following ingredients:
- 500 grams of ribs;
- one hot pepper;
- three cloves of garlic;
- three potato tubers;
- one bay leaf;
- two celery stalks;
- one hundred grams of lentils;
- a tablespoon of tomato paste;
- a little vegetable oil;
- a bunch of parsley.

Lamb ribs soup is easy to make. Vegetables are peeled. Potatoes are cut into large cubes. The celery is cut diagonally, the pepper is cut into two parts. Garlic is peeled and crushed using a press. Parsley is finely chopped.
Heat oil in a saucepan. Send in the ribs and fry for about four minutes. Add celery, garlic, potatoes and pepper. Fry for another five minutes. Add a liter of water. After boiling, cook for another seven minutes, add lentils and bay leaves, and after 15 minutes remove from heat. Add parsley and let the lamb ribs soup brew.
Pea soup with smoked lard
This recipe will resonate with lovers of fatty foods. We are sure that men will appreciate it, because it contains not only ribs, which can be savored from the bone, but also smoked lard cracklings, giving the soup the aroma of a fire.

- pork ribs – 600 g;

Step-by-step preparation
- Prepare a vegetable broth based on peas (need to be soaked in advance for about 3 hours). Boil the peas for about 15 minutes, and then add portions of chopped ribs. Simmer until both components are fully cooked.
- After a quarter of an hour, add the potatoes. Pre-clean it and cut into pieces of any type.
- Throw lard cubes into a well-heated frying pan and melt it until it turns into cracklings. Transfer to soup and cook over medium heat until ingredients are fully cooked.
Tip: it is best to use homemade lard in this recipe, because it is softer than store-bought lard.
Pea soup
Pea soup is often prepared with smoked meats. However, this version uses fresh ribs. They are no worse than smoked ones. You can also use smoked paprika as a spice. Then it will add the desired smoky flavor to the soup. To prepare pea soup from lamb ribs, you need to take:
- a glass of dried peas;
- 400 grams of ribs;
- onion head;
- one carrot;
- three potato tubers;
- one bay leaf;
- 2.5 liters of water;
- spices and salt to taste.
Pour water over the ribs and wait for it to boil. Then they pour it in. Add fresh water again and cook the ribs for two hours over low heat. The peas are also soaked for two hours. Afterwards, remove the ribs from the broth, add peas, bay leaves and diced potatoes. Finely chop the onions and carrots. Lightly fry them in a frying pan with a little oil, then add them to the soup. Boil until the potatoes are ready. The ribs are divided into parts. Place the ribs into portioned plates and pour in the soup. You can also decorate each plate with herbs.
Recipe for pea soup with smoked ham
The aroma of smoked ham will undoubtedly lure your household into the kitchen. In combination with legumes, the already appetizing product will sparkle with new colors.

- split peas – 120 g;
- smoked ham – 300 g;
- onion – 1 pc.;
- medium potatoes - 3 pcs.;

- garlic cloves – 2 pcs.;
- sunflower oil – 35 ml;
- water – 2 l.
Step-by-step preparation
- First you need to prepare the peas. In order for it not to be hard and to make it easier to boil, the product must be soaked for several hours. Therefore, fill the peas with a decent amount of water (they tend to absorb liquid well and swell) and set aside. After 3 hours, you can place the peas on the stove and cook until they are soft enough.
- Cut the peeled potatoes into large cubes and the ham into smaller pieces. Chop the carrots and onions too. Transfer the potatoes and meat to the peas and simmer for about a quarter of an hour.
- Now you can fry it in a frying pan heated to the limit with vegetable oil, and add it to the soup when the onions and carrots become soft. Add some salt.
Tip: in order for the soup to “gain” more flavor, it needs to steep. Therefore, before serving, let the dish sit for a while under the lid.
Chickpea soup with mint
This version of lamb rib soup is very interesting. It combines a variety of spices. For this first course with ribs you need to take:
- 800 grams of ribs;
- 150 grams of chickpeas;
- 100 grams of carrots;
- the same amount of celery stalk;
- a couple of teaspoons of dried mint;
- two bay leaves;
- garlic clove;
- a little salt;
- half a teaspoon of cumin.
The recipe for lamb ribs soup is interesting for its aroma. So, the smell of lamb is easily interrupted by mint, as well as cumin. Chickpeas quite successfully replace peas. In general, it is with legumes that lamb goes best. And in this case, the ribs provide an excellent broth.
Pea soup with smoked meat
This is a hearty soup with a delicate texture achieved by cooking the peas for a very long time.

Step-by-step preparation
- Boil pre-soaked peas for a couple of hours. It is very important that it turns into puree during cooking. Add potato cubes.
- In a frying pan in a small amount of refined oil, saute medium-sized chopped onions and carrots passed through a grater with medium holes.
- In the same oil in which the vegetables were fried, fry the meat strips until golden brown.
- Cook the soup until all ingredients are ready, remembering to add spices and salt. At the end, add the garlic pressed through the press.

Lentils are a fairly filling product, so I use chicken fillet for the soup. However, you can use bone-in chicken breast, chicken legs, or smoked chicken in the recipe. The soup will be more filling and, therefore, higher in calories.
I used red lentils because they cook the fastest and are less mushy than other varieties.
Now I’ll answer a few questions about the ingredients.
Can I replace red lentils with another type of lentil - green, brown?
But be careful: the cooking time will change. Read the packaging for how long the lentils should be cooked and whether they should be soaked. Of course, this needs to be figured out before you start preparing the soup. I've already had such surprises with lentils - I got porridge instead of soup, and hard, non-chewable grains :).
Remember that cooking is about creativity, and you can always try something of your own in a recipe.
Do you want soup without meat?
Please! Remove the ingredient - chicken fillet.
Is it possible without frying?
Remove vegetable oil.
And without potatoes?
Easily! You can replace this ingredient with celery.
